BLUEBERRY MUFFINS INGREDIENTS
INGREDIENTS:
2 & 1/2 CUP PLAIN FLOUR/APF
3 TSP BAKING POWDER
1/2 TSP IODISED SALT
1 & 1/8 CUP GRANULATED SUGAR
2 LARGE EGGS
1 CUP FRESH MILK WITH 1 TBS LEMON OR CALAMANSI JUICE (LEAVE IT FOR 10 MINUTES ASIDE BEFORE USING)
120ML SUNFLOWER OIL
1 TSP VANILLA EXTRACT
350G -380G BLUBERRIES
1/4 CUP LIGHT BROWN SUGAR/DEMERARA SUGAR

I've made three different blueberry muffin recipes in the past fortnight, this one is the best so far. Moist, fully cooks through, the sweetness of the muffin mixture itself balances nicely with the blueberry tang, the ratio of blueberries to muffin is perfect, and it's really easy to make.
I don't usually make substitutions or cuts when commenting on recipes (because then it's not really reviewing THAT recipe if you change the ingredients lol) but I did use frozen blueberries instead of fresh due to availability. This is my go-to recipe from now on, thank you for sharing!!

This has to be the best blueberry muffin recipe I've ever made. I swapped the plain flour and baking powder for the same volume of self raising flour and used 2 heaped cups of frozen blueberries to get close to 300 grams. I didn't have any lemon juice either so left it out and the muffins still turned out amazing. I think frozen berries seem to hold together better when stirring. I also used wax paper squares pushed into Ramekins as the pans. Took about 30-40 minutes to cook with the frozen berries and the larger muffins. It made 7 nice large muffins exactly the same as you would buy from a coffee shop. Thank you so much for sharing this amazing recipe!!!!!

Hi,Did you bake it at 425 degrees F,how many minutes? I used frozen blueberry. It turned out moist inside,sort of crunchy on the top.
