FISH PIE - Bonita's Kitchen

    Our fish pie is made with atlantic cod filets, mashed potatoes, fried onions for a roux.

    Ingredients:
    2 fillets of fresh or salted cod, 1 pound “ skinless and boneless”
    6 medium cooked potatoes, mashed
    2 medium onions, chopped
    2 tbsp butter or margarine
    ¼ cup milk
    1 tbsp Olive oil
    2 tbsp flour
    ½ tsp savoury
    1 tsp black or white pepper
    1½ tsp sea salt
    1 cup vegetable broth
    Method:
    Peel, wash and boil potatoes in a medium saucepan with water, ½ tsp sea salt and ¼ of onion, cook until fork tender. Then drain vegetable water into a bowl to use after, then mash potatoes with 1 tbsp of butter and ¼ cup milk.
    Grease a pie pan or pan of choice with butter and cover with ½ of the mashed potatoes.
    In another medium saucepan add your salted or fresh cod with water and 1/4 of onion for taste, boil for 5 minutes then remove from heat. “ If you are using salted cod soak for about 2 to 3 hours before cooking, discard water” “ if you are using fresh cod and ½ tsp sea salt for taste” when cod is cooked drain and flake apart.
    In a frying pan on medium heat fry chopped onions in butter and oil, with a pinch of sea salt and pepper. Fry until part cooked then add flour, fry for another minute, then add vegetable broth, continue cooking until thickened. ‘this is called a drawn butter”
    Add flaked cod over mashed potatoes in the pan, making sure ALL bones are removed before using, then add drawn butter” fried onions and flour thickening” over the flaked cod, then top with the remaining mashed potatoes.
    Melt ½ tsp butter and brush over the mashed potatoes before baking it in a 350ºF preheated oven for 30 minutes or until golden brown. “ add cheese over top if you wish”
    Remove from heat and serve with fresh bread or rolls, and tea. “ mustard pickles or chow chow” corn relish or veggies.
    Bonita’s Tip: If using salted cod, soak in cold water overnight or double boil by boiling first in just hot water and drain, then add more hot water boil for 5 minutes then remove water.

    I made this yesterday with a large can of salmon using the whole can, juice and all ... because that's what I had on hand. The roux made it delish. I will cut back a bit on the salt next time as the canned salmon is already salted. Another great recipe Bonita. Thanks so much for all you do. Stay safe.       @@kippytx I'm sure it would maybe two cans and make sure you remove the bones. Most canned salmon still got the middle bone in it, but I'm sure it will work good. Enjoy Bonita

    I had fish cakes tuesday and wednesday,what a feed that was, but this is a great idea to try the fish pie, i bet it tastes as good as it looks,have a wonderful christmas and a happy new year to you and your family.

    OMG ! I cant believe you posted this today as made this yesterday and we all loved it so much. I had to use salted but let it sit over night in cold water, also use my Moms secret and add leek to it as well. I wait till last 10 minutes and then brush an egg wash on the top so all those crumbly bits get golden brown. Thanks dear for your amazing videos

    That was very interesting. Twice. One, in other recipes I have seen the fish is poached in a milk think, your was just plain wayer, you made the roux separately. Two, potato on the bottom. Wonderful. I have aquired a Piping Nozzle thingy so I can pipe (possibly, time will tell) potato over the pie cos I want to make individual ones in foil cases. What you have shown is wonderful. Definitely going to do this but with individual pies cos there is just me.

      Hi Kathy, You can use the fish and potato water for your broth if you make this meal. If not just use a vegetable stock to make the roux. Enjoy Bonita

    bonita i was wondering if steaming the fish would be faster and hold more of the fish flavor then boiling it ? looks delicous id have mine with oyster crackers to get all the sauce;];];] merry christmas!!!!
