    About Master Sushi Chef Hiroyuki Terada:
    Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on RUclips.
    At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine.     I have friends that escaped under the Iron Curtain in Czechoslovakia many years ago.
    The mom would make Czech potato salad and serve it on sliced French Baguettes as a side dish.
    Carb overload, of course, but it would melt your knees in one bite. It was a Holiday get together, and she was feeding a table of almost 20.
    Great Horsdoerves, filling up all those bellies with a feast fit for Kings and Queens.

      Cameraman is so professional and very serious about his job and guest! I seen the potato salad and Ill tell you, it matched his end photo :) The Japanese potato salad will be a big hit for your parties/gatherings, seriously, a party in your mouth:) Cameraman is Hollywood material!! Hiro-san also is the best chef; with both combined, you end up with perfection:))

    it looks festive :-)
    my cutting is much slower and the slices all stick to my knife :-( so i slice and flick with a finger, but his knife has more like a hertz. usually i just make my slices thicker to get it over with faster and call it "rustic" :-)

      Almost like amercan 'russian salad', as russian (and persian) 'olivier' salad. We're stuck in the cooking matrix already in a mashed potatoes.

      Cool. I have Polish in my mixed Slavic ancestry. My (late) paternal grandmother was half Polish and half Ukrainian. She made great potato salad.

      Not exactly. Polish vegetable salad contains: bolied potatoes, boiled carrot, boiled parsley root, silage cucumbers (fermented ones, not in vinegar), fresh apple, canned corn seeds, canned peas and, very often, hard boiled eggs. Everything (except corn and peas) diced into equal size pieces (rather small). All ingridients chilled and mixed with mayoneese (often with bit of with mustard) and of course salt and pepper. Yummy!!

      Can use ham as most japanese do cause prosciutto is expensive. Also if unable to get kewpie mayo use miracle whip. If unable to get miracle whip add a little sugar to the mayonnaise.

      @@keithfreitas2983 only expensive if you don't make your own. ^_^ its easy and only takes 6 months to 2 years but I have seen the Japanese do some amazingly difficult things. Amazed they dont just make their own prosciutto.

    The mayonnaise was added when the potatoes was still hot? Will adding a boiled egg keep the mayonnaise from turning yellow?

      No has to be cold. Many japanese people add chopped hard boiled egg. The yolk will make it slightly yellow. Can use ham instead of prosciutto.

    Why did Hiro wash and the onion the cucumbers slices ?

      Washed the onions to take out some of the tartness/ bitterness that raw onions have. Soaked the cucumbers in salt for about 10 minutes and then rinsed and squeezed out the water it contains. Cucumbers are 80% water.

    Hiro San, is it better to use a single bevel for thin slices?

      You can make thin slices of vegetables with any sort of knife as long as it has been maintained and properly stoned. From there it only really depends on your individual skill as well as the speed that you want to cut.
      Be warned that buying a single bevel knife won't buy you knife skills, and moreover, single bevels actually pull to the side (if you look closely you can see hiro compensating for the pull) which requires practice to compensate for.
      Finally, if you don't know how to stone or hone knives even the highest grade blue super steel (etc.) single bevel will become blunt. I highly recommend against buying this grade of knives before learning how to care for them.

      Use what potatoes you like. Nothing wrong in using russet or even yukon. Recipe is adaptable

Every chef ive ever worked with and how I learned from them and even recipes online you not make this with russets. You use white or red. There is a reason for this which you arent getting and wont get most likely because you simply have to be right everything.

    this is almost similar to the way my family does it except without carrots
    and we cut our onions and bacon into small strips and we have pickles diced into small squares
    maybe i’ll give the cucumbers and carrots a try

      Some people leave the skin on the potatoes bc that's where all the NUTRITION is, lol.
      Besides, generally speaking, potatoes are not used a lot in most Pan-Asian Countries' diets.
