Charlie you are one of the best authentic New Orleans cooks on RUclips. When I need a New Orleans based original recipe. I go to your channel you never disappoint. Thank you for sharing your amazing cooking talent and recipes with us.
Wow! I've gotten some compliments about my voice being soothing. I think with my voice combined with the quiet background makes it so soothing. I found myself going to sleep while watching my own videos! lol Thanks!
I made this and man.... CHEF Charlie Andrews is the TRUTH! THIS was soooooooo good! Any one who thumbs down can't follow direction and messed up their food. I'm not trying any other jambalaya
I was born and raised in St. Bernard, Louisiana. I just found your channel, and have watched several of your videos. You're definitely cooking authentic food. If you haven't already, I hope you write a book, especially for our younger generation. A lot of families just don't cook from scratch anymore, and it's not being passed on to our children.
Oh okay cool! i'm glad you found me! Well Thank you! Yes i could be working on that in the near future! Yes i agree with you on that. Everyone is using that boxed and package stuff. It's not really healthy for you. I know it maybe quick but not good. I stopped eating packaged stuff awhile back!
My son asked for Jambalaya and I came straight back to this video since ive never made it before. It came out so good. My son raved and about it. Easy to follow recipe and video! Thank you!!
Alan Nikolai Stratmann I'm sure that you're not the only one who feels that way. In my opinion i think the creole and cajun cuisine is one of the best out there. We can take foods from different cultures and make it our own by adding our own meat, seasonings etc to it.
CHARLIE I TRULY ADMIRE THE WAY YOU EXPLAIN YOU COOKING VIDEOS SO VERY THOROUGHLY YOU REALLY SIMPLIFY EVERYTHING THAT YOU BE DOING WITH THE FOOD, I WOULD LIKE TO TAKE THE TIME TO SAY THANK YOU FOR BEING A VERY GOOD TEACHER FOR ME CHARLIE ! OH AND BY THE WAY ILIVE IN THE BIG APPLE 🍎 NEW YORK ! I TRULY LOVE YOUR COOKING VIDEOS KEEP DOING WHAT YOU ARE DOING CHARLIE !
It really feels good knowing the people like yourself appreciate my work. I am grateful for that. I'm glad that I am able to help you and that you are learning a few things. New York Cool that's what's up! Yes I sure will keep doing what I'm doing and Thanks!
This how jambalaya is supposed to be made. My aunt used to make it for me and she made hers just like you do. Thank you so much for this recipe. Made my day! You are doing Gods work and btw I love your smile and your voice soothes me. Love your videos-- you need a show or a restaurant
Charlie you are one of best cooks I've seen on RUclips. I spent almost 6 hours looking at your videos last night. Good stuff. Like I said I love to cook but I'm not beyond learning new ways cooking and seasonings. I'm from Mobile origially, but I've been doing a lot of cooking offshore on the supply boats. Everything just looks so de.licious! Keep up the good work .
Thanks so much for the compliments Thomas! Wow you really spent that much time watching my videos. I do have quite a bit of videos now that I've been on here for 5 years now. Cool that is a good thing. I've heard about people cooking offshore. The money is good too from what I hear. Yes I sure will keep up the good work. Thanks again man!
What I love about your dishes is that your kitchen is always clean, you are very informative and detailed also. And all of the dishes are so tasteful..I always click like before I watch the video because I know it deserves it...Thanks Charlie!
Thanks so much! I try my best! Gotta keep my kitchen clean. cleaniness is important especially when it comes to your kitchen! Well I do thank you for liking before you watch the video! Very appreciative of that! You're welcome! :)
Dear chef Andrews...trying to decide if i'll do seafood boil or a nice seafood Jambalaya for the Labor day weekend to the rescue your recipe pop up!! By the way be safe from the storm pattern forming called IDA..... watching from nyc..we just had our visit from storm Henri
I made this yesterday. I couldn't find Tasso ham so I used chicken thighs. It was really so good! I made enough to share and everyone was really pleased. Thanks for sharing. I'll be doing this again.
Hello from over on the MS gulf coast. Just made a pot using your recipe and man.....THE best jambalaya I've ever had. Fixing to get my 3rd bowl. Thanks!
Chef Charlie you are so awesome with your detailed presentation. this dish is definitely going to be tried and added to my family's diet. Thank you for showing how evey layer of flavor is evolved. You sir are an artist. God bless you.
@16:35 That's the truth! Charlie, I've done about six of your recipes and you're the best! I'll be doing this one next. Keep the good cooking coming! -J in DC
Right! I'm actually pretty shocked that i made it THIS far lol Glad that everything is going well and hope my channel continues to get bigger and bigger. Thanks so much! :)
I'm soooo making this. Honestly I enjoy your tutorials more than any I've watched . You're very thorough and your editing is very good! I wish I could smell that jambalaya through the phone I know it's good!!! lol
Awesome! Well I do thank you for watching and I'm glad that you are enjoying my videos! I try my best with the editing! Thanks again! Let me know the results when you're done! :)
Charlie I'm new to your CHANNEL AND LOVING IT..Thanks for showing the ingredients needed for your RECIPES THE WAY YOU DO.....IT MAKES SOOOOO EASIER TO FOLLOW.......
Well I'm glad that you are enjoying my channel and Thanks for subscribing if you already did by now lol Yes I try to explain each recipe the best way i can!
LOL I know right but I put it like this. If it aint cooking or baking related I don't tolerate negative comments unless there was something wrong with the recipe then that's understandable.
There's the right way to make jambalaya, you're way, and then there's the way others make it....and they're wrong! You. Are. Awesome! Thanks so much for this!
Jasmine rice Charlie? Mahatma is New Orleans! LoL Dis jambalaya is the bomb Charlie!! Like momma used to make! Bet you spent time in the kitchen watching your momma Charlie! That's how I learned some good dishes myself!! We got all the best here in New Orleans Charlie!! You're the best, so calm and collective! Thanks!!
I don't think so. I grew up on it and all the people I knew cooked with it. lol I spent time watching my grandmother, aunt and uncle. I know right. I appreciate the compliments. You're welcome!
I can tell this is a favorite of yours because you usually keep your portions conservative. You piled the plate high on this dish! Looks so yummy! It's so hard to find down home Southern cooking in L.A. except for my house. LOL
Yes I actually eat it in small portions. When i do my eating taste testing demonstration the amount is more smaller than my video presentation dish! Thank you!
DANG MY MAN--You got me nibbling my fingers like a KFC fight night. I just ordered my first try at Tasso from the Cajun Grocer. As a trucker, I have eaten in every state many times but LA stole my heart and taste buds. I make my own Boudin with a NC/VA touch added to it, but you are making that food come out my computer screen. Great vid by the way. Very well presented and great instruction. Thanks Charlie ! Made my day !
Charlie, I made your Jambalaya last night, and I have to say it is better than the Chef Paul Prudhomme recipe I usually use. Delicious! I enjoy watching your passion for cooking too. Keep it up!
Thank you for this delicious recipe. I've been making Emeril's Food Network recipe for years. It's the only one I've made until today. Yours is much tastier and from the comments I can tell it's authentic. I only have one issue. Emerils' recipe has us adding the shrimp during the last 10 minutes of cooking and the shrimp comes out perfect. In your recipe is comes out rubbery. From now on I'm going to do your recipe but add the shrimp only at the end.
You're welcome! Glad that you enjoyed the video! Yes I've been getting a lot of comments about the rubbery shrimp in my seafood recipes but I've never experienced that ever! I'm working on creating new recipes with the shrimp being added at the end. Again I've never had a problem with the shrimp being rubbery but I must say my shrimp does shrink when I cook it for too long that's the only problem I've had! ☺
Oh my goodness,I most certainly want some, just the way you made it!Thanks again for teaching an old dog new tricks!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
This has to be one of the best cooking videos on the net. Great presentation, great recipe. I've always preferred Cajun jambalaya but I will make this. Tomorrow !
I`m eating a bowl of your jambalaya as I type this. It turned out Awesome ! Even though I couldn`t get shrimp with heads on, I took the shells from ``raw in shell`` shrimp. It didn`t have near the flavor, but was still better than plain water. I used ``chef Aidell`s`` brand Andouille sausage, it might not be authentic but has good flavor. Also no Tasso ham, had to use chicken. It tastes every bit as good as what I used to have on this cruise ship. mine looked like it had a lot more veggies than yours, but it tastes great, no complaints here. 1st of the month I`ll gladly make a donation, I never thought I would have good jambalaya again. Thank You Charlie, You da Man !
I can`t stop eating lol. The best part is, it filled a 5qt pan (its just me here). Can I freeze this ? It would make a Great quick meal, with fall just around the corner.
I am happy to hear that the Jambalaya turned out good despite you missing a few ingredients! If you have any Jambalaya left over all you can freeze it. Thanks so much for leaving feedback!
Thank you for the recipe I made it for my lady's meeting at church it was a hit I took an empty pan home lol once again thank you and keep those recipes coming much love to you
Yes right! The restaurants also do the same thing to the gumbo. Some of them make the chicken and sausage gumbo because it is more child friendly, It's also very easy to make and it's not expensive like the seafood gumbo! You're welcome!
Wow...thanks for another great video, Charlie! The Jambalaya looks delicious. Oh, and I love the interlude story; thanks for sharing. Looking forward to the next video, bye!
I just wanted to say I was born and raised in Louisiana and have since moved up north and have been looking for a good jambalaya recipe thats true to the south. Up here it seems they are all way too soupy so this is exactly what i was looking for. Well done and it looks great.
Awesome You've come to the right channel for a good jambalaya that is true to New Orleans! Glad that you found me! Thanks for commenting my fellow Louisiana native!
Happy to hear that you enjoyed the Jambalaya! It's always good to hear from my fellow New Orleans natives! Thanks Romaire for the compliments and for leaving feedback! Much Appreciated bro!
Charlie, This looks so good, I really like how you layered the vegetables, put some in at first, and some later so you have different textures, I learned that from Big Kevin at the New Orleans cooking school a while back. I'm gonna make some tonight, hope it turns out as good as yours.
Thanks Kevin! I try my best! Wow cool. That's a good thing! I hope that the Jambalaya turns out better than mines! Let me know the results when you're done!
Looks delicious..worst thing they could have did is create that box mix..because now when someone says jambalaya..its never what u just made..#New Orleans Native
I'm not going to lie the box mix was good when I was a teenager. I could probably still make it as good as I used to. Yes now I make my Jambalaya from scratch. I don't use the box anymore! It's been a long time since I used the box! It was great hearing from you my fellow New Orleans native! :)
Charlie, I FINALLY was able to get turkey ANDOUILLE sausages!!!!!! I made the jambalaya, again and it came out sooooo good! I am going to make your dinner roles with it, since I don't have corn bread mix. This jambalaya does not need any bread with it, but I love breads, rolls, etc...THANKS, AGAIN, CHARLIE!!!!
I am happy to hear that you found the turkey andouille sausage and that the Jambalaya turned out good! yes I agree it does not need any type of bread with it. Thanks for leaving feedback!
Hey Charlie, do you have a recipe for baked chicken or sautéed pork chops ? I love your videos. Thank you for taking your time making them I can tell you cook your food with lots of love ❤️
Heyy there! I don't have a recipe for baked chicken but I do have a recipe for baked pork chops and smothered pork chops! That video (Baked Pork chops) was one of my first releases on youtube! Thanks so much for the compliments!
Great recipe, Thanks. The only thing I've always done different is put the shrimp in after the rice is mostly cooked. I've always been concerned with over cooking the shrimp if I put it in earlier. But again, great recipe and superb delivery!
thank u so much for sharing. I love jambalaya but I only eat it when my friends uncle cooks it in a kettle pot over open flame. we do add chicken to it. but I'm very anxious to try this recipe :) keep em coming Charlie appreciate u
Excellent! You're Welcome! oh okay cool. Nothing wrong with that! If you feel anxious then don't try the recipe until you become comfortable with making it. No problem and Thanks so much for commenting! :)

Charlie Andrews not to mention all the ingredients is only like $60 but feeds a ton of ppl! Thank you man!!
You're welcome not a problem! I know right!
@charlieandrews I think restaurants use Chicken because of customers who dont eat Pork. #Jambalaya my favrotie ..thx for sharing
Yes right! The restaurants also do the same thing to the gumbo. Some of them make the chicken and sausage gumbo because it is more child friendly, It's also very easy to make and it's not expensive like the seafood gumbo! You're welcome!
Oh my heavenly stars I am loving this recipe right now. I hope I don't mess it up when I make it.Thanks for sharing God bless you.

WOW, this guy can cook
Thanks so much for the compliments!
Your recipes are great, I pray God blesses all your endeavors.
Thanks so much! Appreciate it! ☺
If I am unable to use shrimp, can I substitute chicken stock and keep the recipe the same (just without the shrimp).
Yes! Just use chicken and sausage!
The Jambalaya recipe you've made looks so delicious, Charlie. I enjoy watching you prepare, cook & taste it. 😁👍🏿
I appreciate the compliments. Thanks!
@@CharlieTheCookAndrews No problem at all.
I made it for Christmas and it was SOOOOO good. I threw in extra cayenne pepper ❤
Awesome! I am glad the Jambalaya turned out good! Extra cayenne! You must like your Jambalaya spicy! That's a good thing. Thanks for leaving feedback!
Great recipe Charlie! Made this last night, really enjoyed it. Thanks! From a fellow New Orleans native.
Happy to hear that you enjoyed the Jambalaya! It's always good to hear from my fellow New Orleans natives! Thanks Romaire for the compliments and for leaving feedback! Much Appreciated bro!
I'm introducing your Creole jambalaya to the table this Thanksgiving. I'm excited.
tkshaw12 I know you are! Enjoy!!!!
Mmmm mmmm mmm. Another awesome creation. Thanks Charlie
You're welcome Joe! Thanks a lot!
This is a great recipe and I'm going to try it, but for me, all of the pork will have to be replaced with turkey substitutes.
Thanks a lot for the compliments! Not a problem! Let me know how it turns out! :)
Bonnie Cotman Yes, I agree: pork is a No-No! Turkey and veal are great substitutes.
SunMoon Stars where did you find it at I can't find any to save my wants lol

Hey Charlie, do you have a recipe for baked chicken or sautéed pork chops ? I love your videos. Thank you for taking your time making them I can tell you cook your food with lots of love ❤️
Heyy there! I don't have a recipe for baked chicken but I do have a recipe for baked pork chops and smothered pork chops! That video (Baked Pork chops) was one of my first releases on youtube! Thanks so much for the compliments!
Coming check out your food 😍😩 I'm a hour away
Wow you're not far away! Awesome but I gotta make sure I cook something lol
Great recipe, Thanks.
The only thing I've always done different is put the shrimp in after the rice is mostly cooked.
I've always been concerned with over cooking the shrimp if I put it in earlier.
But again, great recipe and superb delivery!
Thanks for the compliments! The method you did I tried that with my chicken and sausage Jambalaya video.
That just looks so good! Jambalaya from the home of jambalaya, I know this is the real deal, thank you, Charlie.
Thanks so much! Yes it is the real deal!
