Hello, my partner of 5 years is Italian. He learned to cook from his Grandma, Mama and Sister in Sicily. I have had this dish many times over the years. Garlic should not be chopped that thick and cooked slowly in the oil with the red peppers to release the flavours. When you brown the garlic that much, the oil begins to taste burnt and your pasta will taste like it too. Thinly slice the garlic and put on low heat, and let that garlic just simmer nicely in the oil. It's a simple dish with simple ingredients so take your time 😉🤗❤
1. The garlic is overcooked 2. You have to emulsify the oil with a good amount of starchy pasta water to create the sauce. Instead what you have here is spaghetti coated in oil.
I may be wrong here but Spaghetti Aglio e Olio is a bit different from what was done here. The garlic should be cooked with the crushed pepper flakes in olive oil (not EVOO as this has a high flash point) up to the point of a slight golden or where you can begin to smell the garlic as anything over that will bitter the dish. Then you need to emulsify the garlic and pepper oil with the salted pasta water in order to better allow the solution to encapsulate the pasta. At the end, you can add a touch of fresh citrus juice and/or parsley for a nice finisher.
How much of the pasta water would you recommend adding & with how many ounces of pasta?? I’ve seen some people say about a cup & others say a good amount but I haven’t really seen anything specific
@@gdavies4 usually they say not cheese. But I like it with Parmesan. I don’t care! Aglio olio e peperoncino need parmesan in my house: but not black pepper.

La pasta era diventata già asciutta, asciugata ... l'aglio per me deve essere tagliato in tre pezzi e cotto a fuoco bassissimo, insieme ai peperoncini, e viene tolto prima che si bruci ... si cuoce la pasta, a metà cottura si prende un mestolo di acqua di cottura e si versa per dare sapidità all'olio ... Prima che la pasta arrivi a cottura la si versa nell'olio con il peperoncino e l'aglio ... è si arriva fino alla fine della cottura girandola quasi in continuazione per farla amalgamare ... Se si vuole ma solo per un piacere personale si può aggiungere inizialmente all'olio ed il peperoncino gli steli del prezzemolo o lo stesso tritato, ed alla fine della cottura il formaggio grattugiato.
I made this for dinner last night! Yum!!! I am a home cook, so I always tweak… I used less EVOO but added Danish Creamers European Style butter with sea salt, half of a yellow onion finely diced, low sodium chicken broth, and sliced green onions… My son absolutely loved it! I made 1 lb. and a half of spaghetti # 8.
@@emily-gno, infused oil should taste like fresh garlic and not caramelised garlic. Try it, bring in first the chili flakes, turn off the heat, add the fresh garlic and immediately add pasta and pasta water and stir the pasta in.
e perchè sarebbe fake??? a parte il pepe è come si faceva in italia fino a pochi decenni fa... o pensavi che prima si facesse la risolatura? se lo dicevi alle nonne di 50 anni fa ti beccavi uno sganassone, che forse ti avrebbe fatto bene
My Italian chef made this pasta for us after a crazy Dinner rush and I must say the simplicity of it thru me off thought he didn’t put his all in it but when I tasted that first bite trust me when I say one of the best I’ve ever had 😅

Agree. Adding the pasta water helps to prevent the garlic from overcooking; thus - no bitter taste.

It’s not supposed to be emulsified, it’s not Cacio e Pepe.

Not really. This pasta is made of garlic. Aglio, olio and peperoncino means garlic, oil and chilly pepper
