    Can you use regular Erythritol or Xylitol instead of the Swerve?

      You have to make sure is not granular. It needs to be confectioners. If you use granular you wil get a grainy outcome.

    Hi Edna
    I made this cake. I could not find the Nature's Eat Blanched Almond Flour that you suggested, I could only find Nature's Eat Blanched Nut Almond flour. The Cream Cheese Icing was good and the taste of the cake was good but the cake was like a gooey wet texture, like it wasn't done
    I baked it at 350 for 40 minutes tested it
    with a cake tester and the layers were done. I can't figure out what went wrong,
    could it had been the type of Almond flour that I used?

      Maybe it was not fully done. It doesn't have a gooey texture. Is moist but not gooey. You can try another almond flour if you like, but I would say try it again and bake it a bit longer just to see if that does it for you.

    Can mascarpone be used instead of cream cheese for this recipe? Despite being quite tolerant of many keto sweets that substitute the "real deal", I've never liked a cream cheese based frosting because all I taste is the cream cheese, regardless of how much sugar, vanilla, or anything else that I add for that matter.

      Mascarpone is very close to cream cheese so I guess it would work but I haven't tested it. I am allergic to cheese so I avoid using it as much as I can. I do love cream cheese even I can't barely eat it..lol

      It's buttercream because it has butter. The addition of cream cheese doesn't change that.

    Does the frosting/frosted cupcakes need to be refrigerated overnight or can they stay on the table in an airtight container?

      If you live in a warm environment then it needs to be refrigerated. For me, I don't refrigerate but I keep my house cold.

    Hi, hope you are well. I baked your carrot cake this morning and it's now renting in the fridge. Can I prepare the cream cheese frosting today and refrigerante to use tomorrow?? Thank you so much for your guidance.

      If you do that, keep in mind you need to bring it to room temperature again as it will get hard in the fridge due to the butter.

      I baked your carrot cake for my sisters birthday and it turned out delicious. She was so surprised. You were right. It didn't need a simple syrup and the frosting was sooo creamy. I was worried the frosting wouldnt hold up in our Puerto Rican (hot) weather. Thank you so much. By the way, I also baked your lemon cake. Also great. Next I will be trying to bake your keto chocolate cake. So happy

      Usually for me gritty can come from regular vegetable shortening or maybe a not so good powdered sugar. Even though I used Swerve, I didn’t feel any grittiness. But I will add that this can get soft since is butter based. You can exchange some of the butter for Spectrum shortening to make is sturdier if you need it for special occasions.

      If you exchange half of the butter for high ratio shortening it might crust but I haven't tested that one since I was trying to stay with just butter for this one.

      i have been trying to make low carb cakes for my family so that they don't buy cakes from outside, saving money and its healthier.

      @@diamondbloom6918 I have a few recipes for cakes on my channel or you can visit the recipe section of my website. I will say that the sugar I use is the same. I know they are expensive but they are the ones mostly used for no sugar/low carb recipes.

      You can but I personally wouldn't try to get to a super dark color. Since it's keto it requires less powder sugar. I haven't tested adding the color to it but that would be my guess.

    This is cream cheese frosting not buttercream. Buttercream doesn’t contain cheese, that’s the difference.

      This is buttercream because when it has butter it's considered buttercream. At the end of the day..I don't see an issue.

      I have to agree with you. There's a big difference between buttercream and cream cheese frosting, which is what this is.

      @@stacyh8199 Still has butter and still is consider buttercream. Yes..it has the addition of cream cheese, the reason why is called cream cheese buttercream.

      The base is buttercream you add the flavor you would like such as:
      Vanilla buttercream
      Chocolate buttercream
      Strawberry buttercream
      Cream cheese buttercream, etc...
      Why make it an issue ☺️ it's buttercream for a cake and it's yummy.

      It can't be substituted for this recipe. Buttermilk and sour cream are too liquid. The consistency won't work.

      Buttercream has butter and this recipe is a buttercream with cream cheese added to it.

    Have you tried the buttercream with either xylitol or BochaSweet?
