The floss/string/thread is so that you can get and even cut without flattening the roll. If you use a knife it might pull and flatten out and just become so much more difficult to handle. These look finicky enough as it is, and I make cinnamon rolls relatively often.

you can just cut the dough into strips before you roll it if you dont want to use string
