The fact that the holocrons became such an important object that they eventually make their way into Star Wars: Galaxy’s Edge as set dressing and merchandise is such a joy. I can’t wait to get my hands on them when I come back. I didn’t even get them in the last two Disney World trips!

Eh, no, it’s not a plot inconsistency at all. Cad could only tell them that he works for a Sith Lord called Darth Sidious, which they already learned existed in episode II from Dooku. Plus, it’s not ethical to torture him into submission. Palpatine wouldn’t trust some merc with any compromising information.
Dave always saw this as an art form, and these featurettes showed this. Unlike some other people who make Star Wars, he only cared about the artistry and the power of film.
