Oh Boofy, not that great. Thanks for your concern. We had 2.65m water rage through the house, in the middle of the night. I have never been so terrified. We are built higher than the 1 in 100 year flood level ever recorded and in 20 years have never seen any water near the house. We were evacuated by a couple brave of young men in a tiny boat from the top floor of the house. They took us and our little dogs to safety after being warned by the full equipped and properly trained Police rescue squad not to help people ‘as it was too dangerous!’ The same police hours later during even higher faster raging flood waters attended homes in the street and threatened residents to leave immediately or face heavy fines AND to Leave their pets behind to drown. I lost an immense amount of respect for the people entrusted to protect and serve us that day. We lived in an empty Mercedes’ van with no food and beds for almost a week with our little dogs and watched from a hill as ours and many others possessions were washed away. An estimated 60,000 head of cattle plus horses, pets, native animals perished that night. Cows were trapped on peoples verandahs and injured caught high up in trees. Local lads took them hay to eat and shot the ones that couldn’t be saved. For weeks later dead bloated animals floated back and forwards with the tides. Watching these poor animals drown without being able to help them was the worst part. I still can’t get it out if my mind. My neighbour in the street returned home for the first time to her rebuilt home of 40years on Monday, for 6 months she has been awoken by nightmares of things smashing into her house and being washed away. She is now sleeping on a kindly donated second hand bed that is like a cloud, with no kitchen and wrapping paper blue tacked to the windows for privacy and a front door that doesn’t work but she is back home and grateful to be alive. I lost all my cameras, computers, lighting, tripods as well as 2 chest freezers, 3 fridges, all my storage cabinets, outdoor furniture, bbqs a slate pool table, a full sized air hockey table, hundreds of cook books plus many hundreds more other books, all my CDs, 3,000 DVDs, laser discs, big tvs and surround sound equipment, 3 sewing machines, all my craft gear and artwork, 2 leather lounge suites. Thousands of dollars worth of tools and garden gear and the entire workshop filled with building and plumbing materials, floor and window coverings and all the ceilings and doors and broken windows. A ride on mower, boat motors and scuba gear as well as too much more to name. No flood insurance and the insurance company has sent so many experts to assess, make safe, treat mould, reassess but have still not made a determination.in the meantime what little was saved is strewn around the house and yard as I meticulously clean and sanitise things to try to salvage and find things. It’s heartbreaking and back braking work and I will admit I have faced some very dark days that have overwhelmed me. 28 days after there initial flood we were evacuated again……. The Day I tested positive to Covid, we hadn’t left the house for weeks so it was home delivered. This time the flood didn’t enter my house but the neighbours all had water re enter and undo all the pressure cleaning and scrubbing they had done for a month. One local resident was travelling around central Australia on holiday at the time and has not returned home. He contacted a real estate agent and instructed him to have the home gutted and sold for whatever he could get and won’t return ever. The resultant price was $300k less than its preflood price. But at least he didn’t have to deal with any of it personally. It has finally stopped raining, the lawn is trying to recover, most of the fruit trees died but the few that survived are flourishing, people are moving home and the street is filled with tradies as things return to normal. It started to rain the other day and I said I hope it’s not another flood and my neighbour said”We don’t use that ‘F’ word around here!!” So sense of humours are replacing the desperate sadness that pervaded the area. I haven’t been able to RUclips but I have been able to cook so at the moment I bake for the volunteers and volunteer at the local resilience hubs by providing home cooked meals, morning teas and take home dinners. That’s my contribution to support the community and the volunteers who have worked so hard to rebuild our little community. We share insurance war stories, local tradies details, recipes and free meals with each other. People were shell shocked, you could tell when they weren’t coping and someone would grab them pull them aside, give them a cuppa, something yummy to eat, a hug, a tissue and hope. One lass was evacuated 2 days before the birth of her new baby, she lost her nursery, baby shower gifts all her possessions and couldn’t return because of the mud and the mould. The day she returned home to see the problem first hand a neighbour brought her to the ‘hub’ she was gifted a huge baby bundle with hand knitted baby items, nappies, bottles, teething gear, baby Panadol and lots of new, or near new baby clothes to get her back on her feet. Everyone was crying. That baby got 10 new Nanna’s that day. We are slowly rebuilding, the horror stories are fading, there are plant swaps, book swaps. Fruit and vege swaps and people from all over Australia have donated gorgeous hand made quilts, throws, beanies, scarves furniture, linen and clothing. We had volunteers turn up from interstate to muck out houses. Lift water tanks back into place pull out walls and kitchens, the fire brigade hosed out houses the army and airforce personnel were amazing too. So respectful and compassionate. Some days you just couldn’t talk other days you couldn’t shut up. It was the weirdest thing. I had a birthday during the worst of this time and I didn’t tell anyone but my daughter took time off work to bring sandwiches, cakes, cleaning gear and support to me. One of the volunteers heard her talking to me and found a plate from somewhere a citronella candle and some little chocolates and about 30 strangers in my lounge room, downed hoses, scrubbers, buckets and squeegees and sang happy birthday to me. They cheered and hugged. And cried, I thanked them for gatecrashing my party and we all laughed. It was a time where humans helped humans and there was no judgement. Life goes on but the fear of another flood is too much for some to bear and many of us are rethinking our forever homes and adjusting to the new normal. I did reply to you when you first wrote to Me but it somehow got lost before sending it (I think I was a bit emotional at the time) and I wanted to reply to your kind comment properly and assure you I was ok and the reason for my prolonged absence. I hope this explains a little of what has been happening here in our lives and I sincerely hope it never happens again and no one has to live through such devastating loss and displacement. I hope you are safe and well, you have a kind heart and I thank you very much for thinking of us and hopefully understanding where I have been. I do hope to get back to my channel once I replace some of my equipment and the local community us able to manage without the bulk meals we volunteers have been preparing for them several times each week since March. Steamed cheesecake, puddings. Stewed fruits. Golden syrup dumplings, mmmmm I must be hungry lol.

Hi Cheekyricho. What.. No Rosemary in the gravy or even a sprig on top the lamb for presentation?? Could you repeat this meal using the Ninja Foodi if you haven't already, please. I find doing the Veggies after the meat is cooked and resting gives better results. A quick pressure cook and then a quick roast . I do understand the video is a few years ago. Thanks a John, yes that’s a bit vintage cheekyricho there. Rosemary bush went the way of the Dodo Bird back in the drought, that’s how bad the water situation was back then. We even lost mature citrus trees due to water restrictions. Of course I use it when I have it and I have lots of it growing now. My herb garden is flourishing, it’s been a good season for Gardner’s this year. I bought some gourmet rosemary and mint jelly from a boutique providore and the rosemary was so strong it overpowered the mint (believe it or not) and was like chewing sticks. justaguy168 thank you for your enquiry justaguy168. The appliance I am using is called an Actifry it is made by Tefal, which I believe is a French Company and sold around the world. It is a countertop appliance with a removable bowl which has a non stick coating. . Inside the bowl is a paddle or stirrer that turns and tumbles the food gently as super heated dry air is blown into the bowl.it has a lid which eliminates spatter and allows steam within the bowl, caused by the hot food to assist with cooking a moist tender fast result. It is an extremely low fat and energy efficient method of cooking and was initially marketed as a chip (or fries) cooker only requiring one spoonful of oil of your choice to cook about 1kg of 2.2lb of delicious crisp chips. Our presentations show the versatility of this appliance and help owners of it use it to its full potential. The recipes can be made in a broiler or under a griller but attention must be given to regularly turning the food for an even browning result. We have an entire playlist dedicated to this appliance which we are adding to all the time. I am not sure if it is available where you live but we are very happy with ours and cannot recommend it highly enough. I have been criticised for speaking too slowly, like a school 'marm', taking too long, too much detail, not enough detail, too many ingredients, not authentic recipes, sound issues, using a microwave, a raw egg and too much cheese to name just a few. We put a lot of effort into bringing interesting, old fashioned, home cooked recipes to our presentations, often using new gadgets or even reinventing more ways to using existing appliances. Sometimes the problem isn't realised until editing time, by then it it's too late. We seem to have come a fair way since our earlier presentations but of course there is lots of room for improvement. Hi Cheekyricho. What.. No Rosemary in the gravy or even a sprig on top the lamb for presentation?? Could you repeat this meal using the Ninja Foodi if you haven't already, please.
I find doing the Veggies after the meat is cooked and resting gives better results. A quick pressure cook and then a quick roast . I do understand the video is a few years ago. Thanks again Cheekyricho.
Thanks a John, yes that’s a bit vintage cheekyricho there. Rosemary bush went the way of the Dodo Bird back in the drought, that’s how bad the water situation was back then. We even lost mature citrus trees due to water restrictions. Of course I use it when I have it and I have lots of it growing now. My herb garden is flourishing, it’s been a good season for Gardner’s this year. I bought some gourmet rosemary and mint jelly from a boutique providore and the rosemary was so strong it overpowered the mint (believe it or not) and was like chewing sticks. That is why I have never replicated that recipe lol. Thanks for watching and the fun feedback.;-))

justaguy168 thank you for your enquiry justaguy168. The appliance I am using is called an Actifry it is made by Tefal, which I believe is a French Company and sold around the world. It is a countertop appliance with a removable bowl which has a non stick coating. . Inside the bowl is a paddle or stirrer that turns and tumbles the food gently as super heated dry air is blown into the bowl.it has a lid which eliminates spatter and allows steam within the bowl, caused by the hot food to assist with cooking a moist tender fast result. It is an extremely low fat and energy efficient method of cooking and was initially marketed as a chip (or fries) cooker only requiring one spoonful of oil of your choice to cook about 1kg of 2.2lb of delicious crisp chips. Our presentations show the versatility of this appliance and help owners of it use it to its full potential. The recipes can be made in a broiler or under a griller but attention must be given to regularly turning the food for an even browning result. We have an entire playlist dedicated to this appliance which we are adding to all the time. I am not sure if it is available where you live but we are very happy with ours and cannot recommend it highly enough. I have been criticised for speaking too slowly, like a school 'marm', taking too long, too much detail, not enough detail, too many ingredients, not authentic recipes, sound issues, using a microwave, a raw egg and too much cheese to name just a few. We put a lot of effort into bringing interesting, old fashioned, home cooked recipes to our presentations, often using new gadgets or even reinventing more ways to using existing appliances. I am sorry you didn't enjoy our presentation. We will try to improve our delivery as a result of your valuable feedback. We thank you very much for taking the time to comment and for watching.;-))

+John Marshall thank you very much John, we have tried several different types, unfortunately some are great for voice but pick up kitchen noises, exhaust fan, stirring and sizzling which can be very distracting. Sometimes the problem isn't realised until editing time, by then it it's too late. We seem to have come a fair way since our earlier presentations but of course there is lots of room for improvement. Helpful feedback such as yours is bound to make our videos a more user friendly experience. We really appreciate your input.
