- 4lbs potatoes (red skin, yellow, or Yukon Gold
1.5 cups of mayo (adjust to liking)
1tbsp olive oil
1-2 tsp yellow mustard
1tbsp pimientos plus a little liquid from the jar
3-4 boiled eggs
Juice of half a lime (substitute for 2 tsp white vinegar
1/2 - 2 cups finely chopped bell peppers
1/2 cup finely chopped onions
1/2 tsp Adobo, or to taste
1/2 tsp oregano
1/2 tsp black pepper
Plenty of salt for boiling

I grew up in Brooklyn with a lot of Hispanic flair around me. So, of course I’ve had Puerto Rican potato salad before I just never inquired how to cook them. This is pretty much the way we (African-Americans) cook ours with the exception that you guys don’t use sweet gherkins or sugar. I myself LOVE sweet potato salad and sweet deviled eggs. So, I will definitely try this but my gherkins will be at the ready…just in case 😂! Thank you for sharing!! 💋
Yeah, ours is more acidic with the addition of vinegar or lime juice! But the addition of sweet pickle relish sounds delicious 😋

Hey Mari! You were right on time with this one. I’m planning on lighting the grill and doing some burgers tomorrow. This would be a great side dish.
I usually let my potatoes cool with the onion and seasonings so they will penetrate the potatoes. I sometimes leave the skin on…just remove any blemishes the potatoes may have. Only thin-skinned potatoes of course. And clean under running water with a brush.

Mari , Your potato salad looks very flavorful !! I like the way Puerto Ricans use mayonnaise ( like Americans ). With Italian and German potato salad , they don`t use mayo. I`m glad that most of my Italian aunts were Americanized enough to use mayo .
You know, I’ve never had a potato salad without mayo, but I’m willing to try! 😯 what do Italians and Germans use instead? Olive oil?
@@mariscookingpr Italians use light olive oil , Germans use some other type of vegetable oil . BUT , I would prefer Mari`s potato salad !!

Yummm Love the ensalada de papas. I've never made it like this. Will be trying it. Looks so delicious. 😋 And yeah, I like a bit of mayo. I don't want the mayo to over power the other ingredients.
