- Tampopo is a genre-bender ahead of its time, affectionately referred to as a "ramen western". Like spaghetti western. But Japanese. Hence the ramen. It's a play on words, you don't get it. This 1985 foodie flight of fancy features a 'ramen master', who artfully studies and mindfully consumes his bowl of steaming noodles and broth. NOTE: I forgot to mention in the video, this came out absolutely fan-fucking-tastic. The noodles were tender but chewy, the broth was flavorful without being too fishy, and the pork was exquisite.

Since no one in the comments seems to actually have seen Tampopo: the movie is excellent. If you have even a passing interest in Japanese culture or cuisine, please watch this movie. I still think of the spaghetti etiquette scene every time I eat long noodles.
I'm glad someone's finally appreciating the movie, too! It's a classic, and damn does that ramen look good, especially seeing everything made from scratch.

One of my favourite things is the little "oop-" he does in the voiceover when something slips or gets bumped accidentally
In japanese culture, slurping your food is seen as almost like "praising" the chef for the meal. It supposed to show that you love the meal so much, you are very readily enjoying every bite.
I went to Osaka for a high school student trade, and was warned by our advisers that we needed to slurp at a ramen shop if we didn't want to get kicked out XD

Is there other way to eat ramen other than slurping? It's not complete without slurps throughout the meal and healthy glugs of the soup to end it
Same for Korean food culture.
This is actually a myth. Slurping just isn’t considered bad etiquette like it is in western culture. Japanese people won’t consider it a compliment if you slurp, nor will they find it rude if you don’t.
Slurping does however allow you to eat the hot noodles faster, which might prevent you from the potentially rude scenario of letting your noodles get soggy i.e. not enjoying the food how the chef intended. People also argue it tastes better when you slurp since you bring up broth with the noodles and aerate it (like some people do with wine).
People want to complain about spending 12 bucks at a restaurant for a bowl of ramen but forget that it takes 2 days to make properly. This ain't your Cup O' Noodles, son. Looks awesome, Andrew. Keep it up.
And yet ironically you can get handmade ramen for about $3 a bowl in Japan.

Had the best handmade ramen in my life in a little restaurant at Narita airport in Tokyo back in 2001 during a layover, cost ¥380. Great airport.

It’s kombu not konbu which is what made it funny.
@@Vampyresdontdodishes Ah okay. I think kombu and konbu are _technically_ different things (kombu being Chinese and more like seaweed and konbu being Japanese and being kelp). The ramen here is Japanese, I believe so it would be konbu (昆布). N's and M's get mixed up a lot in romanization so I think either one goes.

Err, a omurice is quite easy to make, just make some fried rice and put a omelette on top of it with ketchup.

@@dankerbooper Err, actually a bit more to it than that. It needs to be semi-liquid inside still so it oozes out when you cut open the outside layer that holds it all together. The presentation is a major part of the dish.

It's "just" ramen. All of these foods are "just" something. The interesting part is seeing how he chooses to season and prepare the foods. The foods in spirited away aren't raw pork, so it should still make for a fun video watching him prepare them.

Slurping your noodles is actually a good thing in Japan. It's a sign of respect to the chef, which in this case, is you.
That's actually a common misconception; it's not a sign of respect to the chef, it's just a normal thing you do. It aerates the noodles and broth cooling it down so you can start eating faster and apparently enhances the flavor. It shows you're enjoying your meal, yeah, but it's not specifically a complement.

P.S. Kombu is also seaweed, but I guess technically it is sort of like leaves, so... Oh, and removing the guts of sardines before using them would result in a slightly better flavour. Yes, I know they're dried. Can't remember if the heads go too.

I've binged the past 23 episodes in the past few hours while at work.
Tampopo is such a bizarre movie, but it never fails to make me spend a night cooking ramen
I love this!
It seems a little wasteful though, no? How did all those chicken wings and spare ribs end up after making the broth? Do they mostly incorporate or are you left with weird tasty boiled meat? I'd be too tempted to add to and turn all the ingredients in the broth into some type of stew or soup after straining the bones out (maybe fish the chicken feet out).
I like to buy huge ham shanks/hips and make all kinds of stuff with them, but I always save the bones and fat to boil them down to make gelatin rich broth for all kinds of soups. This broth looks absolutely incredible though.
These videos have inspired me to try to start making my own noodles instead of buying from the store. Cheers!
Hey Andrew, big fan of your stuff. You're a great cook and videographer. I was wondering if you gutted and removed the heads of the anchovies first? I cook with them all the time here in Seoul and was always taught that leaving the heads and especially guts intact can introduce a bitter flavor to the stock. "Better" is debatable. I've watched Babish less and less over the years as his production quality shifted further from his old stuff. Mainly, when he rebranded his channel into the now Babish Culinary Universe, that's when I just lost almost all interest.
