Made this for my sister's birthday. I used canned pineapple. Replaced about half the milk with pineapple juice. Turned out perfect. Not a crumb was left. Thank you for all of your recipes and the time it takes to make these videos. People think I'm a great baker because of you.😂

This is such a wonderful recipe. Even though I'm a pretty good cook in my late 60s, Ive never properly learned to bake. I think that baking is something that one starts early in life and my mom never allowed me mess up the kitchen with flour, butter and sugar and she never baked. Lately Ive been learning with your help and I made this cake for my 92 year old dad and he actually swooned and ate every tiny crumb on the plate. We all loved it. Its such simple and delicious cake with an interesting history. I learned that long before we had affordable and easy access to fresh or canned pineapple in the US, "upsidedown" cakes like this were made with other fruits...pears, prunes, apples, cherries, apricots etc... They were called skillet cakes or "spider" cakes because old cast iron skillets had legs on them and they were called "spiders".....anyway. This has opened up a wonderful new world to me. A simple delicious buttery yellow cake with seasonal fruits! My next project will be a "lemon upside down cake". I'm going to use very thinly slices of Meyer lemons and some lemon juice in the batter. Ill keep you posted with results. Many Many Many thanks to you for guiding me into the Joy of Baking!

Hi Stephanie, Just finished your recipe for this Cake. I took a Risk on a Wing & a Prayer & doubled the recipe for a 9+x13+ Glass Baking Dish. Took me the Novis But A Determined One LOL nearly 2 hrs in Prep , mix and Pop into the oven, Looks and Batter tastes amazing, In the Oven now, will check at 45 mins etc. Wish me luck, I so enjoyed the entire process of Making your Recipe. Happy Holiday Friend of mine, Best Baker ever!

100% the best recipe for pineapple upside down I have done yet. Thank you! When I was a kid in Chicago, my parents would go out to eat not that often, at some place, and they would bring back the most delicious PUSD cake you could imagine. This is just like that! If you had one made like this as a kid, then this would be your favorite cake. A proper moist Tierra Masue takes a second place, and everything else does not compare. Made two of these tonight. Looking forward to a slice after cooled.

    Hi Stephanie
I made this recipe in a cast iron skillet
I made the sauce in the skillet
At first, the butter and sugar separated. So i added a splash of milk
That really combined the sauce togather and it tasted delicious
Overall, the whole cake was absolutely amazing
Everyone in my family loved it!

Whatever recipes I've tried so far , they've come out really good. Based on a few comments, I used pineapple juice from the can instead of milk. The flavour was very nice. Also, i didn't have the patience to separate the eggs...in spite of which the cake still came out perfectly. Thanks for posting this.

I made this recipe today. I reduced the sugar in the batter from 200 to 160 grams, and made 25% less caramel for the bottom of the pan. Since maraschino cherries are difficult to find in my country, and if you find them they are called coctail berries and costs a fortune for a tiny, tiny glass. So I bought some cherry jam and added a teaspoon for each hole in the pineapple rings. That was not a good idea, so don't do that. But, the cake sponge itself was fabulous! So airy and light in texture, and still very moist. A very, very good recipe! Thank you!
Tomorrow I will make a pound cake and use this recipe for it, just without the pineapple and caramel on top. I really liked how the sponge became. And I love your channel! Why? Two important things: First, you also have the measurements in grams, millilitres, centimetres and so on, so that us Europeans can make your recipes easily. Second, you have looong videos, which is so much more informative than all those 30 second to maximum 2 minute videos that are overflowing RUclips. It is possible to learn a lot from your videos, and that is great! Especially for a novice baker like me, that does lots of mistakes and makes a huge mess, almost always. But thanks to my brand new Kenwood stand mixer, I can at least cream butter and sugar together properly. That so called "creaming beater", which is Kenwoods scraper beater, really does a great job! So I would highly recommend that one, for those of you with a Kenwood/DeLonghi mixer.

Just made this recipe and it came out delicious! I just did a few things different, I used canned pineapple instead, and in pineapple syrup added 1/2 cup of water and let it simmer until it was syrupy... and to the batter I added a teaspoon of baking power and pinch of salt. I also don't own a whisk machine or anything similar, so I whipped everything with a fork :). So proud of how this turned out!

Yesterday, I finally found an oven safe dish that fits in my Instant Pot pressure cooker, so I can make this pineapple upside down cake in my pressure cooker.
I found a recipe specifically for pressure cookers, but used a store bought cake mix. So, I just substituted this recipe, using the timing from the other recipe. The foil cover stuck to the cake a little but as it is the bottom of the cake, once flipped, no worries. With the extra batter, I made two small pineapple upside down cakes in the oven that I gobbled up with a friend already. I loved how soft, like a pillow, the crumb of this cake was. Next time, I'll double this recipe, make both a oven version and a pressure cooker version of the same sizes, and simultaneously to compare.
Now I'm about to make a quick batch of ice cream in my blender to enjoy with more of this cake tonight after supper.
