coverted to metrics and wrote instructions in english if anyone is interested. v Earl Grey Cake 3 Eggs ½ Cup of Sugar ½ Tbsp of Corn Syrup 2 Tsp of Vanilla Extract ¾ Cup of Cake Flour 1 Tbsp of Earl Grey Powder (I can’t find this in Canada, so I put Earl Grey leaves in a food processor) 2 Tbsp of Melted Unsalted Butter 3 Tbsp of Milk Whipped Cream 1 ¼ Cup of Whipping Cream 2 ½ Tbsp of Sugar Peaches Sugar Syrup Grease up a 7 in. cake pan. Line the edges and bottom with parchment paper. Gently whisk eggs, sugar, corn syrup, and vanilla extract in a bowl above a pot of boiling water until internal temperature is at 40 c. Double boil butter and milk to melt the milk - set around 50 - 60 c. Beat the egg mixture on low to medium speed until white, frothy with soft peaks. Mixture should triple in size. Sift in cake flour and earl grey powder, then gently fold the batter together. In the bowl of melted butter, mix in a spatula amount of the cake batter before adding it into the batter bowl. Gently fold in mixture to prevent adding additional air bubbles. Pour the cake mixture into the cake mold. Drop the cake mold on the counter a few times to remove air bubbles. Bake at 170 c for 35 minutes. When the cake is done, flip it over on a cooling rack to prevent further cooking. Remove baking sheet. Let it cool down then cut the top off and cut the cake into 3 sheets. Cut the edges into a 6 in cake. Use a mandoline to slice peaches, cut from quarters. Soak thinly sliced peaches into sugar syrup. Finely dice some more peaches. Fold diced peaches into whipped cream. Place the first layer of cake down on a cake turntable and drizzle some sugar water on it. Apply first layer of whipped cream mix then smooth out with a flat spatula. Repeat for three layers. Smooth out the rest of the whipped cream mixture onto the sides of the cake until the entire cake is covered and smoothed out. Remove peaches from sugared water and place them on some paper towels to drain excess water. Pipe mini dallops of whipped cream in a ring on top of the cake leaving an inch margin. Place peach slices delicately in a ring ontop of whipped dallops of cream, then another ring of peaches on the outer edge of cream. Decorate with mint leaves and confectioner sugar. Then nomnom.

Its the powder you use for the tea. If the tea you get isn't powdery enough you can blitz it. Otherwise any black tea with a milder, flowery taste could work, like Darjeeling.

Earl Grey Cake
3 Eggs
½ Cup of Sugar
½ Tbsp of Corn Syrup
2 Tsp of Vanilla Extract
¾ Cup of Cake Flour
1 Tbsp of Earl Grey Powder (I can’t find this in Canada, so I put Earl Grey leaves in a food processor)
2 Tbsp of Melted Unsalted Butter
3 Tbsp of Milk
Whipped Cream
1 ¼ Cup of Whipping Cream
2 ½ Tbsp of Sugar

Sugar Syrup
Grease up a 7 in. cake pan. Line the edges and bottom with parchment paper. Gently whisk eggs, sugar, corn syrup, and vanilla extract in a bowl above a pot of boiling water until internal temperature is at 40 c.
