Made these yesterday (3/3/21) and was very pleased how they turned out. Modified the recipe for a second batch by omitting the cocoa powder and almonds; replaced cocoa powder with an additional 1/4 cup of almond flour, 2 tablespoons lemon juice, and the zest of two lemons. Hi Leen! I recommend usinh any erythritol base sweeteners for the cookies to achieve it’s hard and crunchy form after it cools down. You can store them in an airtight container and the crispness will last like forever.❤️😊
Wow, how am I only seeing this now?!? Looks incredible. Can I use raw cacao powder and add semi sweet chocolate chips to cut some of the bitterness? I also might add orange zest as orange and chocolate pair beautifully.
They taste delicious! But my presentation was not nearly as good. They became very crumbly as I turned the side (the last step), and some of them couldn't hold the shape. What may I have done wrong? Did I over- or under-bake it in the first step? I'm in a new place where the oven is quite different from what I was used to. Still trying to figure out how to best adjust the temperature and time. Thanks!
Hello dear, if it crumbles meaning you might over baked it. Also don’t forget to cool it completely if the recipe asked for. Use a smooth knife (nor serrated) and chop it to avoid crumbling.❤️

Hi Sanny, you can definitely adjust the amount of sweetener acdg to your taste. I’m not sure if a blend of stevia would work, these cookies require an erythritol base sweetener for them to be able to crisp up beautifully.
I made these today but I wish I didn’t because I can’t help myself but eating them. They are the best biscotties I’ve ever had. I used pistachio instead because I had alot of them on hand. Next time I am planning on reducing the sweetener. It was little too sweet to my test but maybe because I used granulated brown monkfruit. It might be slightly sweeter than the Erythritol 🤷♀️

Hi Gael! First you have to let it cool COMPLETELY before cutting it (Around 1.5-2 hrs) 2nd Don’t use serrated knife, chop it with force like what I did in the video.
i love it but any time i tried when is the time to cut the cookies they break into a thousand pieces i don't know what i'm doing wrong so is became impossible is feel like there a lot of air inside but i do the same steps as you do... :(

@@ketoserts we can't get anything like this. We have normal caster, granular and icing sugar and thats it. We do not have any access to stevia, monkfruit or other sweeteners. I was wondering if sweeteners needed to to added at all. If they do need to be added to this recipe can you recommend a sweetener free recipe?
@@ketoserts we are doing keto but not adding sugar to anything at the moment due to our lack of options. The sweetest we eat is 85% chocolate in bar form. We would love some ideas of desert/cakes/biscuits that don't use sweeteners or their alternatives. We live in Saudi Arabia and they have only just joined the gluten free options so keto is a little way off at the moment!! Any help would be appreciated 🙏

We would love some ideas of desert/cakes/biscuits that don't use sweeteners or their alternatives. We live in Saudi Arabia and they have only just joined the gluten free options so keto is a little way off at the moment!!

I’m not sure about freezing it but you can definitely chill it in the fridge for 3 days before making them.❤️

Hola all, I baked these tonight. They're in the oven and will leave in the oven overnight. The oven is off, so I think the biscotti will be fine.😉👩🍳

@@ketoserts Hola, Update. The biscottis were nice and crispy when I took them out of the oven yesterday morning. I am going to try your recipe but for almond flavor with a chocolate drizzle. Will keep you posted.

Los acabo de hacer pero mi mezcla quedó marro, No negra, no parecen de chocolate. Use Cacao Hershey. 😔
Depende de la calidad del chocolate que vayas a utilizar. por cierto, el de Hershey es cacao natural y utilicé el procesado holandés.
