    雞湯:2湯匙
    鹽:3-4茶匙
    麥芽糖: 3湯匙
    鴨子洗淨,用滾開的水燙皮,將混合好的佐料均勻塗抹在鴨子的表皮和內部,放冰箱醃製一天后,中間翻一下面, 取出,擦乾表皮,用混合好的麥芽糖和雞湯刷在鴨皮上,放在一個架子上,晾乾一天后,用鋁箔紙包嚴,空氣炸鍋中加入一杯水, 270F(132C)烤40分鐘後把鴨子翻面, 270F(132C)再烤40分鐘, 打開鋁箔紙, 在鴨皮上刷上融化的麥芽糖或者蜂蜜,390F(198C) 烤3-4分鐘,翻轉鴨子的另一面,刷上麥芽糖或者蜂蜜,烤3-4分鐘。
    注意:上面的佐料要根據鴨子大小和自己口味適當調整

    Ingredients
    Duck: 1 5.3lbs (2.4kg)
    Marinade seasonings:
    Hoisin sauce: 60g
    Five Spice Powder: 2tsb
    Red wine: 1tbsp
    Sugar: 20g
    Honey: 1tbsp
    Oyster sauce:1tsp
    Chicken broth: 2tbsp
    Salt: 3-4tsp
    Maltose: 3tbsp
    Clean the duck, submerge the duck in boiling water, dry it up. Apply the mixed seasonings evenly on the skin and inside of the duck, marinate in the refrigerator for a day, turn it over after 10-12 hrs. Take it out, dry it up, and brush the duck skin with the mixed maltose and chicken broth Put it on a rack, dry it for a day, wrap it tightly with aluminum foil, bake at 270F (132C) for 40 minutes, turn it over, bake another 40mins, then open the aluminum foil, brush the duck skin with melted maltose or honey, bake at 390F (198C) 3-4 minutes, flip the other side of the duck, brush with maltose or honey, and bake for 3-4 minutes.
    Note: The above seasonings should be adjusted according to the size of the duck and your own taste
