Another masterpiece. The best of cooks is them what takes infinite pains. I watched especially for to see yer pastry. I love the color. We always try to get the beef with the marbling. It gives such a great flavor. Sometimes we cannot find beeves like that at a reasonable price so we corn it for a few days before cooking it. It tenderizes it and gives it the best of flavors.

Oh my that is so funny, here in Newfoundland and Labrador there are so many different recipes, that may be on one side but not the other. I have noticed that when people ask for a recipe and I didn't hear of it before. So I understand totally, most recipe are put together by elders that wanted a meal to be filling for their families because of the amount of children they had. Bonita: I was wondering if you have a stove? I see you using an electric burner in a couple of your videos I have watched. I am sure going to try this roast the way you made it. I have never had one with a duff! Thank you for taking the time to show us how to do it.
Hahaha yes I do have a stove and a oven on the side, my stove is closer to the back door you can see in this video. It is a stove top but it is very hard to video on that angle so I decided to get a electric burner for some of the tapings. That is a lovely question and very observing of you. Oh my oven is in the cupboards by the fridge, this is a lovely roast and duff meal and so filling. :) Enjoy Bonita

I will for sure and certainly will be making this. I love the way you use so many root vegetables (my favorite). One of our go to flavorings is garlic..I have noticed you don't use garlic like we would here in Kentucky. Is the garlic taste not common in Newfoundland? Or is it a personal taste preference? This reads like a delicious recipe. I love that you include the amounts of ingredients in your video and your description, but I missed it - is it CARNATION EVAPORATED MILK or CARNATION CONDENSED MILK? and your hands mix the batch, no gloves👍. We had no food processors or stuff like that, so not having one is no bother to me. To feel the "bread" dough change in your hands, when kneading, is something you don't forget. One doesn't get that with a "hook". I would add what I learned from my mom, skim the fat off the top of the meat juices. THEN add the flour and water mixture. Thank you for the flour mixture "tip". Not wanting lumps, I never would hve thought "shaking" would eliminate those little clumps of flour and water❣ Also, top round was used for a Roast Beef, and a bottom round was used for a Pot Roast. Of course, use what you do! Thank you for your GREAT VIDEO PRESENTATION and recipe. This is the second video of yours I've watched, and I LOVE your presentations👍 I'm looking forward to making this❣😋👍❣
How much weight per person should the roast be? Quarter pound? I have to make sure there's enough food for everyone. Since I raised my nieces and nephews I have about 20 to 25 when we meet.
Hi Bonnita - I see you using your cast iron frying pan. I've never used one, but I have my mother's which is quite old. I have tried to "season" it according to youtube instructions, but I'm not happy with it. Can you please do a show on re-seasoning an old pan and how to season a new cast iron pan. It seems like cast iron cooking is coming back quite a bit and I'm sure there are many others out there that would like to know how to properly season and use them. Thank you.
Hi Eric: Thank you so much for your lovely message and for visiting our channel. I so appreciate you requesting a video, that is indeed a important thing for sure. I have my dads cast iron pan and I can remember him using this one when I was a child its about 60 years old for sure. I also can remember my dad talking about case iron care, they will rust if not property looked after. I will see what I can come up with but my dad said he restored his once by tossing it into the fire of a campfire and letting all the oil and rust burn off, you know we can't do this but it will be fun for sure. What I always do after using my pan is wash the inside and then dry in my oven on warm, then remove and oil the inside and put a piece of parchment paper inside to keep the oil on it. I love frying fish and stack on the BBQ with my pan, the the side burning right inside the BBQ and let it fry while you are enjoy the outside, maybe I will do a BBQ with your cast iron pan video and talk about ways to take care of your pan. This will be August for sure, but keep following and maybe each time I use my pan I will give caring tips for your case iron pan. I hope this helps and have a wonderful day. :) Bonita
1. Wash your cast iron pan. Use brush to clean it to metal. 2. Heat the pan hot to burn off the remnants of old oil. I do it on an electric stove. Make sure that your pan is absolutely clean. 3. Sprincle some linseed oil (1 Tbl) on the hot pan and sread the oil on the surface with a piece of cloth. DO NOT USE SUNFLOWER OR OLIVE OIL!

Bonita: I was wondering if you have a stove? I see you using an electric burner in a couple of your videos I have watched. I am sure going to try this roast the way you made it. I have never had one with a duff! Thank you for taking the time to show us how to do it.
Hahaha yes I do have a stove and a oven on the side, my stove is closer to the back door you can see in this video. It is a stove top but it is very hard to video on that angle so I decided to get a electric burner for some of the tapings. That is a lovely question and very observing of you. Oh my oven is in the cupboards by the fridge, this is a lovely roast and duff meal and so filling. :) Enjoy Bonita

I will for sure and certainly will be making this. I love the way you use so many root vegetables (my favorite). One of our go to flavorings is garlic..I have noticed you don't use garlic like we would here in Kentucky. Is the garlic taste not common in Newfoundland? Or is it a personal taste preference?

This reads like a delicious recipe. I love that you include the amounts of ingredients in your video and your description, but I missed it - is it CARNATION EVAPORATED MILK or CARNATION CONDENSED MILK?
and your hands mix the batch, no gloves👍. We had no food processors or stuff like that, so not having one is no bother to me. To feel the "bread" dough change in your hands, when kneading, is something you don't forget. One doesn't get that with a "hook".
I would add what I learned from my mom, skim the fat off the top of the meat juices. THEN add the flour and water mixture. Thank you for the flour mixture "tip". Not wanting lumps, I never would hve thought "shaking" would eliminate those little clumps of flour and water❣
Also, top round was used for a Roast Beef, and a bottom round was used for a Pot Roast. Of course, use what you do!

How much weight per person should the roast be? Quarter pound? I have to make sure there's enough food for everyone. Since I raised my nieces and nephews I have about 20 to 25 when we meet.

Hi Bonnita - I see you using your cast iron frying pan. I've never used one, but I have my mother's which is quite old. I have tried to "season" it according to youtube instructions, but I'm not happy with it. Can you please do a show on re-seasoning an old pan and how to season a new cast iron pan. It seems like cast iron cooking is coming back quite a bit and I'm sure there are many others out there that would like to know how to properly season and use them. Thank you.
Hi Eric: Thank you so much for your lovely message and for visiting our channel. I so appreciate you requesting a video, that is indeed a important thing for sure. I have my dads cast iron pan and I can remember him using this one when I was a child its about 60 years old for sure. I also can remember my dad talking about case iron care, they will rust if not property looked after. I will see what I can come up with but my dad said he restored his once by tossing it into the fire of a campfire and letting all the oil and rust burn off, you know we can't do this but it will be fun for sure. What I always do after using my pan is wash the inside and then dry in my oven on warm, then remove and oil the inside and put a piece of parchment paper inside to keep the oil on it. I love frying fish and stack on the BBQ with my pan, the the side burning right inside the BBQ and let it fry while you are enjoy the outside, maybe I will do a BBQ with your cast iron pan video and talk about ways to take care of your pan. This will be August for sure, but keep following and maybe each time I use my pan I will give caring tips for your case iron pan. I hope this helps and have a wonderful day. :) Bonita
1. Wash your cast iron pan. Use brush to clean it to metal.
2. Heat the pan hot to burn off the remnants of old oil. I do it on an electric stove. Make sure that your pan is absolutely clean.
3. Sprincle some linseed oil (1 Tbl) on the hot pan and sread the oil on the surface with a piece of cloth.
DO NOT USE SUNFLOWER OR OLIVE OIL!

When using can carnation milk for baking do I use 1/2 milk and 1/2 water

duff day: day of the week when a boiled pudding is customarily served at the main meal.
