I just made this ice cream, it was my first time ever making an ice cream. I followed the advice of several comments to not put as much sugar, and I'm really glad I did because even by adding 190g instead of 250g of sugar, it still felt slightly too sweet. So I can imagine what they meant by "way too sweet" if they followed the recipe. Also, it might depend on the type of sugar you use! I used the ice cream machine for the first time but it didn't made the ice cream creamy and thick. In the end, I just put it in an ice cream box in the freezer and it turned out perfect. So, I don't think you need an ice cream machine to start. Also don't soak the cashews overnight if you don't want to wait 2 days, you can do the entire process in one day by soaking them in the morning for 7 hours. About the taste, you can taste the cashews, but they don't take over the rest. My mom said she could taste the coco too, but it's subtle. It's all about vanilla, you don't need vanilla bean but it's best to not put cheap synthetic flavor. I think this recipe would work great with cinnamon too. I'm not sure if I would do this recipe again in the exact same way, but I will make similar ice creams again ! Also this was my first time trying a vegan ice cream and it's delicious ! Also I didn't have cacao butter so I just replaced it with coco butter/oil.

The Ice cream Base Recipe that worked for me 1/2 cup cashews 2 cups water 1/4 cup sugar(it's a little less sweet, can add more according to taste) 1/4 cup wheat flour 1. Grind cashews adding water little by little. 2. Transfer the cashew milk(keep 1/2 cup milk aside seperately add the rest) to a thick bottom pan and let it boil and thicken a bit 3. In the mean time add 1/4 cup wheat flour and the seperately kept half cup milk together and whisk till smooth lump free paste is made. 4. Add this wheat mixture in the pan and stir continuously to thicken it further 5. Add sugar and let it melt 6. After that switch off the stove and let it cool, it will thicken when cooled 7. After its cool add to mixie and blend till smooth and freeze for 2 hours in an air tight container. 8. Remove from freezer and blend again with any flavouring of choice and freeze again for about 8 hours, but make sure to add a plastic cover in between the lid and container to avoid it from becoming Icy. Yield:- About 1 Ltr

this reminds me a place near my home that i have recently found where a variety of ice cream is sold. they sell vegan hazelnut ice cream which uses rice milk and it is amazing, it tastes more nutty than nuts i think

Fun fact: Raw cashews produce urushiol oil which is the same oil that poison ivy/oak/sumac produces. Roasting them breaks down the oil and makes it mostly safe but if you eat too many cashews, it will give you an itchy butthole.

I HAVE to give this a try. I am lactose intolerant and trying to keep down the carbs. I will try with Stevia to substitute for the sugar. I also just bought a Ninja Creami. I thin this will be AMAZING in that machine. I'll let you know.
I tried this recipe again recently. I used deoderized cocoa butter and neutral tasting coconut oil. I added strawberry compote while the ice cream churned and the Cuisinart ice cream maker I used churned the ice cream in about 20 min not an hour. I also omitted the vanilla beans. It was delicious and I think the neutral oils gave the base a more neutral flavor to which i was able to build on. Next I'll try different fruit and I'll also replace the coconut milk with another cup of cashew milk so there's less coconut flavor. We'll see how it turns out.

Made this, and it came out disgustingly sweet, even after I used 200g of sugar instead. Had to melt it and add some soy milk to dilute it, but now it's very gritty, will have to play around with it more. The recipe instructions themselves were very basic and I had to figure some things out a bit. I will have to tinker with this recipe a bit, but I guess subbing some of the sugar for fat/alcohol/xanthan gum(or some other gelling/emulsifying agent). If anyone has tried it, how did it taste? Cause I wanna know if I'm the outlier or not.
They're probably expensive everywhere, due to the weird way they grow there can't be many on a tree, and they're pretty horrid to process it seems. Even with the very low wages where they're often grown, it still makes them expensive.
Couldn't hurt to give it a try. If you don't want to put any effort into making it you should try Ben & Jerry's Caramel Almond Brittle non-dairy ice cream. It's really good imo

Erica Russell in my opinion it's not recomended cuz the store bought milk will be less dense, really more watery and the ice cream won't be that creamy
Yeah, the home made cashew milk is just more fresh and good for you. It won't get the same stuff, but if you don't have much time, it's okay.

Fun fact: Raw cashews produce urushiol oil which is the same oil that poison ivy/oak/sumac produces. Roasting them breaks down the oil and makes it mostly safe but if you eat too many cashews, it will give you an itchy butthole.

Well how did it go?
I tried this recipe again recently. I used deoderized cocoa butter and neutral tasting coconut oil. I added strawberry compote while the ice cream churned and the Cuisinart ice cream maker I used churned the ice cream in about 20 min not an hour. I also omitted the vanilla beans. It was delicious and I think the neutral oils gave the base a more neutral flavor to which i was able to build on. Next I'll try different fruit and I'll also replace the coconut milk with another cup of cashew milk so there's less coconut flavor. We'll see how it turns out.
I also only used 3/4 cup of sugar

Made this, and it came out disgustingly sweet, even after I used 200g of sugar instead. Had to melt it and add some soy milk to dilute it, but now it's very gritty, will have to play around with it more. The recipe instructions themselves were very basic and I had to figure some things out a bit. I will have to tinker with this recipe a bit, but I guess subbing some of the sugar for fat/alcohol/xanthan gum(or some other gelling/emulsifying agent).
If anyone has tried it, how did it taste? Cause I wanna know if I'm the outlier or not.
You can also add some agar agar (vegan gelatin) to the boiled water to be more consistent. Like 1 or 2 tbsp.

They're probably expensive everywhere, due to the weird way they grow there can't be many on a tree, and they're pretty horrid to process it seems. Even with the very low wages where they're often grown, it still makes them expensive.
