Miso Udon Recipe | Vegan Japanese Style Noodle Soup like RAMEN!

  • LAY HO MA everyone! If you've followed my channel, you've noticed that I absolutely love (and quite addicted) to noodles in hot soup! Whether its Chinese noodles, udon, ramen, pho.... The possibilities are endless, and there is just so much flavour in one humble bowl - just an incredible eating experience. Join me in this episode and I will teach you how to make a vegan miso udon noodle soup with absolute confidence! This vegan miso udon recipe is perfect for this cold weather!
    Ingredients:
    1 pack udon noodles (frozen or dry)
    a couple pieces of garlic
    a knob of ginger
    handful of oyster (or your choice of) mushrooms
    1 bok choy
    a quarter of a green onion
    drizzle of chilli oil
    2 cups vegetable stock
    1 generous tbsp miso paste
    1 tbsp soy sauce
    1 tsp toasted sesame oil
    Directions:
    1. bring a pot of water to boil for the udon noodles
    2. prep and chop your garlic and ginger
    3. prep your bok choy into 4 quarters
    4. prep your oyster mushrooms by peeling down the larger pieces
    5. add a drizzle of olive oil into a hot pan
    6. place your udon noodles into the boiling water and stir occasionally
    7. add your garlic and ginger into the hot pan
    8. sear your bok choy in the hot pan
    9. add your mushrooms into the hot pan
    10. after searing for about 3-5min, add about a 1/4 cup of water from the udon into the hot pot
    11. set aside your cooked vegetables
    12. place the pan back on the heat and add 2 cups of vegetable stock
    13. once your udon noodles are cooked, soak in cold water to stop it from cooking
    14. in a mixing bowl, place 1 generous tbsp of miso paste, tbsp soy sauce, 1 tsp toasted sesame oil, and the hot vegetable stock
    15. whisk to combine
    16. place your noodles in your serving bowl and pour over the hot soup
    17. place your vegetables on top of the noodles and finish with chopped fresh green onions and a drizzle of (optional) chilli oil

      Bruh, I'm here in the hot weather sweating my ass off XD when there's even rain, it's still really warm which I don't understand how that can happen (whilst raining, I held my hand out my window and it's still rlly warm)

      Your in Canada! We are waiting on a job to see if we will be moving there from the states. The only thing that scares us about moving is the snow and cold!

    I made this and it was so tasty, I was surprised because miso soups sometimes can be a bit bland, but this was awesome. Specially with that chili oil! Also, I added a bit of nori on top which was lovely. Thanks!

    Was looking for a last minute soupy dinner recipe. Love texture of the oyster mushrooms.
    I put a lot of bok choy and mushroom. I omit the vegetable stock. Still taste great.

    Wow! You make Udon much better and healthier than the typical ones most Japanese make! I'm not exaggerating it! Japan needs Udon like this. haha ;) It was even warm for the late Autumn here in Japan today. I'd like it little cooler like it is in Canada, so that more Winter vegetables can grow. hehe Btw, your bowl looks very pretty!

    I made this soup for dinner tonight. I couldn't find baby bok choy, so used regular bok choy. And roasted sesame oil was no where to be found! Regardless of the glitches the soup was rather tasty. Thanks

      LOL winter is coming man.....! Udon noodles are my wife's fav lol... We haven't officially gotten snow yet here in Ontario, but MAN I'm not looking forward to it. I think perhaps I will just hibernate and eat noodle soups until Spring? :P

    Impressive knife skills! This looks like it could easily be varied by whatever is on hand - ajitsuke tamago, scallions. sesame seeds, shichimi togarashi, carrots, tofu, spinach, etc. Thanks for sharing and stay warm, my Northern neighbor!

    Hi Wil, this looks like a great and easy recipe! This would warm me up during the cold Canadian winter! Quick question for you: Where do you get miso paste from? Never had to buy it before so I'm not sure where I should start looking and whether there is a particular brand I should be looking for. Thanks for the lovely recipe!

    On top of eating healthy do you have a work out routine? Maybe do a vid on it? I have a healthy weight, but learned how important that stuff is for your physical and even more (at least for me) mental health.

      Thanks so much for the suggestion! Oh trust me, everyone needs some loving for their mental health :) I don't exactly have a workout routine, but I am an avid cyclist! I do have plans on getting back into martial arts so hmmmmmm perhaps some future episodes for sure :)

    I don't like the flavor of bonito dashi, but it never occurred to me to use veggie stock instead...I'll have to try it out.
    BTW, when it's Red vs. White Miso--Red all the way, baby!

      Keep trying mushrooms. When I first went vegan I detested mushrooms but they are so good for that I would try a little bit with my sautéed veggies and now I love them.

    Great video. Quick question on the cold water into the udon noodles. Are you getting rid of the hot water and then adding cold water or do you keep running cold water until there is no more hot water in the pan?

      Mmmm it’s really just enough cold water to prevent the noodles from being over cooked. An alternative actually is to throw a bunch of ice cubes in the hot water and noodles. 👨🏻‍🍳

    I absolutely LOVE noodles....in anything actually LOL. I have yet to work with miso. Kinda nervous tbh, and I'm not sure why lol. Guess cause it's a new ingredient.

      I love noodles too LOL sooooo versatile. Don't be nervous! Give it some tries, I find different brand miso's are more or less salty than each other so you may need to balance accordingly. But do give it a chance, and I promise you will love using it!

    Could I replace the veg stock with shiitake dashi? Or would that affect the flavour too much? And then I could use the rehydrated shiitake instead of the oyster mushrooms aswell 🍜
