Fried medium slice for breakfast on day one. Donair sauce on my thin slice sandwich for lunch on day two. Day three will be a thick (think steak) slice with mashed potatoes and a hot veg. I don't have access to Moose meat since i live in NY. USA but we have lots of deer but don't have any of that either. I will absolutely try it but will probably use beef in place of the moose. It really looks delicious Bonita!

I have just filled three casings with spiced moose&hog meat and put them in the fridge to marinade overnight. Tomorrow they go to the oven for low heat cooking. I prefer this recipe since casing saves moisture in your bologna better.
I have my first batch in the oven right now. I also used casings and I put a pan of water on the bottom rack to help keep moisture also. How did yours turn out?

Well done as ever Bonita. I am going to try this out for sure. I might spice it up a bit. When you make your pea soup, try putting a few drops of that liquid smoke in there, about half an hour before it is finished. It gives a nice smokey flavour, and if you are doing your soup with ham it just intensifies that amazing flavour. Cheers to you and Raymond.

Good morning my friends Bonita and Raymond Hussey hope you had a good Valentine's Day. Happy Family day. I got my results back from the neurologist. He said I indeed had a significant stroke. He said that my stopping smoking was good. I have to go to hospital when they phone to get 2 special MRIs and other tests. Hopefully they will phone soon so the doctor can tell how much damange or how bad the stroke was. I didn't even have any symptoms so I am scared because strokes run in my family. This recipe for moose bologna looks good. What meat would you recommend if you couldn't get moose? It's over 2 months since I last had a cigarette.
