I guess you never realize how much goes into a smash burger until you come up with a video idea, do the research, film it, and eat lots and lots of burgers. Hope you all enjoy.

-- My Perfect Smash Burger --
Ingredients:
- Two 3 oz (85 g) balls of 80/20 beef + Salt & Pepper
- Browned onions (1/2 onion + 2 TBSP butter)
- Slice of American cheese
- Martin's potato roll
- Lettuce
- Tomato, thinly sliced
Heat your cast iron pan or griddle to medium heat for about 5 minutes. Right before cooking the smashed burgers, but them on high heat.
Sprinkle your balls of meat with salt and pepper right before and plop them on the griddle. Immediately smash the burger into the griddle, applying firm and even pressure. Lift up and do not touch the burger. It needs to remain untouched for crust development.
After a minute or two, the crust should have developed. Flip your metal spatula upside down and scrape all along the edges to make sure that the brown crust is intact. Once the crust is released, flip the burger over.
Moving quickly, add some browned onions to one burger and a slice of American cheese. After another 30 seconds. Add slide the other patty on the cheese and assemble the burger in the following layers:
1. Toasted Bottom Bun
2. Burger Sauce
3. Smash Burger #1
4. Browned onions
5. American Cheese
6. Smash Burger #2
7. Burger Sauce
8. Tomato
9. Lettuce
10. Burger Sauce
11. Toasted Top Bun
-- My Favorite Burger Sauce --
Ingredients:
- 1/2 cup mayonnaise - (105 g)
- 1 TBSP ketchup - (20 g)
- 1 TBSP mustard - (20 g)
- 1 TBSP sweet relish - (20 g)
- 1 chile in adobo sauce, minced
- 1 TBSP fresh onion, grated / minced - (10 g)
- ¼ tsp smoked paprika - (1 g)
- ⅛ tsp celery salt - (.5 g)
- ⅛ tsp kosher salt - (.5 g)
- ¼ tsp fresh cracked pepper - (1 g)
1. Mix everything together in a bowl.
2. Stores in the fridge for about a week.

I find it hard to watch chefs on yt bc most of the time, they just cook and never really tell you anything.
But this man right here knows exactly what he's talking about, he's like a young Alton Brown lol
Internet Shaquille and Adam Ragusea will explain process and technique in a very deliberate, straightforward way. IS will give you the quick and dirty tips to do the job, and AR will give you the deep dive you never knew you wanted. Both great channels for people who want to learn about home cooking.
I also enjoy J. Kenji Lopez-Alt, who will oftentimes show you every. single. step. in cooking a specific dish. Don't expect any videos about technique, though - that stuff only comes up indirectly as it is used in a dish. Many of his 2020 videos are shot at home, but this will give you more the perspective of a professional chef.
I started binging your videos yesterday and I'm just amazed how high quality they all are. The video and audio quality are great, the script is well written with great explanations, and the foods look absolutely phenomenal. I hope growth comes soon enough for you because if someone you deserve it.
Where were you when I was younger and could have used all this information throughout my life? At least these last few years are going to taste wonderfully!

I absolutely love your approach to cooking. Following the science behind method, can be more important than the ingredients themselves at times. I am not speaking about quality of ingredients, but merely the amount of ingredients. I've seen people add so many ingredients that the burger gets lost in the outcome. Your approach, of properly achieving the 5 tastes (Salty, sweet, bitter, sour and of course umami) is spot on. By achieving the 5 tastes, you already have a winner, then you add in proper technique and explain it perfectly as to WHY IT MATTERS. Being a chef for over 40 years, all I can say is THANK YOU!
My only suggestion to your videos, is maybe explain what ripping hot means a bit better. I understand completely, but maybe others do not. Maybe a heat gun thermometer could explain or convey that message to them..... then again it might be more confusing.

Awesome! I've cooked hundreds if not thousands of burgers but never a "smash burger". I think I now understand the principles behind making them and why they would taste differently from a traditional burger. I'll give this one a try. Thanks.
Just made it and it's definitely the best burger I have ever made! Just wish I had the griddle. Used the bottom of a pot for smashing. Still worked great.

This video inspired me to get into the smash burger game. Made a few last night and they delivered.
I think I'm a fan of slightly smaller patties if going with two - say 2 or 2.5oz instead of 3 oz, but that might be because I used brioche buns and wanted some more of that buttery goodness.
I used to work at Culvers. A fast food restaurant. But their burgers are smash burgers and the best fast food burgers ive ever had

Until this moment I have never even heard of smash burgers what I can see right off the bat though is I bet you I’m going to be in love with smash burgers by the end of this video. Sadly it’s past midnight so I won’t be able to run out and get the stuff to make myself a Smashburger until tomorrow.

Here in the south, we like shredded lettuce on the bottom of the burger stack. It prevents the juices from soaking through the bun. Excellent video, truly the art of the smash burger.
My ultimate smash burger is caramelized onions, cheese and brown mustard. Definitely use 2 patties. A side of rosemary and garlic tots is welcome addition to the mix.

I have found one thing that helps things go a little easier. After forming the meat into balls cover them and let them sit on the counter for 30 minutes or so if you have time. Especially if you have prepared them awhile ago and had them stored in the fridge. Ice cold meat doesn't smash down easily and is more likely to fragment when smooshed. Especially with the high fat content meat I use.
And a piece of parchment paper between whatever you use to smash the burgers and the meat takes away any danger of sticking and making a mess.

honestly this should be the default burger. i dont know how ultra thick burgers that are practically raw in the middle ever became popular they are so bland and unsatisfying. id rather have a double or triple smash any day. that crispy brown exterior is life
American beef, generally, is ass, so of course thick burgers end up unsatisfying. But if you have good quality beef, a thicker undercooked patty can be just as good in a different way.
I love thick burgers but they are NOT home suited so don’t even try
IMO there’s nothing wrong with it, it’s just a different style that satisfies different needs. The texture and mouthfeel are different, sometimes I want a smashed burger and sometimes a thicker burger with a juicy pink center. It’s like New York style and Neapolitan pizza, I’d rather live in a world that has both
I got some fancy dry aged brisket burger patties online. Cooked sous vide at 133 degrees for a little over 2 hours to pasteurize the meat. Seasoned with salt and pepper and seared on cast iron skillet. Added toasted buns and provolone cheese. The contrast of the delicious safely cooked juicy medium-cooked meat and the browning from cast iron was insanely delicious. The way these patties came they didn't plump up much at all so crispy surface area was pretty good. This might have been the best burger I've ever had.
I haven't tried smashburgers at home yet but it is going to be soon. I think they are going to be great but I don't see them beating out these traditional style burgers I just cooked. 98% of all other burgers out there? Sure it seems like smashburgers offer a great way to make your average everyday burger taste great.
Nothing better then a thick hamburger of quality beef with some ground bacon mixed in, smashburger is imo held back by the american cheese which acts as a neccessary binding to form a default burger sized patty

Made these amazing smash burgers and your french fries (with boiling water, salt and vinegar), and the family thought they were the best burgers and fries they have ever eaten. Your mayo-based sauce is out of this world. Your videos are beautiful to watch and the recipes here are the stuff legends are made of. Thank you so much for taking the time to make these videos. One question, my cast iron griddle allows for 4 smashed patties, it was quite hard to smash all 4 quickly directly on the hot griddle, can you pre-smash the patties and then add them directly to the hot skillet?

@@callumsuttie3911 thanks for the note, I made the burgers again this weekend for the kids, I did a couple pre-smashed and a couple smashed on the grill. They came out better smashed directly on the grill, must be some food/heat thing at play! They sure are yum, the sauce is a hit in our house.
Yep, smashing it directly onto the surface allows more of the patty to be it contact with the grill

Went back and watched this and made some amazing smash burgers for the first time. I used a spatula and a masher for the smash and did the onions under the cheese.
