Start with 5g, mix thoroughly, assess the color and steal a quick taste then 2 to 3 g increments till you achieve the desired color and taste. Another point I would like to add is that personally I would substitute white choc with equivalent weight condensed milk for that milky dairy taste that blends so well with black sesame. White choc is traditionally used in cheese cake because it is a solid in room temp and thus can help hold the shape of the cheesecake, but in this case since gelatin is already used, it's role is somewhat diminished other than simply contributing a sweet taste.

Hello! Did you make your own black sesame paste? If so, how do you make it? :)
Just use the more common black sesame powder. Paste version can be purchased easily in small packs but contains preservatives, sugar and starch.

The commercially available ones are always packed full of sugar. Just use the powder form instead.
