Baked Ham and Scalloped Potatoes - Traditional Newfoundland- Bonita's Kitchen

    Today we will be making - Baked Ham and Scalloped Potatoes! Top with pineapples and a delicious light glaze.

    Ingredients:
    Boiling time 2 hours covered.
    1 Smoked Picnic Ham 1 Medium Onion ( Cubed )
    1 Tbsp Black peppercorns
    Sauce:
    1 can crushed pineapple or cubed 1 cup brown sugar
    ¼ Cup cold water 1 Tbsp Cornstarch
    Extra ingredient’s
    1 medium onion sliced 8 red cherries ( optional )
    ¼ tsp black pepper
    Preheat the oven to 350° , bake time ½ uncovered, ½ hour covered.
    Method for Ham:
    In a large boiler add water until half full, add picnic ham; 1 tbsp black peppercorns; 1 medium cubed onion, start the water boiling on medium heat for 2 hours.
    After ham have boiled remove carefully from boiler into a large bowl, remove the net from ham and toss away and any fat from ham, then cut slices in the top of your ham, add 1 medium onion sliced placed in the bottom of your roaster, then put your ham on top of onion in large roaster and one cup warm water.
    Pour all your sauce/ glaze over top of ham, black pepper and top with 8 red cherries ( optional ) this is for look.
    After your hour is up check your ham if you like to brown the top more, take cover off and let bake for another 15 minutes, then remove from heat, let rest for 10 minutes then remove from the roaster and place on board to carve in slices. The remaining sauce in the roaster poured over top of the ham, thicken sauce more if it’s to thin.
    Scalloped Potatoes:
    4 medium potatoes thinly sliced 3 cups shredded cheddar cheese
    2 tbsp butter 1 large egg
    1 cup milk ¼ cup water
    2 tbsp flour or cornstarch 1 tsp olive oil
    sea salt and pepper to taste
    Preheat oven to 350°F, bake for 40 minutes
    Method for scalloped potatoes:
    4 medium potatoes peel skin off then cut potatoes in thin slices, keep in cold water until ready to use.
    Place a small boiler on the stove top on medium heat, add 2 tbsp butter, let melt then add 2 tbsp flour mix until combined. Then add 1 cup milk; 2 cups shredded cheddar cheese continue stirring around until combined, mix together in a small bowl ¼ cup cold water and 1 egg, then stir it into your boiler, mixing until all the egg water has combined in with your sauce. Put about 4 or 5 grates of black pepper in with your sauce and continue boiling until it has started to thicken, remove from heat.
    In a round glass baking dish or a dish of choice, pour about 1 tsp olive oil in a pan then start layering your potatoes and pour some sauce over them topped with more shredded cheddar cheese and some grated black pepper and sea salt. Continue layering until all your potatoes and sauce are used then your last step,top with more shredded cheddar cheese, place in a 350°F preheated oven for 40 minutes. When scallop potatoes are baked, remove from the oven cover with foil wrap until ready to serve.
    Bonita’s Tips: Boiling ham first before baking remove fat and softens meat.
    Soaking potato slices before baking removes extra starch.

    I am so glad I found your channel...my mother who is no longer with us was from Newfoundland...     My grandmother used to put pineapple slices and used toothpicks to keep them on the ham.
    A cherry was put in each toothpick for each child.
    She used ginger ale as a baste with the juice.

    You were featured in our local newspaper yesterday, my hubby showed it to me so I had to check it out as I love fish cakes and jigs dinner, but have never made any of this myself.... am loving your recipes. I was quite intrigued with the way you made your potato scallop with the cheese sauce. Had never seen that before..,, just the pour milk over top of a potatoe onions butter layers and cook for hour and half. I will definitely be trying this recipe with your ham. My grandparents came from the Burnt Islands but I never met them and they left there 100 yrs ago.,,, I went to Nfld once in 2005,. And it was beautiful.. thanks for your videos, I love them

    I just came across your channel! My parents family are from the valley in NS, i grew up in Halifax. I did move to Alberta about 5 years ago, but our type of recipes are A1. You have a great personality and knowledge, I’m glad I found you!!

    Hams are on sale at grocery this week .So I must try this your was with the scolloped potatoes. Sound real good. Usually good a ham very slowly in oven but this sounds really good. Thank you .

    Now I want a ham dinner :) Always make my own scalloped potatoes. Cooking that ham by boiling first is new to me. I usually bake it start to finish. I must try this...looks so amazing. My Mr. is a big fan of pineapple with ham as well. Thanks for a great video.

      @@bonitaskitchen After several generations of people not cooking and relying on take out and fresh from the freezer, the one good thing from COVID is that people are starting to cook good nutritious meals again. I am glad to see that you take the time to show and tell them how it is done because many of these people have not had the guidance from the previous generation. I liked how you pointed out the safety issues that most cookbooks and tv shows just pass over...
      Keep up the good work and hopefully more people will be buying from the fresh food departments and less from the frozen section and enjoying what real food should taste and smell like.

    Don't forget the hot mustard! I mix up some Coleman's dry mustard and water in a shot glass. Clears the sinuses and really compliments the ham.

    Love this. Reminds me of me mudder. I'm a newfie born and raised but long since removed. Me mudder used to say many of the same things. Bile = boil . boiler= large pot. Dat= that. Eht= heat. Skall= broil or quickly blanch. Last Bit ah= last portion. WiT= with. By Comes da time= its ready for next step. And much more lol..I am a newfie and even I miss this.. thanks for a great video.     That's a wonderful ham supper recipe Bonita !
    Me mum use to put the pineapple rings on it as well as those disgusting black golf tee shaped things sticking in the ham like pins... I think they were whole cloves but very nasty to bite into !

      Whole cloves! My parents always stuck them in baked ham. When I started making my own hams that was one thing I ALWAYS left off. I never much liked the flavor of cloves or anything made with them.

    Awesome video! Loved your comment on the netting. Picnic hams hard to find in Ontario....last Xmas could not find and so I bought an American style spiral ham. Was terrible...this year I will start looking in November.

      Hi Amy: That is ok but if it was frozen and you can't take it off just pop it into the water and let it boil and take it off after with the out fat and skin. This is a lovely recipe and so easy to make, and then you can make a peas soup with your leftover Ham or Bean Soup with Ham or Ham and Cheese ball, all of these recipes are available on here or www.bonitaskitchen.com if you are looking to make more ham meals.     Well now your teaching me a little something, have never used a cheese sauce in my scallops. I always use evaporated milk and a cream soup mix but will have to try it your way. Another trick I have learned over the years is when doing scallops without any cheese I put slightly boiled pork chops(gets rid of the seeping blood first) on top of the scallops before baking. The pork flavour goes right thru the scallops, my girls last year got me to do the same but with meatballs on top(wasn't quit as good)......Thanks again Bonita

    Awesome winter meal. If I could make a suggestion, I would really like to see a more close up view of your creations, throughout each step. Camera is too far away. But that's just my opinion. I could smell that ham cooking! LOL. 😊

    If you bake your ham, you can use the bone to make split pea soup. You also get to make gravy in the baking pan. Some folks add a smidgen of coffee to the gravy to intensify the gravy flavour.

    I never thought of boiling ham and adding onions and peppercorns to the ham? We always just baked..thank you..that must help take some of the salt out..thank you

      You are very welcome, this removes the fat and infuses the ham with a nice taste of these ingredients, also removing the fat and then baking it removes that on wanted fat and salt, enjoy to the fullest and please follow up when you do make it. :) Enjoy Bonita

      Bonita's Kitchen yes, he used to make our shoes and bags before he started working here in buffalo at Sahlens Meat company. Parents were slave laborers in Germany and he worked in shoe factory; so he learned there. He would take that hard layer of fat and rub on leather to clean and soften..I guess a substitute for mink oil during the war..

      Hi Sarah, Thank you for your message and for stopping by, you need a picnic bone ham for this recipe because the ham is different from the packed hams you get wrapped in plastic, this got a tough skin and it's got lots of fat and thick skin. So boiling it releases the juices and you can remove the outer layer and then the ham meat on the inside is so delicious. Then baked with pineapples and juice, brown sugar, oh my so good.Enjoy :) Bonita

      same here... i always add mustard to my sweet sauce... if I dont have powdered mustard i use just regular mustard... the sweet/tangy makes it soooo delish!
