    600g Self Raising Flour
    390g Caster Sugar
    390g Light Brown Sugar
    1 tsp Bicarb
    1 ½ tsp Salt
    4 tsp Cinnamon
    1 tsp Ginger
    1 tsp Nutmeg
    980g Tinned Pumpkin
    480g Vegetable Oil
    8 Eggs
    Pie Crumb
    110g Plain Flour
    Pinch Sea Salt
    10g Caster Sugar
    10g Demerara Sugar
    1 tsp Cinnamon
    60g Melted Butter
    Cream Cheese Icing
    125g Soft Butter
    ¼ tsp Salt
    200g Cream Cheese (at room temp)
    700g Icing Sugar
    2 tsp Cinnamon

    no. 1 Are your ovens fan forced?
    no. 2 What type of blow torch do you use, and where did you buy it?

    I made this cake shortly after the recipe came out - my mind was blown. The sponge was so light, fluffy and moist! And there’s zero effort whatsoever, just mixing everything in one bowl, which makes even better. For the frosting I made a mix of pastry cream, pumpkin purée, cream cheese and butter - yum

    The uglier the pumpkin the better it tastes. The perfectly-shaped, perfectly-orange ones don't usually have much flavor. If you ever get your hands on a candy roaster variety you'll have a good pumpkin.

    This really is amazing. I just had a go at it today. Unfortunately I ruined one layer so it became a still quite substantial 3 layer cake (and it already made a few cupcakes as well, as my tins are a touch smaller).
    I leaned more into the Halloween theme and made the pumpkins as a yellow inner and orange outer, so I could cut faces in them and reveal the yellow as if they are lit. My sculpting needs work but I’m really pleased with the result. Also did a few grave stones.

    Hi Sally, is there a reason you all chose self-raising flour over cake flour + leavening agent? Did you recipe test it with cake flour ever? Cheers!

    I’ve already made this and it turned out AMAZING, I did a dairy free marshmallow smb instead, I only had Demerara sugar so I mixed 75% Demerara sugar and 25% granulated sugar for the light brown sugar and it turned out perfect! I had to stop myself from eating it all 🤤

    Cake looks great, I will probably halve the recipe to just make a 2 layer cake instead, to make it a bit more manageable for myself. It would be perfect to make the full recipe for a sharing cake :)

    So nice to see you Sally doing a video. Such a festive looking cake. Could you bake this in a half sheet pan lined with parchment paper. I would love to use a 3" or 4" round metal rings and cut out small rounds and make individual mini two layer cakes. Would I need to double the recipe.

      Caramel & pie crumb, in between each layer would be SO good! It will slide around a fair bit with caramel in the middle so you might want to pop the cake in the fridge before giving it a crumb coat 😊

    Oooh, that cinnamon icing!! I've never thought of that before but it sounds sooooo good...
    I did have a question about the self raising flour - do you know if it's got salt in it? Here in the states you can buy it of course, but if you have tons of flour and want to make your own there are recipes with and without salt.
    Last quick note for my fellow pumpkin spice obsessed people, I wouldn't be tempted to substitute the spices in this cake for straight PS. Your cake will just taste like pumpkin pie and it's not the same kind of yummy. Just my two cents! ❤️

    I've been waiting patiently for this Sally. I already purchased my cans of pumpkin earlier in the week, lol. I just have one question. Can you please give me a couple of options for a frosting that would compliment the cake? I LOVE cream cheese frosting but my husband doesn't (how dare he, I know, lol). Not only does this look delicious it also looks easy to put together. Job well done... 👏

      Thank you so much Tammie! You could use an Italian meringue in this cake - that would be delicious (torched too 😍👌🏼), regular vanilla buttercream with a hint of cinnamon in there would be fantastic too!

      You could try (apple sauce is quite sweet so bare that in mind) - we've not done this so can't confirm if it would work!

Assuming because you're adding a bit of salt you're starting with unsalted? I think (!?) I've always used unsalted for your buttercream icings but honestly can't remember, and just wanted to doublecheck. TIA!

    I tried the pumpkin pie with homemade pumpkin puree but didn't come out very nice... I think my pumpkin had too much water so the puree wasn't nice and thick like yours... 😔

    My cream cheese icing always goes gummy and sticky and gross! When I leave it overnight ( its cold inside the houses where I live) its so dense and deflated the next day not fluffy at all!! Does any have any tips???? Im desperate 😂

      I use mascarpone sometimes. I made this with a marshmallow fluff Swiss m buttercream and it tastes like Halloween dreams!

    Thank you always for amazing recipes! This cake is dreamy but I also miss more simple recipes and masterclass, or Tuesday tips, too❣️Also, in my humble opinion, I think you all started to talk way too fast for me to watch in the background of whatever I’m doing during watching you and I prefer older format of slower talk because also I am a esl speaker 😂. Always love watching all your videos, just again my humble opinion 😌💓
