Marion I oil the steak so the seasoning sticks and cook in cast iron pan without any oil. 👍
How would you go about this if the pan doesn't fit in your tiny oven? Also, is there a difference in "pan-time" when cooking on induction? 😊

i probably wouldn't recommend placing a rod to your lip to see if your steak is cooked to perfection cause what if it's scalding hot? I burnt my lip once doing this technique and had a weird scab for 2 weeks :(
I need some help, y'all. I love the flavor of Szechwan peppercorns, but no one ever talks about the stone inside the peppercorn. They grind down to a sandy grit that just ruins a dish. Am I buying the wrong peppercorns? Do some come without the stones? Does anyone else have this problem?

Hey! Are you using a pepper grinder by any chance?
So, the thing is that you're supposed to only use the husks of the Szechuan peppercorns. The seed or stone that you mentioned should be discarded.
The higher the quality, the less seeds there are, but you should still double check before grinding them.
Remove the black stone. The flavor is in the red husk. She mentioned it in a previous video.
@@xXMkThunderXx The first time I bought them I put them in a pepper mill. Not good! Now I only use them to flavour oil (then I toss them😒). But I'd love to have the texture and intense flavour of the husks without all the work of deseeding them. I'll shop for a higher quality. Thank you, Mario.
When ur basting with the butter, do you turn down the heat? Cause it looks like the butter wasn't bubbling as much

Don't know weather to say thanks or I can't believe you did not use fish sauce . When you get to that part you have lost me/us especially on pork, beef and poultry . It seems to me like going out to eat and you have poultry and they serve it with beef gravy over your potatoes and filling . Sorry That is just me .
I think it’s just you. She majors in Asian/Thai food and fish sauce is a feature in their cuisine. I love her fusions including the use of fish sauce.
