Good recipe, am sure the cheese will be tasty. But heating milk to just 50 degrees Celsius will not kill any of the organisms, specially the Bovine Tuberculosis bacilli. My suggestion would be bring the milk to a boil keep stirring it so that the fat does not separate out and cool to 50 degrees and then add the vinegar. Another thing is add the salt to the milk directly you will not need to do this extended salting the cheese.

Usually milk is pasteurized to kill bad bacteria and keep good bacteria, the lactic enzyma. Boiling good milk is crime.

Here in the USA all milk is pasteurized by law and cattle are also vaccinated by law.
In Italy too. But the best aged cheeses are made by not pasteurized milk. Like Parmigiano Reggiano. Nobody get sick...

If you don't use whole milk, it won't work. It needs the milk fats to make the cheese.
