@@joslynandcarltonramsubhag1836 There is a recipe of lime pickle we make it at home. This one has no spice at all , and happens quite quickly if it is sunny and warm outside. In the recipe I had to take a lot of zest out becasuse I was using lemons with a very thick skin. If the lemons/lime that you are using have a thinner skin , then just rub it a bit on a coarse surface and it will do. It can stay outside for months :) . Make sure there is enough oil on the top and always use a dry spoon to take it out. Whenever it is sunny outside you can always give the pickle some sunlight for a few minutes ( with the lid open )
It is a hard question to answer Evan. I have been on the move since I was born living in different parts of India. So my food reflects everything I have eaten or have learnt to cook from neighbors , friends and relatives.

You can keep it outside on the shelf. Every time you eat some of it, take a spoon and mix the pickle.🙏
