Mari, I was trying to find a good online recipe for guineos to give to friends and found yours to be the best. Others say to peel the guineos before boiling, and that's a recipe for early discouragement. I follow your technique (and my mother in law) and boil them with the peel on, and that's a recipe for success. Thanks for sharing the right way. 😉👍

I can tell this is a good recipe. But a word of warning for people out there. I was only able to get small green bananas. And I just boiled them for 20 minutes and they turned to mush. So be sure to check them early if you had to get the small guineos.
So it's the morning of Thanksgiving and this is the side dish I said I'd bring to a small gathering with 4 other people. I thought "well, none of them are Puerto Rican so they don't expect it to be in chunks". I chopped the onion and olives up extra fine and mixed it into the mashed guineos. It's delicious. I'll just take it and let them know they got mushy but they're still really good.
Is there a recipe for a green side salad? I see it served with bistec encebollado in some.videos and the salad has stuff like lettuce cucumbers tomato avocado. Wonder if it has a name
Hi! No specific name other than a Puerto Rican- style green salad. 🤣 My mom and I usually add lettuce, sliced onion, tomato…with olive oil, vinegar, salt, and pepper as the dressing. My grandma used to add corn kernels to it.
I made some yesterday for today, and mine were too. It doesn’t mean they are spoiled! The seeds are just spread out and it makes it look a bit unsightly! 😅 Enjoy!

Hi! Green plantains do not taste as good as green bananas when they’re boiled, unfortunately! However, give it a try and see how you like it!
