This was very interesting and I loved watching it. I worked at KFC for 4 years in the late 90's to 2000's and most of this was similar... We had 3 variations of twisters and 3 different chicken sandwiches plus the 3 types of chicken back then. Plus I was in Florida so things were similar but a bit different as far as the menu. My location was crazy clean and we prided ourselves on that. Per @naitoman we only wore cut proof gloves because, well you can guess why but he's right wearing normal gloves was a bad idea. We had the pressure cookers, rotisserie, and deep fryers and we spent a lot of time cleaning them. We used huge blocks of shortening in the fryers and we switched it out periodically between adding an additive to extend its life. Honestly, after spending many years learning things, becoming an architect and going through MANY kitchens, I would say KFC held pretty high standards where I was and the workers prided themselves being part of it. Again just my experience but I learned a LOT form working there. So thank you for the video!
Gloves are a waste of rubber. Food workers wear them, then they touch money, the broom, the door, etc. Just work with you bare hands and when needed, wash them.
Ok, they dont need gloves necessarily for this step of making the chicken. The franchise can instill policies and procedures if they'd like but as far as health department concerns, gloves aren't needed for that. Once the chicken is cooked, different story.
I worked at one in the 1970s. We had a breading machine and did not have to do it like this. Also had 6 pressure cookers. The chicken in pieces came in bags and you had to break by hand some pieces or they would not cook properly. The mashed potatoes and gravy were made instant from packets. At the close if there was any chicken that was unsold, we could take it home or we had to throw it away. Btw the breaded coating came in unmarked bags with no ingredients on them. At that time there was no crispy, they were putting in the fryers for that when I left. Still the best cole slaw in the world.

The correct procedure is to not wear gloves when breading unless you have cuts on your hands or have reactions to the flour 2. the dipping water gets bloody yes. because it's real meat. So the water gets changed obviously 3. the cage is not rusty. it's flour that has been burnt onto it and gets cleaned off every night 4. crispy chicken does not need the lid down because cooking it under pressure doesn't make it crispy. anything crispy cooks with an open lid

I worked at a KFC in the 70's. Hardest job I ever had. Was an assistant manager did everything made the chicken salads in 25/50 gallon drums. The chicken was much tastier then and the gravy was made from the real crackling. Believe it or not back then no one want the wings always had left over wings I would take home to my mother because of corse they could not be saved all leftover chicken had to be thrown out usually it was only wings.
We actually still use the crackling at least in my country tho I have no doubt the chicken was better back in the day my mum would tell me how crispy it was and not as greasy but it's not bad after throwing it in the air fryer

Because it's not only the cooking that is the issue, it is hands touching one surface that may be contaminated, and then touching another surface or your own body or someone else's and becoming contaminated with foodborne antigens. It would help if people would stop being so defensive and look at the big picture. Everyone knows poultry especially is Rife with salmonella and other contaminants that make people very sick. Also in addition to this we the public depend on you to pay attention to food temperatures so as not to allows food to girl pathogens that are going to kill us because we happened to drive through for a snack. I've tinkered with the *original* recipe and compared it to modern KFC. It's not even close to the original. I consider @Darnell Miller's assessment pretty accurate assessment of the current KFC recipe. Even Harland Sanders (the Coronel) was bitching about the company changing the recipe not long after he sold it in 1964. I'm one of those super-tasters, and can get pretty close to restaurant flavors on my own original recipes. The current KFC Original Recipe is pretty well summed up as salt/pepper (predominately WHITE pepper), and MSG. Out of the original 11 herbs and spices discovered and revealed in recent years, none of the others really stand out, except perhaps a pinch of ginger. That leaves about 6 or 7 that really don't make a notable difference to the modern taste of KRC. I bet if you served up Harlan Sander's original recipe to today's to devoted KFC customers, they'd probably say, "what the hell did you do to original recipe?" Ironic.

These guys were all hustling. Say what you want but physically they do a lot of work. People don't think about how stuff gets to them. Like the flour guy who just gets saturated in the stuff day in, day out. Fast Food workers deserve more pay. Yeah anyone can do the job....but can they? It might not take an education but it takes a hell of a lot more in other aspects. It's litteraly "work" and they're contributing a lot to society. Pay them a livable wage. Also for those who are saying it's dirty, it really isn't. It's the cost of doing a high level of business. It's "messy" not dirty. If you want to make an omlette you have to break some eggs. I would eat that food. There's nothing wrong with it. People are so entitled. 100 years ago do you have any idea how much worse the conditions would be? Nobody would use soap. Nobody wore gloves. The chicken meat would be sitting out at room temperature all day with flies around it, blood and guts strewn about. You should be so lucky to live in this time and age.

KFC was always my favorite place to work. I was night cook. I always wore gloves, THO... I took home so much food after close. My fridge was stocked full OF KFC.
That was back in 1985. In those years, people had the time to follow the correct procedure. Now a days, fast food in the first place needs to be fast. aka: the customer doesnt want to wait. And offcourse KFC is a big company, so less employee's equals more profit/hour. So more working stress and time pressure for the employee's. AND procedures changes, during the years. Even hospital procedures arent the same as 20 y ago. Thank god for that.

We wear gloves so the flour doesn't stick onto your hands (and "for sanitary purposes", aka. that's what we've been told to do). I wouldn't wanna get fired over a stupid argument. Also, gloves are useful so the hot oil doesn't splash onto your skin directly, and because we don't wanna wash our hands every 3 minutes after flouring the chicken (the handle of that metal thing needs to be flour-free and clean, just like everything else in the kitchen).
I hope she compensated $$$ them for their time and the major inconvenience! If not, that is awful, but this documentary exposes their work conditions and their daily sacrifices they make for society and the big corporations for sure...

I was in a well known national restaurant and had to go to the restroom when I first walked in.when I walked in a I noticed someone was sitting on the toilet while I was washing my hands the person got up from the toilet and went back to work without washing their hands and it was a employee so I asked for the manager and told him what I saw and I walked out of the restaurant.. that's why I don't like to eat out!!
It would be best if no one went out eating until these dirty, disgusting and mismanaged restaurants and other food outlets are monitored properly.

To tell you honestly! I worked at KFC for 2 years as service crew.. I've been all around the store, been cook, bust boy, food preparation, dish washer, cashier etc... I PROUDLY SAY, KFC is the best and cleanest chicken in the whole world.. upto now I always bring my son to KFC, hot n spicy is my favorite chicken and KFC gravy is the best gravy in the planet!!

Worked as a Cook in my very first job in 1981, at the 4th Avenue San Mateo, CA location with two of my high school buddies. We used to have to 'break' the frozen chicken thighs before cooking. The whole process was an eye opener. The pressure cookers were scary at first, but nothing compared to the layers of grease on my Nikes each night. This was during the Kentucky Fried Rat controversy in the early 80s.

I've tinkered with the *original* recipe and compared it to modern KFC. It's not even close to the original. I consider @Darnell Miller's assessment pretty accurate assessment of the current KFC recipe. Even Harland Sanders (the Coronel) was bitching about the company changing the recipe not long after he sold it in 1964. I'm one of those super-tasters, and can get pretty close to restaurant flavors on my own original recipes.
The current KFC Original Recipe is pretty well summed up as salt/pepper (predominately WHITE pepper), and MSG. Out of the original 11 herbs and spices discovered and revealed in recent years, none of the others really stand out, except perhaps a pinch of ginger. That leaves about 6 or 7 that really don't make a notable difference to the modern taste of KRC. I bet if you served up Harlan Sander's original recipe to today's to devoted KFC customers, they'd probably say, "what the hell did you do to original recipe?" Ironic.
@@unknownquantity4440 Sanders could've killed them for what they did to the brand after he sold it, he was furious however spice brand marion-kay spices offers a seasoning called 99-x which is confirmed to be EXACTLY THE SAME AS SANDERS ORIGINAL BLEND. he gave the recipe to them as a F you move....and I brought some....changed my fried chicken life.

These guys were all hustling. Say what you want but physically they do a lot of work. People don't think about how stuff gets to them. Like the flour guy who just gets saturated in the stuff day in, day out. Fast Food workers deserve more pay. Yeah anyone can do the job....but can they? It might not take an education but it takes a hell of a lot more in other aspects. It's litteraly "work" and they're contributing a lot to society. Pay them a livable wage.
Also for those who are saying it's dirty, it really isn't. It's the cost of doing a high level of business. It's "messy" not dirty. If you want to make an omlette you have to break some eggs. I would eat that food. There's nothing wrong with it. People are so entitled. 100 years ago do you have any idea how much worse the conditions would be? Nobody would use soap. Nobody wore gloves. The chicken meat would be sitting out at room temperature all day with flies around it, blood and guts strewn about. You should be so lucky to live in this time and age.
I understand what you are saying but raising pay will mean raising prices. The mega corp will not take a hit. Also, rents and grocery prices go up. It will not make a difference.

That was back in 1985. In those years, people had the time to follow the correct procedure. Now a days, fast food in the first place needs to be fast. aka: the customer doesnt want to wait. And offcourse KFC is a big company, so less employee's equals more profit/hour. So more working stress and time pressure for the employee's.
AND procedures changes, during the years. Even hospital procedures arent the same as 20 y ago. Thank god for that.

We wear gloves so the flour doesn't stick onto your hands (and "for sanitary purposes", aka. that's what we've been told to do). I wouldn't wanna get fired over a stupid argument. Also, gloves are useful so the hot oil doesn't splash onto your skin directly, and because we don't wanna wash our hands every 3 minutes after flouring the chicken (the handle of that metal thing needs to be flour-free and clean, just like everything else in the kitchen).
