I like my soybean roll a bit more crispy so I just soak it for about 2 seconds.

Hotpot has always been my favourite since I was kid. It was basically an obsession lol I’ve recently moved from Hong Kong to the UK. I can still make hotpot here, with a bit more effort and less fresh ingredients, please but what I miss the most is having hotpot with my friends. Gosh, I’m tearing up writing this. Your effort to learn Cantonese is much appreciated. Not only are you fluent, but you can understand your friends really well even when they are speaking very casually and at a normal pace (usually in language classrooms, they use a slower pace). So glad that you have friends to enjoy hotpot with. Love your enthusiasm and your willingness to try new things 💛🧡
It’s great that you listen to Cantopop. I love Mirror too (Keung To is my fav.). You were dancing along Anson Lo. Anson Lo has quite a fast growing fan base in the UK. You should probably try going to their fans meeting some time. You are kind of in luck learning the language through cultural stuff, I think there’s a kind of cultural and artistic renaissance going on in HK right now ❤️‍🔥

Grace, I agree with H Chan below. There should be an assortment of dipping sauces (from soy sauce, to chili oil to peanut sauce, etc.) and you dip your own portion of food into your own concoction of dipping sauces that you've custom made for yourself. Also yes, there should be small ladles for you to scoop out your own food out of the pot. As the hot pot is communal, you shouldn't be putting your own chopsticks in the pot since it's touched the saliva in your mouth. But this is not your fault, the girls didn't teach you right. Come to the U.S. and look me up. I will be happy to show you around. San Francisco has 4 Chinatowns. We can do da bin lo!

As an elderly Cantonese born and bred in Hong Kong, I would like to make a few "corrections" to your two young HK friends' introduction to Da Bin Lo (hot pot) culture.
    1. We only do the Da Bin Lo in Winter. Not all year round in an air conditioned room. First, we didn't have the luxury of air conditioning. Second, Bin Lo ( 打邊爐) means you sit and eat by the "heat source", and the food is considered "heaty" (熱氣), gives you pimples and oral ulcers sort of after effect.
    2. We use small ladles to scoop or fish out the food from the soup pot when they are ready to eat, and we always have 2 pairs of chopsticks per person, one pair for uncooked food, one pair for cooked food.
    3. The fried bean curd (響鈴) is not HK style bean curd, it came from Taiwan. Traditional is plain white cubed bean curd. I tried it recently, it soaks up the soup making it very tasty.
    4. Meat commonly used in Da Bin Lo are thinly sliced beef and butterflied (cutting style) river fish (陵魚).
    5. 白蘿蔔 is white turnip, not mooli.
    6. We don't flavour the soup, dipping sauce is used just before we eat. Most common flavourings are soy sauce, satay sauce and chili paste, on the side.
HK Da Bin Lo has evolved due to influence from mainland China and restaurant variations to attract customers.
Grace, best of luck in your upcoming A Levels studies and examination. Hope one day you have a holiday in Australia and I will show you what a traditional HK Cantonese style Hot Pot or Da Bin Lo would be served at home.
