Roast and Duff - Traditional Newfoundland - Bonita's Kitchen

    Today we will be making Baked Roast and Duff pastry over the top.
    This is an old recipe that our elders would make when baking roast beef, moose, duck or seal.

    Ingredients:
    1 Roast ( any size or type )
    1 Onion
    1 Stick celery
    ½ Tsp sea salt
    1 Tbsp Butter or oil
    ½ Tsp Black or white pepper
    ½ Tsp oxo or bully beef seasoning
    ½ Cup Flour or 1 Tbsp Corn starch
    1 Cup Water for making gravy
    2 Cups beef or vegetable broth or stock
    Method:
    Season roast on both sides with salt, pepper, and rosemary then place in a hot frying pan, add butter or oil and fry the roast on each side to brown off meat, about 10 minutes.
    Then you will need a roaster, put your roast inside and then add chopped onions and celery to the frying pan and sauté, then add them to the roaster.
    Top with sea salt and pepper, broth or stock, cook roast 25 minutes on 425º F covered and then put heat to 375ºF for 16 minutes per pound or tender, the last 20 minutes of cooking time remove from heat.
    This will be a medium cooked roast, if you like your roast to be falling apart continue cooking on 375º F covered until fork tender, if not remove roast from roaster and put on a plate, then place the roaster on the stove top to make gravy, on medium heat.
    In a mason jar add the mixture of flour and water, shack will, then add to the boiling beef broth in the roaster. Mix until thicken then place roast back into gravy. Keep some gravy out for extra for veggies when serving.
    Then add the duff dough over top, leave uncovered and place back in the oven, for 15 to 20 minutes or until golden brown.
    Enjoy with a side of boiled vegetables, carrot, turnip and potatoes.
    Follow the duff pastry recipe for the top of the roast.
    Serve hot with roast, vegetables, gravy and duff.
    Duff Pastry:
    Recipe:
    2 cups white or wheat flour 1/3 cup white sugar
    ¼ Tsp salt ½ cup cold butter
    ½ cup evaporated milk 4 tsp baking powder
    1 egg
    Method:
    Mix all dry ingredients into a bowl, then add pieces of cold butter and mix well together.
    Mix egg and milk together in another bowl and add to mixture, working it in with your hand or mixer until almost into a ball.
    Continue on forming into a ball then put out onto a piece of wax paper or parchment paper. Cover with a sprinkle of flour and rollout the same size as your roast top.
    "The roast or stew you are using the pastry for must be almost cooked and the gravy made before putting the pastry over the top".
    After place on top of roast and gravy, put back in over 375ºF for 15 minutes or golden brown.
    When cooked, remove from the oven and cut the duff in tea bun size pieces.
    Remove roast and let rest 5 minutes then slice.
    Bonita’s Tips:
    To speed up cooking time you can fry the roast in a HOT pan on the stove top to brown off first before putting it in the roaster.
    Make extra gravy to serve with roast and duff.

    Another masterpiece. The best of cooks is them what takes infinite pains. I watched especially for to see yer pastry. I love the color. We always try to get the beef with the marbling. It gives such a great flavor. Sometimes we cannot find beeves like that at a reasonable price so we corn it for a few days before cooking it. It tenderizes it and gives it the best of flavors.

    I sear the roast with Worcestershire sauce right in the pan. Over the years I have used Campbell's French onion soup and a cold can of beer as stock. I raise beef cattle here in Texas.

      This recipe gets a huge thumbs up! We loved it. Instead of sausage, I added small, homemade meatballs. This will be a favorite in our house. Thinking the next time I may add another veggie instead of meat and serve this as a sidedish. Thanks again for sharing Bonita!

      Oh my that is so funny, here in Newfoundland and Labrador there are so many different recipes, that may be on one side but not the other. I have noticed that when people ask for a recipe and I didn't hear of it before. So I understand totally, most recipe are put together by elders that wanted a meal to be filling for their families because of the amount of children they had. This is a lovely and heathy meal, comfort food for fall and winter months. Enjoy Bonita

    I love your hands how they handle the food and the bowlls one had on the bowl at all times and the other for what ever is in the bowl. I'm trying to get use to that way instead of putting in elictric mixers.

    I am enjoying the video want to make this as a surprise for my mom who is from Newfoundland. I was born there too but was only a young baby when we moved to Pennsylvania. I am real interested in learning the dishes in my heritage.

    hey bonita well spring is FINAALLLYYY coming to maine YIPPPEEEE !!!!!!!!!!!!! love this dish . my parents would make this also filled the whole house and home made pie after;];];] i really like house you both re arranged the kitchen . i think gives you more space to move around in ..kitchens can be so awkward...but we have to "make it work" somehow;];];];] happy spring !!!!

Yes we said it would be nice to change the kitchen around for a bit, it do give me more room to work and not a lot of moving for Raymond with the camera.     My dad used to put little tiny slits in the top of the roast and put little pieces of garlic in it. Then he would fry it on all sides. It was a lovely taste to die for. I do it to this day and his garlic mashed potatoes. I remember this very well. I was only 10 when he died

    Bonita: I was wondering if you have a stove? I see you using an electric burner in a couple of your videos I have watched. I am sure going to try this roast the way you made it. I have never had one with a duff! Thank you for taking the time to show us how to do it.

      Hahaha yes I do have a stove and a oven on the side, my stove is closer to the back door you can see in this video. It is a stove top but it is very hard to video on that angle so I decided to get a electric burner for some of the tapings. That is a lovely question and very observing of you. Oh my oven is in the cupboards by the fridge, this is a lovely roast and duff meal and so filling. :) Enjoy Bonita

    This reads like a delicious recipe. I love that you include the amounts of ingredients in your video and your description, but I missed it - is it CARNATION EVAPORATED MILK or CARNATION CONDENSED MILK?
    and your hands mix the batch, no gloves👍. We had no food processors or stuff like that, so not having one is no bother to me. To feel the "bread" dough change in your hands, when kneading, is something you don't forget. One doesn't get that with a "hook".
    I would add what I learned from my mom, skim the fat off the top of the meat juices. THEN add the flour and water mixture. Thank you for the flour mixture "tip". Not wanting lumps, I never would hve thought "shaking" would eliminate those little clumps of flour and water❣
    Also, top round was used for a Roast Beef, and a bottom round was used for a Pot Roast. Of course, use what you do!

    I will for sure and certainly will be making this. I love the way you use so many root vegetables (my favorite). One of our go to flavorings is garlic..I have noticed you don't use garlic like we would here in Kentucky. Is the garlic taste not common in Newfoundland? Or is it a personal taste preference?
    I have never had a Duff pastry! I am so looking forward to trying it!! Thank you for sharing your recipes!

    How much weight per person should the roast be? Quarter pound? I have to make sure there's enough food for everyone. Since I raised my nieces and nephews I have about 20 to 25 when we meet.

      Just a tip. The total weight of meat in all meals should not exceed half pound per person. Try it and see it works. Merry Christmas.

    My Mom was born in Moncton and left there in a convent at age 2 . Her mother moved to the U.S. and she was abused for about 14 years in a catholic convent .

    Hi Bonnita - I see you using your cast iron frying pan. I've never used one, but I have my mother's which is quite old. I have tried to "season" it according to youtube instructions, but I'm not happy with it. Can you please do a show on re-seasoning an old pan and how to season a new cast iron pan. It seems like cast iron cooking is coming back quite a bit and I'm sure there are many others out there that would like to know how to properly season and use them. Thank you.

      Hi Eric: Thank you so much for your lovely message and for visiting our channel. I so appreciate you requesting a video, that is indeed a important thing for sure. I have my dads cast iron pan and I can remember him using this one when I was a child its about 60 years old for sure. I also can remember my dad talking about case iron care, they will rust if not property looked after. I will see what I can come up with but my dad said he restored his once by tossing it into the fire of a campfire and letting all the oil and rust burn off, you know we can't do this but it will be fun for sure. What I always do after using my pan is wash the inside and then dry in my oven on warm, then remove and oil the inside and put a piece of parchment paper inside to keep the oil on it. I love frying fish and stack on the BBQ with my pan, the the side burning right inside the BBQ and let it fry while you are enjoy the outside, maybe I will do a BBQ with your cast iron pan video and talk about ways to take care of your pan. This will be August for sure, but keep following and maybe each time I use my pan I will give caring tips for your case iron pan. I hope this helps and have a wonderful day. :) Bonita

      1. Wash your cast iron pan. Use brush to clean it to metal.
      2. Heat the pan hot to burn off the remnants of old oil. I do it on an electric stove. Make sure that your pan is absolutely clean.
      3. Sprincle some linseed oil (1 Tbl) on the hot pan and sread the oil on the surface with a piece of cloth.
      DO NOT USE SUNFLOWER OR OLIVE OIL!

      @@opanick74 I've never heard of anyone using linseed oil on their cast iron cookware & I've been using mine now for about 50 years. I just clean mine, mostly don't have to use any detergent on it, as it is well seasoned. I do rinse it and dry it in my oven, then remove it & take a cloth & dip it in shortening or even lard & wipe the entire pan with that & return it to the oven for a few more seconds. Remove, allow to cool & put parchment paper inside before I store it in my oven drawer. I've had a glossy finish to mine now for years & nothing ever sticks to it.

      @@sbpierce9987 Turnips have white flesh. Rutabaga has yellow flesh. I have found turnips mushy compared to rutabaga

      @@pattylevasseur2645 The Newfoundland Dictionary said, We made a good meal of the fat pork and duff. T 178/9-65 A duff and a pudding is two different things. A pudding is cooked into a pudding cloth and tied up; a duff is [made in] a bag about so long, and you put your dough in the bag, and he's small down under and big on top. When you'd take un out of the pot, you would untie him and take hold by the end and the duff would shoot out in the pan. That was the rig of a duff! 1977 BURSEY 24 The duff was made of water and flour and a generous addition of raisins and all saturated with molasses We called it a figged duff and it was indeed a luxury.
      2 Comb duff bag: cloth bag in which pudding is boiled (1924 ENGLAND 315).
      duff day: day of the week when a boiled pudding is customarily served at the main meal.
