It’s so nice to see you making fermented buckwheat bread and almond milk. I, too, make all my breads and plant milks…often by candlelight. There is nothing better than homemade, healthy foods! Thank you for your calming, restful video.❤
the whole video was like a poem, or a life set in poetry. I loved how even without speaking it tells such a rich story about your life. The way you captured the trees and the sun and the water and the fresh air, it really transported us to northern Europe in Finland or Sweden or wherever it was set. Everything is so calm and peaceful and wholesome and fresh. I think the fact that you always try to engage with the fresh air (I think it's called FRILUFTSLIV in Swedish which is fresh-air-living) really is such a great way of living. I honestly felt the fresh, wholesome, cleansing oxygen going into my own cells lol watching this! Your kitchen has the most amazing view too!
Thank you so much for this video and for the recipe of Fermented Buckwheat Bread. I made it several times and it's always good. I'll share it with my followers ^-^ Have a great day
I love your videos. They are so calming. Thank you. I have a tip to share with you: soak more almonds at a time and then split them into portions, put them in a few little bags and freeze them. That way, you'll have them ready anytime.
Hello I am from the UK and I have notice that lately I am becoming more wheat intolerant so your video caught my attention. My wife and I will definitely try the buckwheat bread. Thank you for a lovely video and I hope the internship is a success.
Very relaxing and calming to watch, I like the simple recipes, the no fuss almond milk especially made it look very easy and approachable. Looking forward to seeing more adventures!
I'm going to try making almond milk from almond flour. I also bought unsweetened coconut flakes to see what sort of beverage it produces. Nothing will go to waste should the e end products not turn out as expected.
You’ve made a beautiful video. Well done. I’m going to the organic store tommorrow for some buckwheat. Thank you for the 8nspiration. Enjoy the summer in Europe and hello from winter in Australia.
Probably the nicest relaxing wholesome video on how to make a healthy loaf of bread you will ever find. Have you ever thought of using a healthier sweetener like date syrup or honey?
Thanks!😊 I use lots of different sweeteners, honey, and date syrup included! But for this bread, I always use regular sugar because it's in small quantities.
I made this bread and it is so delicious! Thank you for this recipe. Tip - be sure to grease parchment paper before putting in dough mixture. I toasted my sunflower and pumpkin seeds before adding in. 🍞❤
That buck wheat bread looks so good, I would love a recipe for it! I make gluten-free buckwheat bread and I love it, but the fermentation is very intriguing.
This was a lovely video! The music and cinematography all worked so well together! I've never had fermented buckwheat bread before, I'll try that myself soon. Not sure what you did with the almond pulp, but that could've gone into the bread mix as well if you make the milk beforehand. :) Thanks for the inspiration! Greetings from Stockholm!
Hi! Thanks! 😊 I’ve tried to make crackers out of the pulp, but they came out incredibly dry, even though I used olive oil, etc. At the moment, I’m throwing most of it away into my compost pile in the garden, but sometimes I use some of it in baking sweets. I make almond milk often, so I have pulp left for use often too. I do need to find some good ways to use it in recipes! 🙂
It's already really cold and icy here, we had snow last week but it didn't stick to the ground at my elevation. But it was just up above us. It is currently 27°F
Loved this video ❤ All the music was beautiful and really suited the peaceful vibe. So calm and serene. Makes me want to move to Northern Europe to live a simple, zen life. I want to try making the buckwheat bread, thank you for the recipe! Look forward to more of your videos! New subscriber 😊
Love, love, love this project, it looks great! I've nevered tried this technique but I'm really notivated to try it. Thanks. I'm subscribing too 😂😂 love from Spain ❤
Hi, I'm from Argentiba. I really love your videos. Please let me tell you that it's recommended to ferment buckwheat and others with an acid like lemon (two or three tablespoons) because of the antinutrients. As well you should never use the same water, strain it and put again. Just some healthy advice ❤️
Beautiful video!! And very moving music playing in the back. Could you tell us where we can find it? Especially the one playing in the first half of the video. I'd really really appreciate it! Thank you!!
could it be done in reverse order ? i.e. milk first and then incorporate whatever left in the cheesecloth into the bread mix, or will it be too nutty ?? ji ji ji. Thanks for the video
I don’t think it would be too nutty, but from my experience, the almond leftovers can make things quite dry. However, it’s definitely worth experimenting! :)
I ferment a lot of things and 24 hours does not sound excessive to me. Although the photography is just stunning, I would have enjoyed a better view of the finished bread. I would also love a view of the inside, but I realize cutting into the bread would simply not be a good idea with your stated schedule.
Thank you! 🙂 I haven't tried fermenting for more than 24 hours yet. I regret not cutting it open in the video, but I did take it with me the next day. Next time, I'll make sure to show you😊
Hi, beautiful video, so cozy! I am from Oregon in the US and I tried to click the Amazon link to find the tea light ceramic houses but it didn’t work probably because I’m across the sea. How would I find such a treasure? Is there a keyword in the title of it that would help me find it on Amazon?
Hi! Some of the links are from Amazon Germany because the US doesn't sell some of the items I'm sharing. However, the ceramic houses are from a brand named Ib Laursen; you could try to Google that. I do receive a small commission when people use the provided links, so I encourage using them (😜), but I also understand if they are not working.
Yes, I soaked the buckwheat kernels for 6 hours beforehand. Instead of a sourdough starter, I fermented the blended kernels for 12-24 hours before baking in the oven. 🙂
Hello, I tried your bread recipe today, but even though I baked it for about 2 hours, the inside of the bread remained very wet and the bread was very heavy. What could be the reason for this? Thank you
Hi! That's interesting. I've been making this bread for a few years now, and I've never experienced it remaining wet inside. However, this bread is indeed much heavier and denser compared to wheat sourdough bread, due to the nature of buckwheat. I actually baked the same bread in the video 'Preparing for Christmas Eve,' where I cut it open so you can see how it turned out. Similar recipes can be found on the internet, so maybe you could try those. Hope it helps! :)

Hi! I appreciate your feedback. Making videos is new to me. I personally like the music, but as soon as I get a bit better camera gear to record nature sounds, I could use them more too😊
The music is beautiful. You will never please everyone, so do what makes you happy and makes your own heart sing. People will come to view and will stay. Thank you.
I just discovered your channel this morning and I enjoyed this video very much! I am a new ‘subbie.’ You have encouraged me and inspired me for my next video. 🤎😊
5:34 Why cook with the candlelight when electricity is available. I understand a romantic candlelight dinner but cooking? This is silly and absolutely not practical. Oh and subtitles should be much, way smaller.
Hi! Actually, the main kitchen light was on, but this corner is very dark for filming, and I don't have any camera lights. As for the subtitles, I think they should be bigger for this video.
It’s so nice to see you making fermented buckwheat bread and almond milk. I, too, make all my breads and plant milks…often by candlelight. There is nothing better than homemade, healthy foods! Thank you for your calming, restful video.❤

Thank you for sharing your bread baking skill of fermented buckwheat. Best wishes with your internship. Hope to see more videos in the future.
Thanks for sharing. I'll make this bread soon!
I've made it a couple of times now. I let it ferment for 2-3 days before baking it as I like the sour taste. 😋

Do you soak your berries because you do not have a food mill? Would this have the same effect as bread from a sourdough starter?
Yes, I soaked the buckwheat kernels for 6 hours beforehand. Instead of a sourdough starter, I fermented the blended kernels for 12-24 hours before baking in the oven. 🙂
hi! what size pan did you use for your bread? thank you!
Hi!🙂 I used a pan approximately 20x11 cm in size.
