  • Welcome to Bonita's Kitchen! Today we will be making FISH LOAF! Our tasty meal is made with our codfish but you can use any type of fish. See recipe below!!

    Ingredients:
    2 cups fresh codfish ( part cooked ) 2 cups stale bread crumbs
    1 large onion chopped 2 large eggs
    1 tsp savoury 1 tsp sea salt
    ½ tsp black or white pepper ½ cup fried fat pork, optional
    1 tsp olive oil 1 tsp butter or margarine
    Loaf pan 9×5 and 8½x4½ inches must popular sizes.
    Method:
    Put codfish first in a saucepan of hot water and ½ tsp sea salt.
    Cook on a low heat for 5 to 10 minutes. Remove from the pan and flake apart removing any bones and grey skin.
    Then in a frying pan on medium heat add oil and butter. Peel and chop onions then add to pan cook until softened. Remove from the pan and toss on top of the prepared fish.
    Cut fat pork in cubes and toss in the same frying pan, cook out fat and have a light brown removing the fat and only using about a tablespoonful of oil. When cooked toss over fish and onions.
    In a bowl add stale bread crumbs, savoury, ½ tsp sea salt, pepper, cooked fish, onion and fat pork, toss together.. “Salt pork is optional use one tablespoonful of oil to replace it!!”
    Crack two eggs in a separate bowl and whisk lightly and pour over the mixture. Continue to toss together until all ingredients are combined.
    You will need a bread pan and piece of parchment paper…scoop all mixture into pan and flatten down.
    Preheat the oven to 350ºF, and bake this fish loaf for 40 minutes to one hour.
    Serve with boiled or baked potatoes, also make a roux or gravy to pour over top of each serving.
    WHITE ROUX:
    Recipe:
    2 tbsp butter or fat port oil 2 tbsp all-purpose flour
    pinch sea salt pinch of pepper
    2 cups milk or half milk and half broth 1 small onion, chopped
    Method:
    In a frying pan add butter or oil, add chopped onion let cook until soft, then add flour, continue cooking for a few seconds to make a paste
    Then add milk or broth mixed with sea salt and pepper to taste. Mix together until thickened and runny. Serve over fish loaf single servings.

    I made this for supper today. Used a shallot instead of onion, no fat pork, used olive oil. used oregano instead of savoury (hard to get where I live!), used my homemade bread, baked it but topped it with shredded red leicester cheese for the last 15 minutes. Oh my goodness! This was drop the fork and knife delicious!! Thank you Bonita, and thank you to Raymond and all of your team!

    I could eat this all day every day and I love the scrunchens you put in there. COD always reminds me of home and I love summer savoury. Sorry I am so late. It has been quite the week .     Thanks for sharing what for me is a brand new menu idea. Never heard of fish loaf before but I will give it a try now. Cod is always available at my local chain grocery store and I do enjoy it. I'd likely just use some chopped bacon and its grease rather than the salt pork, and thyme/sage or something to replace the savory (not common here in Chicago).

    That is so amazing Bonita!! Why can’t we get Newfound cod right here in Ontario!! Not fair. I say!! 🌹🇨🇦🇨🇦🇨🇦we just are not happy. As Canadian people we have amazing products. No need for importing from other places. All I need is a good glass of white wine with this❤❤❤❤❤❤❤❤

Years ago there was a Newfoundland seafood store in Ontario called Stoyles but they closed down.     Bonita, this is the same ingredients that I use to make a Salmon loaf which my husband and I make often. I love to make creamed peas and baked potatoes to serve with it. Would you say that your fish loaf taste similar to a Salmon loaf? Or even Salmon patties. I never thought of using Cod fish which is my favorite fish by the way. Another great recipe that I would love to try. Thank you my New Fundland friends.

      Hi Kathy! Thank you for stopping by and for your question? You can use any type of fish for this one, salmon will change the taste a little but that's not a bad thing. It will stand out, you can maybe use dill instead of the savoury. But the savoury is pretty nice in this recipe. Enjoy to the fullest!! :) Bonita

    My late mother used to make this with canned salmon. She'd use two 213 gram cans. Of course, she'd pick out any bones and skin then break up the chunks of salmon. Scrunchions weren't available in those days. I'd use bacon now and I think Tsatziki would go nicely with this.

    I'd never heard of fish loaf. It's like fish and brewis with scruncheons -- but turned into a sort of meatloaf. Now I just need to find some savoury.

    So this is basically fish cakes in loaf form,and healthier as you don’t fry them,good idea.I don’t like cod as it’s to me tasteless,so perhaps a fish with a bit more taste,I make salmons cakes,but British style with mashed potatoes,I would like to try this recipe,so thank you.

But equally as tasty. Cod is a white fish similar to lake trout. When codfish is fresh you can taste the difference between fresh and frozen.     Wow! A Raymond sighting! If you are able to, get Summer Savoury, it's delightful and to be honest, I prefer it over sage.

    Hi Bonita & Raymond. If you are using frozen fish, I assume you would thaw it first and press out as much moisture as possible? Those Scrunchions are very interesting. Glad you mentioned some substitutions as I don't think I've seen them here in Ontario.

      Yes for sure let the fish thaw because you don't want to over cook the fish just really blanched it. The scrunchions is so tasty! I'm sure you can eat them like popcorn!! For sure you can substitute the fat pork. Enjoy to the fullest and thank you for stopping by. :) Bonita

    Hi again, Bonita. I could use your advice on this. I used the parchment paper to line the pan. However, the food sticks to the paper. Wondering if I should stop using the paper. The pan has a non-stick coating. Any suggestion is greatly appreciated. Love this dish though! Had it again for supper tonight!

    This sounds yummy! When I was young and lived with my parents, Mom use to make cod tongues and cheeks with pork scraps and onions. It was served with milk and butter sauce. Do you make that?

    Bonita, have you made with with dried cod? That's one lovely Newfoundland thing we get here in Alberta. We do get "salt pork" -- "salted fat," but frozen cod is often already breaded.

      Hi Diane, Thank you for your question and for stopping by... you can make this one with dried cod but you will need to soak it overnight to remove most of the salt and rehydrate the cod. Then follow the recipe for the rest. You can use another white fish or fish of choice. I hope you get to make this one sometime. :) Enjoy Bonita

      Hi Sandy Thank you for your message and for stopping by. You can use thyme or ever sage to make it but if you wish to order some for the next time you make it. The savoury is a herb we use for our stuffings and cooking with and it puts a lovely flavour on the food. But thyme or sage will work great!! Enjoy Bonita

    This fish loaf looks really delicious, dear Mrs. Bonita! I'm here in Austria/Europe, don' t know the breadcrumbs you used. Ist ist soaked in milk or water? Could not find out. German automatically translation really bad. Can you please help me? Alice

      HI Alice! Thank you for your message and for stopping by. Bread crumbs is just stale bread and you grate it down to make crumbs. So whatever type of bread you and your family enjoy eating grate it down and use it in this recipe. You don't soak it just leave it stale, or it is also called outdated bread.       Yes for sure it's still a pork fat it will work great. You can also use just a tablespoon of regular oil or butter. This is a lovely meal. Enjoy Bonita
