In the US, the best known version of the song was recorded by original artist, Eileen Barton in January 1950. The recording was released by National Records. When the song became too big a hit for National to handle, it arranged with Mercury Records to help with distribution. The record reached the Billboard charts on March 3, 1950 and lasted 15 weeks on the chart, peaking at #1.
In the UK, a version was recorded by Gracie Fields in 1950, and was used on a British television advertising campaign. Another version was recorded by Georgia Gibbs on February 16, 1950 and released by Coral Records. The record reached the Billboard charts on March 17, 1950 and lasted six weeks on the chart, peaking at #21. Yet another version was recorded by Betty Harris and a choir, with Art Mooney's Orchestra. The recording was made on February 15, 1950 and released by MGM Records.
Bing Crosby and Bob Hope recorded a version together that expanded on the standard lyrics to include verses about making a meal and preparing a goose. This was on the CBS radio program, ‘Welcome Back Baseball’ broadcast on 15 April 1950.
Two versions of the song were recorded for Sesame Street, the first in 1969, and then again in 1976. In 1988, children's entertainment trio Sharon, Lois & Bram recorded the song that appeared on both their hit television series, The Elephant Show as well as their 10th Anniversary album, Happy Birthday. Baker Bob sang it before Piella Bakewell murdered him at the beginning of the Wallace and Gromit cartoon A Matter of Loaf and Death.
The song also appeared on M*A*S*H during the season one episode "Henry, Please Come Home" Two Tokyo-based geisha girls performed the song, along with acoustic guitar accompaniment, to Hawkeye Pierce, Henry Blake and Trapper John McIntyre.
Lastly, the song appeared in the 1978 film adaptation of Same Time, Next Year.

Well, well, well. Look who's here.

    A year.
If I knew you were comin' I'd've baked a cake, baked a cake, baked a cake
If I knew you were comin' I'd've baked a cake
Howdya do, howdya do, howdya do?
Had you dropped me a letter, I'd a-hired a band, grandest band in the land
Had you dropped me a letter, I'd a-hired a band
And spread the welcome mat for you
Oh, I don't know where you came from
    'Cause I don't know where you've been
    But it really doesn't matter
Grab a chair and fill your platter
And dig, dig, dig right in
If I knew you were comin' I'd've baked a cake, hired a band, goodness sake!
If I knew you were comin' I'd've baked a cake

I first heard this song in a couple of episodes of MASH. In Henry Please Come Home a couple Japanese girls were singing it while Hawkeye, Trapper, and Blake were in Tokyo. Then an instrumental version of the song was playing over the PA system in Your Hit Parade.

I was playing piano at "The Place Night Club," a cabaret run by Bill and Josephine in Kenosha, WI (one of the few places that, as late as the 1990s, still maintained an actual acoustic piano--a grand piano, at that). There was a different act every week--a singer or a stand-up comic or a magician or hypnotist--with only one rehearsal for "the band" (consisting of piano, bass and drums; or simply piano and either a drummer or bass player). Often, the act didn't appear for that hour-long rehearsal preceding the engagement, so Friday night, in effect, became the rehearsal for Saturday night of what was a two-night engagement.
Eileen Barton appeared at "The Place" in the 1970s (probably the first half). She didn't show for the rehearsal--so it was a "talk-through" in her dressing room, lasting no more than 5-10 minutes. I remembered her big hit and had even seen her 20 years earlier on TV. She's reported to have been a friend of Frank Sinatra, who had supported her career early on.
She was a true professional, but she chose not to rely on her singing talents alone. I'm sure the crowd would have been happy simply hearing her do a collection of "standards." Instead, she told a lot of stories and jokes, like a "show biz trouper" who's more into vaudeville and entertaining than displaying her musical artistry. Usually, there's "risk" when performing the Great American Songbook, attempting to work together as one team while doing justice by America's classical music--the works of Irving Berlin, Jerome Kern, Ellington, Gershwin, Arlen, Cole Porter, VanHeusen, Styne, etc. Eileen had "good pipes" but was not keen on interpretation. Her act was practically "self-contained." (No doubt, like many experienced entertainers, she had encountered bands that had never heard of her and were unfamiliar with the standards of the GAS.)
She certainly left an indelible impression when she got around to "Bake a Cake" as her finale. During the part that's a piano solo (mixing 1920s Dixieland with 1930s boogie-woogie) she did a strip tease! (All in good fun. Topless dancing and nudity had not hit the Midwest--yet.) For good measure, her encore consisted of a couple of patriotic George M. Cohan tunes--"It's a Grand Old Flag," etc., finishing with the release of several dozen helium-filled balloons (red, white and blue, of course). As I recall, she elected not to do the customary first set, followed by dancing music by the band, followed by a 2nd set (usually, looser and raunchier).. Instead, she did a single, extended set--which was enough to make the locals feel they'd gotten their money's worth (a $5 cover at the door--which never changed--and was enough to turn away new visitors every week. Compare that $5 to the price of a Tony Bennett ticket today--$250 and up; or of a Bruno Mars ticket--$500 and up).
Today, entertainers and musicians are "retired" before they choose to retire. Making a living as a musician has become a myth. Still, there's phenomenal talent out there--Roberta Gambarini is, as Hank Jones said, the "new Ella Fitzgerald." Monty Alexander is, as more than one reviewer has written, "the most hard-swinging pianist" since Oscar Peterson. But when's the last time you heard a jazz artist play on television?" What network would devote even a single minute to the music of a living giant like Sonny Rollins? Now you know why jazz is dying--and Ryan Gosling has done absolutely nothing to save it!

Actually 25 when she recorded this. Youth culture was alive well before the '60s, and performers, especially females, were often promoted as being younger than they really were, going way back.
