    Hi Charlie, Im a New Orleans native as well and I just wanted to say I liked the tutorial. Another way to decrease the slim from the okra is to put a little oil in a pan add the okra and put it in the oven at 400 degrees for 30-35 mins or until you check and stir the okra to so little to no slim left then add the okra to your stock. doing it that way also alleviates having to continuously stir the okra and you get more orka chucks instead of paste. Great job on the tutorial peace and love.

      +li Meyers Heyyy there my fellow New Orleans native! Haaaaa not a bad idea but I never tried the oven thing for okra! Plus i like a slight bit of the slime in mines! to be honest! lol Thanks so much for the suggestion as it will be a very long time before i ever make this dish again. Last time i made this dish before i made it for youtube was probably before katrina lol Thanks so much for commenting! :)

      lorne gant yes. I’ve tried It with frozen before. It’s takes most of the slime out of It. I like the oven option better.

    Made this tonight and appreciate the recipe. I grew a lot of okra this year and had made gumbo last week so was looking for another okra dish and ran across this. I cook many things often and especially Cajun but realized I have eaten smothered before but never tried to cook smothered anything so this dish was nice to try.
    Definitely anyone want a good dish to cook up I suggest this one. Everyone loved it and even my brother and he is picky. My wife finished cooking it and she added some chicken bullion and something else though but I am just the prep cook. She did say we will make it again. (Meaning I will)
    Also seen another recipe or 2 of your I am going to try and will leave you comments on them when I do so. Many thanks for the vid and you make good ones. Very concise and easy to understand which is actually rare.

      @@CharlieTheCookAndrews Thanks for replying. Wanted to come back and say that the next day it was even better. Your advice to make it the day before and serve it the next day was right on the money. I even thought it was better but my brother and wife ate most of it up so I only got 2 more plates of it. My brother was selfish and ate 5 plates. They are saying they want this again so will probably make it one day and wait the next to serve it.

      @@CharlieTheCookAndrews My babe bought me the ingredients to make this again so today am doing so. Usually if a new dish is added to our rotation of regualar meals it means every couple of months so she had to really enjoy it to do it this soon.

    My mama is from Mississippi and she calls this okra stew or okra soup. Also made with seafood and sometimes tomatoes. This looks amazing. Thank you !!! Love your channel.

    I can’t wait to try this! I’m a New Orleans native and no one prepared okra like my grandmother. She died without passing down her recipe and I’ve tried and failed to replicate it. I’m hoping your recipe gets me close as it looks a lot like hers!

    yes love me some smothered okra...louisiana girl here but live in Cali but i still cook like the southern girl i am... i add vinegar to mines too to cut the slime and i also add blue crab sometimes ...great job as usual.

    Thank you Charlie! I've looked for a recipe like this for years. My mother in law use to make it and taught me how to make it but over the years I had forgotten and she has passed away. The only thing she called it was Okra. So now I have a name. But your recipe is similar to hers only she used a roux. But I think you have taken me in the right direction. I'm gonna try your recipe next and I'll let you know how it came out.

    I’m really enjoying your videos. In my family, we use less okra, and we include corn and stewed tomatoes. I learned to make it with smoked sausage from my grandmother’s sister, many years ago when I was a student at Xavier, but my daddy always made it with ham. They used to call it “Creole Succotash”. It is one of my favorites! Thank you for your wonderful tutorials. You’re a very clean, old school, New Orleans cook. Many blessings to you.

      Might be a way to distinguish it from regular succotash. Ah, I forgot to say we also add Lima beans. Maybe because it has corn and Limas. In any case, I love your videos!     I made this last night following your recipe adding corn I love corn in mine but it came out great very minimal slime my husband and son who are picky ate it up thanks again I've been looking for a recipe and I found it

    I've never used this process I will next time I do my smoother okra. I usually fry the slime out then add stock but looks like we come out with the same great tasting dish. Great job

    Great job as usual, Charlie. My husband cooks okra the same way you do but he adds corn. We haven't had it in a while and you made me have a taste for it. Thank you for another great video.

    Let me tell you, I made this recipe in the Ninja foodi in 30 minutes and it was GREAT! Threw the shrimp in after releasing pressure, closed the lid and let the shrimp cook in the residual heat for about 6 minutes.Thank you for the recipe. Yes, shrimp stock is a MUST! 😊

    Good evening brotha I was passing by to tell u thanks for ur help and info, after the last convo I find me a nice pot set man, that's made with that Hard Anodized that u have, Its call the calphalon 14 piece classic cook set, bad ass cook set, now I can cook okra in all the pot lol...... man im so happy. I can't believe how good it feels, as a man, just to get some new pots. goodness!!! Brotha again thanks and from one New Orleans native to another may the lord bless u man.

    Omg this does look tasty! I'm from the New Orleans area (westbank) and I haven't had smothered okra in years. I need to make this soon. I'm a new subscriber after watching this video :D. Thanks so much Charlie. I live in TX now and there's no food spots around here who cook anything like us New Orleanians so your video is truly a life saver lol.     Charlie, grew up on this dish and loved it. The only ingredient we add that is different is a a large can of stewed tomatoes. Forgot about this dish thanks for the reminder. Will make next time it's my turn to have siblings and cousins over. Love, love, love your videos. By the way, made your shrimp creole for dinner today - family loved it. You are the best.
