Yeah you can always go to settings and toggle the helmet appearance to off. Took me a while to figure that out the first time I played it in the beginning.
Defender's gear a fine way for a new player to not learn the game properly and make your experience more shallow. It also "pays of" very badly in master rank
I started with defender having done limited research on the game before hand not realizing it was. Like “cheater” gear to get to icebourne. I use quotes because now that I’ve played through 4-5 stars worth or story I have slowly begun to realize other weapons while they may be weaker they offer other things that I didn’t know existed. Sleeping paralysis and so on. As a new player who had no idea how the mechanics worked the “cheater” gear was a great way to learn mechanics. Despite the OP. I think it’s a great way to learn, they are like training wheels to help you slowly learn the game and other weapon mechanics.

Anyone who reads this, play the way YOU want. If you get stuck on a hard part and give up cause you used cheater gear that’s ok too! It’s your game. But if I had to bet I would say that will be a tiny tiny number of people.

It's sad you used Defender gear - the catch-up gear for post base game contents, 😊which you won't get a better weapon before Master Rank and won't need to farm armor til mid-end of High rank. It ruins the experience tbh
well i used the defender gear to farm builds faster, im currently using kadachi daito 2 and master rank armor set, i just wanna get to the cooler monsters faster🤣
How is that sad? It saves people a ton of time and you can still easily learn the mechanics of the game so that when you get to MR the game is hard but you know how to play well.

Consider the base game the tutorial stage. The real game begins in Ice Born.
