I have made cream cheese many times but I've never seen butter added. What is the purpose of that addition? It seems like it would make more of a buttercream base for a frosting than what one might generally expect when you think "cream cheese".
Lovely. The run off after the milk is curdled is whey and super healthy. My doggoes love it Packed full of protein...don't throw it away. Of course, they love the cream cheese part, too.

They get the run off (whey) right away. I will leave the more solid part in the sieve over the bowl for a day or two. More whey will come into the bowl and that gets distributed between the two of them. Finally, almost no liquid is left and just the cheesy milk in the sieve and then that gets divvied up between them. I use it all as a nutritious snack.

But I was about to do this one. I go to a lot of trouble to keep things as clean as possible in my home (buy organic if possible, etc) and it’s taken years. Не знаю разницу во вкусе, но по финансовым соображениям, с молоком и маслом подешевле выходит, примерно в два раза. Но конечно вкусы могут отличаться. Тогда экономическое сравнение теряет силу.

Add the lemon juice (or lime, or vinegar) when the milk starts to simmer. Don't let it come to a full boil or you will end up with a more grainy end product. Yes, you can scale down. Use 2 tablespoons of lemon juice per liter of milk.
Hello from Florida, USA! This is awesome! I went to Google for equivalent measures and weights. I can't wait to try this with my A2, organic milk and butter! I buy A2 organic milk and want to make butter from that for this recipe. Oh my! My guests will love this! Its better for everyone because there are no artificial ingredients!
I make a lot of yogurt, and sometimes cream cheese, and I've never found a great use for the whey after product. You can use it as a partial replacement for water in baking, you can use it in smoothies, etc. I don't bake much and I don't really like the whey taste in smoothies so I'm still looking...
Only way I can get my Dog to swallow his meds. He is a champion at pill spitting. But can't resist a pill in cream cheese. Also use it as a substitute in many recipes, easier on damaged kidneys than other cheeses. Thank you very much.

After the curds are separated from whey and made into whatever type of cheese, the leftover whey can be used to make ricotta by a process that denatures the proteins in the whey causing them to coagulate and form solids that are then strained out - and that is what ricotta is.

I like the bright flowers at the beginning and the dark ones at the end. Also, if you’d place a damp paper towel ( or cheese cloth) under your cutting board prior to cutting anything, it will keep your board from wobbling
Thanks for the recipe. Your title is misleading. That would take at least 20 minutes to make, not 5. Just scalding milk takes at least 10 minutes while constantly stirring to avoid burning.

1. Finding uses for the whey is tough. Some people like to use it in smoothies, but I think it's an acquired taste. 2. 1-1.5 weeks 3. Not really. Freezing cream cheese unfortunately tends to impact the texture in a negative way.
Every single video like this I've watched lately has had a lie in it. Aside from politicians, these are the biggest liars I've ever seen on the net - chefs. Unbelievable.
The video edits all most of the process and it still is a 7 minute video. This would take almost an hour from prep to packaged. And it's not like 3 litters and milk and almost 2 sticks of butter would be cheap for a bit of cream cheese, at this point making it at home is both more expensive and more time consuming than just going to the supermarket and getting it.
This isn't really the food to make those claims on. Most cream cheese brands have very basic and simple ingredients. The only extra ingredient they tend to have beyond the normal milk/cream, cheese culture, and salt is some kind of gum like xanthan or bean gum. That's just to keep the consistency stable. I'm all for cutting out unnecessary or potentially harmful ingredients, but in the foods that actually apply.
Another way to get a creamier texture, rather than adding butter, is to: 1. don't let the milk come to full boil, only simmer it during the curdling process. 2. add back some of the whey to the curds while you are blending it smooth, you only need little.

By microwaving the lemons you also kill the nutrients, especially Vitamin C, which is extremely sensitive.

The video edits all most of the process and it still is a 7 minute video. This would take almost an hour from prep to packaged. And it's not like 3 litters and milk and almost 2 sticks of butter would be cheap for a bit of cream cheese, at this point making it at home is both more expensive and more time consuming than just going to the supermarket and getting it.

If you buy cream cheese in certain parts of the world, it won't have those anyway as those additives are not allowed.
This isn't really the food to make those claims on. Most cream cheese brands have very basic and simple ingredients. The only extra ingredient they tend to have beyond the normal milk/cream, cheese culture, and salt is some kind of gum like xanthan or bean gum. That's just to keep the consistency stable. I'm all for cutting out unnecessary or potentially harmful ingredients, but in the foods that actually apply.
Same thought. Store bought cream cheese is pretty good to go when it comes to dyes and chemicals.@@jp8649

Oh, this cream cheese recipe seems simple and delicious! 😋🧀 I need to try adding sugar and butter for a creamier texture.
Another way to get a creamier texture, rather than adding butter, is to:
1. don't let the milk come to full boil, only simmer it during the curdling process.
2. add back some of the whey to the curds while you are blending it smooth, you only need little.
Love the fork idea to hold strainer.
Is there a certain temperature that the milk has to be before adding the lemon juice?
