I have also made the bread according to the recipe. As seeds I have used chia, sunflower and flax. It came out perfect, very smooth flavor and soft consistency. I love it, I'll try other seeds for a change. I left each step for 24 hours, so it was well fermented on the third day and, perhaps, the chia helped to bind it. I don't know, but I will do it more times, apart from the waiting times, it is done very quickly. Thank you for the recipe. Greetings from Spain ♥️

Hello! No yeast, no baking powder, nothing! Just soak for overnight buckwheat (important: organic, green!!!) when will you rinse and drain you will see that buckwheat became slimy (like gluten, but isn’t not gluten). 12 hours in the water - buckwheat became fermented! After blending leave for 4-6 hours in the baking pan but don’t forget to cover with towel and after bake during 1,5 hours!

please after you try write here your result. I didn't manage. After 12 hours soaking, I didn't wash buckwheat until clear water before mixing, I mixed with proper amount of water, and let it stay 6 hours more . the dough didn't rise after 6 hours. I baked it 90 min, but after 90 min my bread was like backed thick oats-porridge, and it was it.
I don't know how you others manage it but for me it didn't work. this is my experience. I wish you good luck.I will follow other recepies that say the dough must rise, ferment before baking.

I must apologies, for complaining that my bread didn't rise, following this simple recipe, but I made mistake.
I was not using green buckwheat, but little brown, which is temperature processed, dried..This maybe reason that there was no fermentation.
Dark buckwheat is cheaper, but with less health benefits.

      4. Leave for 4-6 hours at room temperature and don’t forget to cover !!!!

      6. After baking remove from oven and remove from baking pan and leave to cool down , but don’t forget to cover with towel ( because it will dry)

@@Healthyandquick what is your usual “room temperature”, please? I wish to try your recipe but my house is always cold. We do not have central heating and it is winter in Scotland, so my house is usually around 15c (about 60f). I always like to check when folks say room temp in recioes, like adding room temp vegan butter…in my house that means it will still be rock hard). So what is your general room temperature level? With a cold house, would allowing it to soak longer make a difference to help it to ferment?
Also, have you tried adding seeds or herbs to your batter? I was thinking some fennel seeds would be useful for flavour as well as digestion. Everyone says it is a dense bread, have you tried adding something else to it, to kelp keep it more moist and less dense inside, maybe some puréed apples or puréed baked squash/pumpkin?
I am very new to gluten free and so still searching for the items that will work for me. Thank you for the recioes, I have subscribed. I like your videos and instructions, they are easy to follow. I have ordered my organic green groats today, so shoukd be trying this recipe tomorrow. I am excited. Thanks again and Happy New Year..

@@cassandrabaignoire1762. If you turn your oven on to the lowest setting for a few minutes, then turn it off, it makes a great place to put the seeds to soak and ferment. You can also put a pan in the oven, fill it partially with boiling water and close the oven door. It will be a good temperature for the fermentation process.

Does fermenting the green buckwheat give a slightly sour taste to the bread like sourdough bread? The one bread I don’t like is sourdough! I love buckwheat pancakes and hope to make buckwheat bread but not if it tastes sour. I think that grinding brown buckwheat or toasted buckwheat will give a non sour flavor. Do you know?
