A two oz scoop, about 2 tablespoons of batter per regular-sized cupcake tin, not jumbo or mini.

Yes of course, however, since Coconut oil hardness when cools they might not be as soft.

Monk fruit isn’t paleo…. Paleo sugars are honey, maple, coconut sugar and dates.
