Definitely one of the best potato salads I’ve seen! To be honest I usually find potato salads boring. I’m loving this and the apples totally add a nice crunch! Great recipe!
My ex and his family make their potato salad with the apple. I loveed the addition. They used red though I think. Either way I've been looking for something similar and I think this is as close to what I could remember. Oh they also poured some of the oil and parts from cooking the chuletas in and I swear that's what made it! 😋 Thank you

My mom always put fine diced green apple in her Puerto Ricanl potato salad.

Oh that’s a good touch with the green apple- I don’t think I’ve had potatoes salad with the apples. It would add good acidity and textural interest.

I grew up eating tuna salad with apples in it! Now that I'm married to a Puerto Rican, our potato salad always has apples in it as well!
