    I'm a former employee of Popeyes Chicken. I am going to give you the factual information of how Popeyes prepare their chicken before frying it. The following information is to answer all of the questions and to clear up any and all misinformation of how the chicken is actually made. The chicken is first cleaned of feathers, excessive fat, and any yellowing on the skin with a paring knife. It is then dry marinated with prepackaged seasoning (either mild or spicy) for a minimum of 24 hours (or "overnight") with an extended period of up to 72 hours (3 days). The yellow liquid you see in this video is not the marinade, it is a prepackaged dry powder mix that is turned into it's liquid form with regular water. I can only assume that it is made from dehydrated milk, eggs, and flour. I don't remember the package ever having the list of ingredients on the package, just the label of what it was. You have to wisk it into a wet batter. The wet batter, along with the unseasoned plain white flour is what gives the chicken skin its crispy, flaky texture.

    Al Copeland started Popeyes Chicken. I used to work at Popeyes in the late 1980s. Chicken have to set 24hr after you season and batter 12hr and have to be chilled

    After Chicken is place on the rack for sale. It's good for 30 minutes after if it's not sold it comes down. That's why most managers call for 10 to 5 drops depending on business.     So after going thru every vid, every comment and forum about about popeyes, the chicken is actually first dry marinated for 24 hours (or overnight). My best guess is this dry marinade consists of salt, msg and maybe other spices. This will give the chicken flavour from within. After 24 hours, it is dunked into the yellow batter for a few seconds befire getting floured. This batter most probably consists of salt, msg, egg, milk, cornstarch and definitely some spices. The egg and milk are powdered ones. This batter is the final layer of flavour, it also determines the colour of the final product. Yellow is chosen to give it that golden yellow colour we all associate with fried chicken. Ill take a dig at the spices used in the batter, mustard, onion, garlic powder, pepper and cayenne depending on mild or spicy. The flour does not contain anything, not even salt, msg or pepper. The flour is to protect the oil from getting contaminatilef from the spices as much as it can, This is why when you taste the outer most layer of the skin, it doesnt have much taste. It is only when you bite into the whole skin the flavour from the batter starts to reveal itself. KFC's skin tastes better than popeyes because KFC seasons only their flour.

      @@lilracha_ sorry, I never got your reply. It's been amazing and fat better than my first job, McDonald's. There, I had to run downstairs for heavy boxes every day!! The freezers were down there too!! At Popeyes, everything is literally right there next to MY kitchen ((my, since I'm the only employee in charge of the kitchen)) and I even have my own bathroom behind the kitchen.

    I WAS BATTER FRY COOK/SEASONER BISCUIT. WHEN I FIRST STARTED WE SEASON CHICKEN BY HAND. WE HAD PULLED THE FAT OFF THIGHS AND FEATHERS OF WINGS. LATER THE CHICKEN CAME PRE WATCH AND WE PUT 7 AND HALF BAGS IN A TUMBLER PUT SPICEY MILD PACKAGE IN TUMBLER LOCK LID PUSH BUTTON. TUMBLER PROBABLY STOP IN ONE MINUTE

    Are those pieces already floured before putting them in the dip and flouring them again? Whatever the dip is it's more than just milk and eggs, maybe even no eggs or milk at all. Looks thicker than milk and egg, like a very thin batter, maybe with some sauce.

      DO NOT pack in the flour or else the flour will soak up all the moisture and turn caky, you have to toss the chicken 20 times in the flour like he did in the video.

      I think for regular chicken its better then flour. For Tenders it's flour, batter, flour. My thought is that the batter has some flour or cornstarch in it

    The chicken is NOT marinated for 12 hours at all, it's marinated for only 3 minutes.

      The chicken sits in the batter for 3 minutes? Around 1:17, the chicken sitting in the pan before going into the batter, is it just plain chicken or has it already been coated with spices?

      You must not be from the hood. Some trash locations attract trash people and they scare off regular mind my own business customers. One of the popeyes I go to (because it's near by) often have a lot of homeless druggies in and around the building. They will ask for money. They sometimes argue out loud and fight with eachother. This popeyes doesn't have such a sign, but if you were such a business owner you'd probably consider it too.
