- Hi and welcome back! Today I made for you guineitos en escabeche or Pickled green bananas. This is a quick side dish served during Christmas time in Puerto Rico.
Here are the ingredients:
6 green bananas
6 cloves garlic
1 medium onion, sliced thin
1 cup of good olive oil
1/4 cup white vinegar
8-10 peppercorns
2 bay leaves
1/4 cup olives
Salt an Pepper to taste

My grandmother made this for our family once towards the end of her life. It was so delicious but I tried to imitate her recipe but it never came out right. I'm so happy that you covered this on her... I see now what I did wrong.

When boiling bananas add a little milk to avoid them from turning dark

I made this for the first time today using your recipe and watching your videos I made it for my niece's graduation party where are Puerto Rican but nobody ever try to make it before and I did and everybody loved it and it came out perfect and thank you for teaching me how to do it I'll continue to watch your videos to learn more thank you
I have recently discovered this recipe and the idea that a banana can be used in a savory dish blows my mind. I work with a couple of Hispanic ladies that have promised to pick me up some green bananas the next time they go to the Latin market after I told them I was interested in this dish. One of the ladies is from Costa Rica and told me that she is familiar with this dish but made with plantains instead of bananas. I like to try food prepared the way other ethnicities prepare it so this is exciting to me. I can't wait to make and try this very interesting and exotic (to me) dish.

I made this earlier today prior to watching your video. I like your idea of infusing the onion with vinegar separately before adding to the oil. Incidentally my guineitos turned out just fine. It was surprisingly easy to make. Thanks!

I like your video. Tip: IDK if anyone else does it but my mom and grandma taught me to boil the green banana for about ten minutes. Dump most of the water. Peel the skins of the banana. Add enough water to cover bananas and add a splash of milk to the water and boil another 5-10 minutes until cooked.
My mother-in-law makes this when we go to visit her in Mayaguez....I try to duplicate it at home but it was never the same. I wasn't heating up the olive oil!! Thanks for the video!

do you not use gizzards? Mami makes it with gizzards. Its so yumm O! I need to get recipe from mom. I just bought Green bananas to make alcapurrias again. But I am sure I don't need 6 green bananas. I bought a package of gizzards tonight too. Oh its in my fridge! Now I wanna call her but shes sleeping! lol
