    My mother was in education. She had her PhD in math, and could have taught any level of math in university. She chose to teach development math. I asked her why. She told me that anyone can be an instructor. Few can be a teacher. And the students she had needed a teacher to give them the foundation to be able to handle future instructors. You, my friend, just as was my lovely mama, are a teacher.

    I’ve never been worried about canning - I think that’s because I grew up canning with my mom who had canned with her mom etc…it came as naturally as cooking meals. I’m soooooo grateful!!!!!

    I watched your grape jelly video back then. It amazed me that I could make jelly like that. OMGoodness. You had me hooked lol... I showed that thing to everyone I knew. The grandkids were in awe that Nana made their favorite drink into jelly. Great video and yes, I would love to see it again.

    Never knew about after clean... I just canned a few tomatoes and 25lbs of apples to applesauce in 2023 for the first time... lots of work but fun .. thank you for this video .. take care

    im always careful to dry my bands because i dont like the rust. but it never occurred to me to use a SOS pad ... thanks for the tip, can always learn something new.

    Thanks Heather! I have canned for nearly 50 years and have always washed my jars and rings before putting everything away. I've used a scotch pad on my rings but never a SOS pad which clearly does a much better job! What a great new addition to help preserve my rings even better! Never too old to learn something new! Love you girl - I usually watch via Roku so seldom comment, but you've been in my prayers and on my heart ever since your accident. I truly rejoice to see all that the Lord has done for you! He is absolutely good! You are absolutely inspiring! May God continue to bless you in 2024!

    It is supposed to get really cold in TX AGAIN!... Past two years at Valentine's Day it was snow storm then icestorm....so we are getting things ready for the bad weather. My husband is getting the outside ready and I am making chili and carob pecan muffins. Making a double batch so we can freeze some too... thanks for updates, Heather! Blessings, P&T

      Not a fan, you are my extended family. Your prayers are what got me through. Like fuel to my soul, the Holy Spirit used your prayers and covered me with them. I had some really dark days that first year and Adonai would wrap me in those prayers like a blanket. Its what kept me going. Warriors of God who pull down prayers from the Heavenly realm is so powerful. Our greatest weapon against the enemy. And He allowed me to feel that power and it is what got me through. I can never thank you for that in words. But as your Sister in the Messiah, you know. I hope you can feel my big hug from here. ❤️

    Would love to revisit the grape jelly video. Remember watching it and really started pushing my husband to invest in a pressure canner. Even though the recipe doesnt call for pressure canning. ❤.

    when I first started canning I never worried about my canned food killing my family I started out water canning and I researched and learned about safe canning and watched you and other RUclipsrs can before canning my first thing which was blackberry jam I water bath canned Jemes and salsa and pasta sauce then a year later I bought my first presto pressure canner can pressure canned my first turkey stock I have been canning for 3 and a half years now and love it when I am done canning I wash my jars and rings I place my rings on a kitchen towel on a bakeing sheet and heat them on 300 for 10 min then turn off the heat and let them sit in the oven and cool this drys them really well I do this with my water bath canner as will I place it in the oven to dry it really well I enjoy watching you you are an insperation and joy thank you for being such a wonderful teacher to so many I love you so much I have never met you but I feel like you are a friend 💛🌻

    Great point, Heather. Folks can think of cleanup as getting the preps ready for the next canning session. It may be soon or some time in between but I promise they will be glad they cleaned up ahead of time.

    My way is to throw all of the rings into a sink of hot soapy water so they can soak a bit, especially if something siphoned, and then work on the jars, setting them on clean towels, and once all the jars are done, go back to the lids and wash them, rinse them, and pile them in the dish draining rack. Even with a dishwasher, it is worth it to have the rack. I then go back and dry the jars if they haven't air dried already and put them in their boxes and move them to the table. Then I set out the rings on the towels to air dry and go back and label the jars. After that, I go back to the rings and inspect them, wiping off any water that is left, but it has usually evaporated by that point, especially in our hot summers and early falls. I toss anything suspect. Seems more complicated, but I am trying to make the hot air do some of the work so I don't have to wipe as many things dry. I have rheumatoid arthritis, so the less I have to do with my hands, especially after chopping and lifting jars in and out the day before, the better. Then my husband or son carries them to the shelves for me and puts them away and we store the boxes where they go.

    I ❤ this Heather! You’ve been consistent since the first video I’ve seen you canned many many years ago. That’s what I like about watching these videos from you. I must also add that I’ve only seen you in this RUclips world who actually does the cleaning up after and most importantly when you open a canned item you inspect the content, smell it. I would definitely do the same too with any store bought jarred or even bagged item.

    You mentioning grape jelly took me back 50 years. I made grape jelly from fresh grapes and I thought I'd royally screwed up the recipe because it was still so liquid when I poured it in the jars. That was my first lesson in the natural pectin in fruit. I still remember how amazed I was that it jelled....and was delicious!!! A few years later I made blueberry jello from fresh fruit and sure jell and couldn't believe how much flavor it had. Sorry, I digress😂 You are correct that this video shows a really important aspect of canning that is rarely addressed.

    Such fantastic information Heather! Thank you!!! I always wash and scrub my rings before and after canning. I scrub my jars in hot soapy water before I put them on my shelves.     I have waiting a very long time for somebody to do this last step. Old timers in my area in East Tennessee taught me how to do that but they put water in the sink just water and took the glass and emerged it and turned it around and around to see if there were air bubbles coming out of the lids. Then I would clean them like you are dry them and put them in the place where they would stay cool and dry and they would last a long time..

      oh thats an old school trick!!!! love it!!!! I dont know why more RUclipsrs dont show the clean up. I know I have shown it a few times, and it is in my Canning for Beginners Workshop playlist. I will have to do it more often!

    I've done sweet potatoes tonight. It was only 8 pints but it's 8 pints more than I had, right? They were from Christmas that didn't get cooked. I surely was not going to waste them.
    In the morning, it is now, I'm going to start beans. Pintos with ham and great northern bean soup. I like to put carrots, onions, celery, a bit of red bell pepper and ham in my bean soup. So good, indeed.
    I like knowing that what I've canned can be consumed hot or cold if need be. Food security is a good thing.

I always wash my rings and jars just like so important step to do after canning has well before. Need to be careful and inspecting everything is important to.       I am so glad. Some are not happy with it but this is my journey and my cup overflows into yours. These songs are how I feel as I stand on a leg that should have been removed, using hands that were spliced off at my wrists, with a functioning brain that should have me in a permanent vegetative state.     Saw it! Couldn't get the red grape so I went with white grape juice! Also made the chocolate cherry. Oooo lala reminded me of a cherry tootsie roll pop.

    I got my All-American in part because of you. I've had it for over a year but hadn't canned anything but some venison. It didn't go well, but I understood what I did wrong. I was a bit intimidated by it so I didn't try again till a couple of weeks ago when we canned cubed pumpkin, and then yesterday I canned chicken legs. Both turned out great! I'm hooked now, so I've been watching a lot of videos. Thank you so much for all you do for the rest of us.

      way to go!!!!!! can up some beans, these are the easiest things to can. then try the onion veggie stock. that video on how I make mine will be posted later today and we will can it up tomorrow!

    Was blessed with two new canners for Christmas also. Both electric and both different. Have a presto and All American as well. Wow I should be able to get done a lot faster now with 4 canners going. No more canning till 5am.

    A family friend started pressure canning meats and things a few years ago. He is an avid cook and knew I canned water bath but wanted to do the other and thought he would try to. I was at the house one day and his wife showed me his jars when he had just started and honestly they were filthy with food all over them. And left the rings on. He is very intuned to things but for some reason never realized or read or thought while learning hey wipe it off. So I read the riot act :) But he was greatful. And now stores without rings as well as they also can cause a false seal and yes get rusty and gross. So I agree never hurts to reminding. I am also as pernickety as you and was also terrified in the begining and am pretty set in the same ways you are. xo I also learn a lot of things from you and am always open to learn and listen from people who have done it for longer years than myself. And see learned today try an SOS pad! Never thought of that! 💕💕💕

    Heather, I wasn't with you at the beginning of your canning journey but I think you'd been canning a year or two and you were still (even as now) super cautious of following and talking about all the correct, thorough steps to follow. I love that you will keep including the final step of cleanup. Yes please, while you are recuperating do re-release some older videos...that would be fun! My electric-coil range causes a lot of siphoning so I usually have a mess to clean off the jars and use a small stiff scrub brush to remove all the food residues and especially around that miniscule overhang from the seal and also inside the rings. I use a tablespoon of cream of tartar in my canner which keeps the hard water deposits off and keeps the rings from discoloring.

    I have a small dowel rod that fits some decorative hooks on a small wine rack/glass storage. I thread my rings on the dowel and they have max air contact.

    Thank you for this most needed video. I was jar and rings but never really culled out the rusty ones. Needless to say, I just threw out about half of the excess rings in my collection as they were rusted beyond scrubbing with a pad. God bless!

    I wait the 24 hours and then I scrub my jars THOROUGHLY and rinse them off, dry them and then I store them. Same with my rings...and they are towel dried and air dried.

    My rings get black on them, which I think is oxidation. I make sure to wash those really well. I don't use rust or janky rings either because I don't want to eat that stuff. Your beans look great 😊

      Thats exactly what it is and oxidization is absolutely fine! I get it a lot because I use vinegar. But any orange is rust. But if you catch it early you can scrub it right up along with any debris from processing that may be on them. After awhile that oxidization may interfere with how smoothly those bands go on the jars. If they do just replace it. 😁❤️

    Lately, even my new bands go bad after the first pressure canning. They aren't as good?! I use Ball jars, so new Ball rings. Then I switch to 4Jars. I only use a lid twice unless I pressure can. I never use them after pressure canning. I put my rings on a cord, and I don't save that many because realistically I need only enough for a full 48 hours of canning. Since we store without the lids. Nice video!!!! Thanks!!!!
