How to make New Orleans Yaka-mein (2022 version)

  • New Orleans native Charlie Andrews demonstrates on how to make New Orleans Yaka-mein. It contains Beef chuck which is cut into strips and is used to make homemade beef stock. Spaghetti noodles is also added, and it's garnished with boiled eggs and chopped green onions. This recipe serves 10 or more people. Not only it is Old sober and a cure for hangovers, but it is absolutely delicious. Great for fall and winter weather. Hope you all will give this New Orleans classic dish a try.

    From Baltimore and my grandma made this….. her dad was an alcoholic and “taught” her 😅….. it wasn’t until the internet was a thing that we found out it wasn’t made up 😂

    This is why New Orleans is on my bucket list. That city has so many different culinary influences as a result of its rich historic background. I'm grateful that we have natives there such as Charlie to expose this to those of us who can't quite make it there physically just yet to bask in the "Nawlins" experience.....     My family have been making and eating this for over 50 years. In Hampton Roads Va we add vinegar, ketchup and soy sauce with chopped onion (raw and cooked). We also use chicken or pork or beef.

      In my parents day they added a little bacon grease too! As a teenager, I could buy a box of yock for .50!! Good eating for almost free.

    Every ingredient was perfect. However, I prefer my spaghetti snapped into smaller bite-sized portions or substituted with starchy rice. My way would not be authentic, but then I never was a fan of soupy spaghetti🤦🏾‍♂️.

    We add ketchup and hot sauce in New Orleans!!!!!! You must be a downtown resident. (To be honest I thought the ketchup ideal came from the jail house) R.I.P to my uncle had one of the longest black owned restaurants in the city! (N.Claiborne & Saint Philip) y'all must try the ketchup and hot sauce you won't ever eat it plain

    Oh, also!! I'm at the part where you strained the vegetables. That's so funny because the recipe I used actually called for it to remain in the broth, but mine were chopped up a lot more finely. Even so, I ended up straining the remaining broth out for the tupperware I was storing left overs in and got rid of all of the vegetables because I hated the texture and it didn't seem right. Glad to see you call for discarding the vegetables too!

    Maaaaaan Charlie! Bruh I had to cook this using your recipe. The cooking the meat down was brilliant. Only thing I do differently is cooked the noodles in the broth. Have you tried that before? Whats your thoughts?

    Hi Charlie in the South East, Virginia for one,we call it “yock or yock-a-mein”. Rarely . We don’t normally see it include boiled eggs, but it’s delicious.😋😛😝
