      We had to do stuff like that in culinary school, and it directly translated to success in actual kitchens during my time as a chef. It's a super important skill for any chef to have.

      @@arklytte The amount of random things like that we did in culinary school seems absurd, but does equate to a good chef. My school also had a store room class that meant things like identifying each type of apple out of like 20 varieties.

    I think having Ben or James demonstrating proper chef technique for the audience would be both helpful and make watching the normal's attempts more entertaining.

      I think at the end, where they can explain where each one went wrong and what the right way is to do it is.

      The thing wih barry rarely wins is because he like to experiment and often out of the themes a lot or his tendency to do hype food which easily is a pass or fail things. But he actually tries a lot of technique and recipe and thus he actually knows quite a lot of basic yet essential cooking knowledge.

    You can really feel the culinary school coming out of Ben in this. He's usually such a softie, but here you see the laser focus of a trained chef who will take no crap from his trainees.

      I was just wondering if this only exists on RUclips because the production quality is great. The concept is good, but what this show has that most traditional tv food shows lack is the obvious chemistry between all of them and they each have their own charismatic personalities. I just found this and would binge this all day if I could

      Okay I love this idea for a series. However I was disappointed that Ben doesn't show us how each technique is done properly. So maybe we need a sister series where we are shown the proper way to do it.

      Not in real time though. They'll just copy him then. I thought the way they did it was fine but appreciated seeing the meringue final product the correct way. As long as Ben comments alongside their work (without them being able to hear, of course), I'm fine with not seeing the process. I think it'd make the videos too long, unless they just jump back and forth between clips I suppose. I do like seeing the way it's supposed to look, though (if that aspect is important, at least).

      @@deprofundis3293 I doubt they would do how it is Properly Done in a "chef" manner before the others do it to make sure they don't copy. Also It would likely be in a different video to avoid the length. But I Would definitely like to see What the Results should be like in the same Video. With maybe the Chef Methods or chef Skill do a Full comparison of all of them or even hear both Ben and Jamie's of thoughts when both are judging as it would be see nice how the Badges were given besides the sort clip after all results were displayed

    For comparison, I'd like to see Ben doing the julienne, ribbons, etc. in real time just to show how a chef would do it.

    Some other skills / techniques I'd like to see:
    - tempering chocolate
    - perfectly cooking a piece of meat
    - egg cooking battle: boiled egg, egg omelette, poached egg
    - filleting fish

      Based on previous videos, I think boiled eggs could be a chefs vs normals. The poached egg should pretty much be an instructional video for Mike, and Barry just saying “it’s just an omelette” before messing it up.

      Make a perfect French omelette for James. It’s one of those methods that look pretty easy when made by a professional Chef but is actually quite difficult to master, even heat and colour for instance.

      Somehow this turned really quickly from, "Are they still considered 'Normal'?" to "Should they have more competence given how many years we've been doing this and trying to teach them things?" 😄
      To be fair, all three did immensely better than I would have. :) I can barely function following relatively easy recipes. To even make a decent effort with no instructions/recipes says something about their knowledge, even if they mixed up some key steps.

      Etymologically speaking, a chef is someone who is the head cook in a professional setting, whether a restaurant, or private employ. The word has the same roots as chief, denoting leadership, thus chef de cuisine, of head of the kitchen. It's also why when you say so-and-so that you know is a professional chef, you may see other chef's eyes twitch, as there's really no such thing as an amateur chef.

      @@bryanwatson1917 there are such things as amateur chefs; they're a student put in charge of a school kitchen or a person operating a non-profit kitchen, as professional simply denotes they are payed for their work but otherwise yeah.

      I think Jamie is a decent cook but a messy chef, Barry is a cheffy cook, and Mike has the knowledge of a chef but don't have the skills fully developed (still a non-average cook, but learning to get good at it)

      @@nancylindsay4255 is anyone actually told to cut back on egg yolk nowadays by a reputable doctor?? There are so many nutrients in the yolk. It's a waste to not eat them. And eggs don't raise cholesterol. That's been disproven.

      @@deprofundis3293 Yeah, my cardiology practitioner and her nutritionist do and they're with a highly reputed university medical center. But I'm familiar with what you're saying about dietary cholesterol. They are also VERY strict about sodium. I feel they're being overly cautious and are reluctant to back off of previous "truths." I just try to be good about dietary cholesterol and sodium -- not saintly! Jeeze, the guilt alone could kill a person!

    Idea: the chefs create a dish. Normals look at and taste the dish and try to recreate without a recipe. The one with the most accurate dish at the end wins.

      Give them a curveball challenge. Set them a fairly straightforward recipe. But then give them an unusual ingredient that they must incorporate into the dish.

    Having recently rewatched the Swedish Princess Cake Battle: ”There aren’t many food channels out there that you would watch through and see people doing it so wrong in order to learn. I think that's something we offer."
    I wonder how long this series was in the making, but seems Ben was definetly spot on. At least I feel I learned something alongside getting my entertainment.

    Skills challenge: Knowledge badge
    Give them a dish they have to cook. Give them a bunch of pre-measured ingredients(to save time). Some of the ingredients are not needed in the recipe. They have to decide which ingredients to use and which to not use. Those that end up with the most accurate dish win the badge.

    Chef skills: tempering chocolate to make a decoration, making a caramel or spun sugar, blanching and prepping something to be frozen, maybe some butchery prepping a joint or filleting a fish

    Barry almost hitting the clean sweep broke my heart when I realized his meringue was just gonna miss its completion by a bit. Then he Barry'd it and I legit laughed loud enough to piss off the girlfriend.

    The badges are not for beating the other normals, they’re for doing something like a chef. Mike’s meringues were by far the best of the three, but they were not chef quality. So yes, Mike did better than the others. No, he does not deserve a badge for it.

    Every chef is expected to know how to make a basic stock with no instructions or directions, at any quantity. I think it would be fun to have the boys try their hands at a chicken stock. Doesn't have to be a lot of stock. You could even have it be a small amount to make it a bit of challenge.

      Veloute's a lot easier than hollandaise. Since the point is to challenge them, emulsion-based sauces are way more finnicky.

      Most of the food these lads concoct is too sophisticated for my palate (which unlike the rest of me seems stuck at about age 7), however that lasagna did look amazing. 🍴
      I am also rooting for Mike, who seems to be having a string of bad luck in these competition videos lately.

    When you guys do more of these it would be great to have clips of Ebbers making the stuff properly alongside the normals, so when they do something wrong we normals in the audience can see exactly what it is, e.g. when Barry put the sugar in too early Ben we could have then seen Ben showing us the right consistency for that part.

    Absolutely love this format but one change I'd make is before these challenges I'd really like to see Ben doing it and explaining what he expects to see them do. Like the skills test on Masterchef.

    Chef challenge: meat cooking precision. Each normal gets a single steak. Judge them on grill lines, how close they are to medium rare, and seasoning. Jamie will clearly have an edge from steak school but it would still be fun to see.

    I feel like barry is the best chef. but his imagination exceeds his skill. Given trial attempts barry could be quite good

      I think it's more that Barry has the most knowledge in abstract but not enough practice at most of it causing him to second-guess himself and panic, Jamie has the most consistent skill set but anything he doesn't use regularly makes him prone to rash decisions, and mike is somewhere between the two knowledge-wise, but is also the least likely to get worked up, unless it's like in this vid where it falls apart on him from the start or some of the battles where he is deliberately sabatoged.

    These challenges are great because it allows the normals to demonstrate they do know a lot more than is let on, but also allows them to practice and showcase the skills that require more practice to develop or the skills they have which are worthy of reward of a badge! And it’s even better that it’s all at the discretion of Ebbers who never gets angry or stressed, just calmly educating the guys to help them improve or be disappointed when the guys don’t execute a skill or use knowledge he knows they have, he’s less like a teacher and more like a mentor due to their lifelong friendship which gives the channel the friendly, supportive and united connection

    One of the most important things I was taught in Culinary School was workspace cleanliness. Everything had a place as to maximize whatever minor space you have. One bowl for raw product; one bowl for cut product; and one bowl for trimmings. A Clean-As-You-Go organization badge would be a great challenge.
