I don’t understand how some peoples brains work, (this isn’t a derogatory comment) when I read my brain is immersed in visualizing the characters and their actions, while I read the rest of the world turns off and I meld into the world of the books narrative, I couldn’t watch a video or listen to anything else because I’m so into the story world of that book, don’t get me wrong I can multitask like crazy while reading lol, make food, clean, work on something like my car etc but I don’t want to watch something intricate while reading, and most sounds are tuned out as I hear the characters voices while I read 😂 just me maybe I’m a complete weirdo

I am sure you are super careful but all it takes is one slip and.... good lord I can't imagine that splashing on your legs. I would think at least a long leather apron to protect you somewhat

What is allowed in America would definitely not be in UK & Europe….with hot sugar, lifting and carrying heavy weights….but that’s the difference we all understand and appreciate watching 👀 and learning from each others experience

Hi there, I'm also a small candy maker. I was having the same issue with specifically my blue raspberry batches getting sticky when adding the flavoring at the end. I did suspect it was the excess moisture. Do you also utilize the same method for other flavors or just the blue raspberry? Thank you!
I would love if you made a regular sour (not super sour) blue raspberry candy. The regular ones need a little bit of tartness to round out the flavor a bit.

About copper pots. Is there any concern the copper will tarnish and effect the taste of candy? Maybe the pots are utilized frequently enough that tarnish isn't a problem? Thanks for posting.
I know why she scrubbed the rim of the kettle without having to click on the explanation! I grew up with a mother who made platters of homemade candy every Christmas by the dozens and we as a family would travel all over town handing out those trays while doing our annual Christmas Caroling. You scrub down any loose sugar crystals so that you do not spoil the batch of candy. If one loose crystal falls into the liquid candy after a certain boiling point the whole batch will crystalize and not set glassy and smooth and you will either have to dump it, or recook the entire batch over again.

We don't necessarily wait to clean them as much as the candy makers are busy making candy and can only get to cleaning in between batches

The vibration of the hammer on the steel helps the candy to come off clean I think.
Letting water drip down to the surface of the boiling sugar prevents the sugar from crystallizing creating a smooth melt.
That and making sure the sugar doesn't burn to the side of the kettle

That's never been an issue and copper is used by pretty much all candy makers because of the even heating properties
