Hello! We just want to preface this video by saying that we hope everyone affected by Fiona is okay and getting back on their feet. We didn’t expect the impact to be so far reaching. Selfishly we’re gutted we couldn’t see as much of NB as we wanted to. We can’t get across in one video what a beautiful province this is. There was a lot more storm damage then we realised and many roads were impassable. Huge thanks to our friend and Patron Devon for helping us with wild camps etc. We think the phrase hidden gem is often overused, but it absolutely applies to New Brunswick. We can’t wait to come back one day 💛✨

You’re leaving Canada far too soon. Entering “America” is merely caving in to slick marketing. I get it … you’ve made naive plans and are economically sticking to them based on “popularity-based” limited information. Please carry on and enjoy. I am a Brit-born Canadian who over the past 40 (or so) years has travelled to the States on numerous occasions on business and pleasure. Without fail I have been happy and grateful to not only experience the US, but also to return and fully appreciate the reality of my adopted homeland. I have thoroughly enjoyed and appreciated every trip to our neighbours to the south. Sadly, my fellow Brits know pathetically little of their fellow countrymen and the country here in Canada and far too frequently fall for the Hollywood-generated bullshit about NSM (Nited Sates Murica). Please enjoy your tour. Y’all come back ta Canada now, y’hear!?

Sad to see you guys leave Canada, but glad you were here. It's heartwarming to see world travellers like yourselves appreciate the magnificence of this land and its people as much as we do. Too often when Europeans visit North America, they treat Canada as merely somewhere to get through while they go to their more important destination, the US. But, you two seemed to really value it and us. Best of luck on the rest of your journey and give the pups a squeeze for me, please.

I just want to say that I have truly enjoyed watching your adventures through Nova Scotia ❤. New Brunswick is a surprising treasure to be sure. I was born and raised in Nova Scotia and lived in New Brunswick for 7 years. Watching your appreciation for my country and discovery of things for the first time that I have had around me all my life has been special. I can’t wait to watch you guys travel all the way to Argentina. When you guys do make your way back to Canada if you go to Alberta to see the Rocky Mountains than you must visit the town of Grande Cache. It’s a hidden gem. The unspoiled wilderness, the Smokey River and just the area is amazing. Lots of great overnight parking too. Alberta does boon-docking right (winter camping too).
My shepherd’s pie tip if you don’t have an oven is cook it all on the stovetop. I start by cooking my ground turkey or beef and then I add my mix to it. I also add flour to firm up the mixture and this is done on medium heat. I add the cooked mashed potatoes to the top with some shredded cheese (gotta have the shredded cheese 😋) and then I put the heat down and cover the mixture and let simmer for 30 mins. It’s good shepherds pie!

@@OverlandingSophia As for you, this is a Canadian comfort food. It can be prepared beforehand, placed in the freezer and taken out whenever you need it. The origin of the name in french is not really known. As you may have guessed the english translation could be given as Chinese Pie. My inclination is that the dish was first developed in the region of Lachine in the province of Quebec; thus the Chinoise part of the name which simply means from Chine or in this case Lachine. Lachine is just south of Montreal where the Lachine rapids start and was the furthest point that a large ship could go up the St-Lawrence river before the building of the Lachine canal in the 1950's. Way back when there were actually people who thought that China was not too far too the west; how wrong they were.

Sheppards' pie or Cottage Pie is always a problem. But, I do have an electronic recipe book I have been adding to for over 20 years, so here is the recipe. From memory and before I copy and paste, I seem to recall that gravy granuals are the key. I am also from the U.K. and I don't think I can get gravy granuals when I am in NS which is where I am going again next Wednesday.
    Recipe:
    Cottage Pie
    • 500g of steak mince
    • Two medium onions chopped
    • A desert spoon of olive oil - I would now say sunflower oil which seems hotter
    • half a teaspoon of salt
    • pepper to taste
    • two beef OXO cubes - or beef Boullion if you are in NS
    • 1 litre of water
    • gravy granules - *or make gravy with flour and water, beef Bouillion, stirring all the time until it slowly boils and thickens
Fry the onions and the minced beedf until brown
Add half a teaspoon of salt, pepper to taste and two beef OXO cubes
Add 1 litre of water and over a slow heat boil for 30 to 45 minutes
Adjust liquid while it is cooking to ensure it does not get dry
Thicken with three heaped dessert spoons of gravy granules. Make sure the mixture is boiling before adding and allow extra time for it to thicken before you consider adding more granules. Or you can make gravy see* above. Top with strong (thick) mashed potatoes - go easy on the milk (just a splash), lots of butter and a generous seasoning of salt. Sprinkle cheddar over the top and put in the oven for about 30 minutes at 200 degrees centigrade or 400 degrees farenheit or gas mark 6 until it is bubbling and browning.

Best thing to use to thicken Cottage pie is porridge oats. Vegan and usually in the store cupboard, but helps to thicken anything. 😊 you're welcome.

That was very beautiful, Thanks for showing us. . I don't know a lot about New Brunswick but I know a lot about Maine and the US. Maine is 90% Forrest with no people. There are a lot of moose and wildlife. You must go to Arcadia National park along the ocean, also there are lobster docks were they will cook you up big lobsters right on the docks for a few dollars, they will give you melted butter and fresh lemon. There is a lot of whale watching, also lobster mac and cheese and lobster roll sandwiches are very popular. When leaving maine there is a beautiful quaint tourist town called Ogunquit Maine, it's charming. This time of year you won't experience very warm weather until you get south of Virginia. I use to camp a lot in Maine in the 1980s.

New Brunswick is beautiful been there many times to visit family. So glad you guys decided to showcase the East Coast maybe sometime you will visit the rest of Canada there is so much beauty to see here. The shepherds pie it if you make the gravy separate and put it over the shepherds pie then the meat mixture won't be as wet and the mashed potatoes won't sink in. The secret to the shepherds pie is to drain the meat mixture really well which then can support the mashed potatoes no matter how creamy you like them.

and another beautifully shot and planned video by you. As for the shepherd's pie, make both components a tad thicker, less saucy. I like to add fine breadcrumbs to the base rather than flour...it gives a lovely silky mouthfeel to it. Cumin also adds to the meaty flavour if you are using vegan mince.

For your cottage pie topping you want to make sure your potatoes aren't overboiled as they'll hold too much water and fall apart before you even add any cream/butter.. you want the potatoes just soft enough to mash and then gradually add butter/cream until smooth.. then I always add cheese ontop and cook till its browned 🤌 hope this helps 😂
