    Charlie I am from New Orleans and baby I live in Houston where they think they know what creole cooking is. When I started watching your channel I knew I just blessed my kitchen. Yasssssss, everything sounds right and I love all of your recipes Especially that shrimp stock. You're the best!!!!! Book? Restaurant? Aprons? Seasonings? You need a brand ... thanks Charlie!!!!

      Charlie I was born and raised in New Orleans. I've been in San Antonio since Katrina. I never made stocks before I saw you do it! It makes such a difference especially in my gumbo. You are an amazing cook.

    I'm from Belfast in Great Britain and I followed this recipe exactly and guess what? It was magnificent, so awesome, my family loved it, although I felt it wise to make theirs with no cayenne pepper, just in case!
    But I made mine with cayenne pepper and mmm, mmmmm...!!!

    I just saw this from two years ago. I have to say .. this is one of the best Shrimp Creole recipes I have seen. The fresh spices you use with the dry , and the shrimp stock ..!!! Wonderful Thank you

    Charlie You need a restaurant chile! I just finished making this and bio o boi did it taste delicious. If you follow all the instructions, people will think you are real creole. A couple of the leaves I did not find in the grocery so I improvised and used the spices in a container. Charlie you provide the best instructions cooking. Some people show you how to cook food with bland ingredient info. Nope Not you! You going to make me start singing like that man in the Pattie Labelle Pie Video. Instead, Uncle Charlie we need to set up a date night and just discuss food! MWAHHH. I love me some Charlie Andrews now!

    It looks delicious. All I have to do is look at it and my mouth starts to water. I make it occasionally throughout the year, but come August and Sept. when the tomatoes ripen in the garden, then I make a big pot of it every week, peeling and cooking down the tomatoes.
    There is no better shrimp than the Gulf Browns and nothing makes a richer seafood stock than the fat in the shrimp heads. As a Yankee, the first time I tried Cajun/creole was 1980, when a gal a work, who was originally from LA., brought in some homemade shrimp creole for our lunch, I immediately fell in love (with the food that is). I bought a copy of Paul Prudhomme's book Louisiana Kitchen came out in the 80s and is still one of my favorite cuisines.

    Just finished making this and it’s so bomb even though I had to improvise a little.
    I couldn’t make my own shrimp stock being that I used headless, peeled, deveined shrimp. Therefore, I dissolved a shrimp bouillon in two cups of water and added a tablespoon of Louisiana’s Crawfish, Crab and Shrimp Boil (powder).
    I didn’t have any Paul Prudhomme’s seafood seasoning and was planning on using some Old Bay instead only to realize I didn’t have any. So, I added a little more Louisiana’s CCS Boil where you used Paul Prudhomme’s seafood seasoning.
    I also forgot to add my Bay leaves.
    I can’t wait to make it again once I get my hand on all of the products even though it’s bomb as is.

    Hi, Mister Andrews, and thankyou for your reply. Maybe your community has Creole restaurants up and down the main road, but the closest Creole restaurant to the community where I live is a whole 35 miles away. Your video saved me from having to drive that distance both ways and pay for the overhead at a restaurant. You are a true friend. If it's not too much trouble, won't you please pet D.J. and tell him what a cute doggy he is?

    I just made this and followed the instructions exactly and boy oh boy did my family LOVE THIS!!!!! It was sooooooo good and the I used fresh thyme, fresh basil, and fresh bay leaves and it just really made my house smell soooooo good! Thank you for sharing this recipe!!! It's a winner for sure

    Sweet Geezuz mr Charlie ! I used to live in Maurice( just south of Anbeville) and was a little homesick the other day...made this exact except for I used 16 oz. if the shrimp stock and omg. Thank you. Amazing!!

It is an Arabic Restaurant. Do you know I drive from Memphis, TN just to eat there? Mostly on the weekends. So, you know I will do the same for yours!:)

    I made this again tonight. I live in Louisiana and have had many variations of shrimp creole. This is hands down the best. I Substituted cheese grits for the rice this time. Charlie, thank you, my family loves your recipes and you do a great job sharing them!

    I made this tonight, using your recipe, and it was outstanding. I did subsitue heirloom tomatoes, and put in a tablespoon of sugar, because my wife has a problem, with acidity. The fresh tomatoes, and sugar, prevents a negative reaction. keep on, keeping on. love your channel.

    This looks killer good. I will have to tone down the spices because I am a wimp compared to native New Orleans folks.     Made this today for my Christmas Eve dinner and it turned out great! I added a bit more spices and left out the crawfish boil only because I forgot it. it was a huge hit everybody loves it! 👍🏾 now I’m about to make one of your cakes.

    There are so many really smart techniques in this video. Reserving some of the vegetables gives it some variation in texture. Also, using unsalted ingredients is smart because you have more control over sodium.

      Oh yeah, I did this recipe to a T. My family loved it. I served it up in a big bowl. I realized one of the most important steps. Don’t forget to turn off the flame!!! The remainder was well...done. Came out great otherwise. Your presentation is great. Clean, undistracted, and simple. Creole cooking is my favorite. Keep it up.

      demartorris Yes it is GOOD!!!! Even though in creole dishes such as this one, No Stocks or roux is supposed to be added BUT for flavor I just made the shrimp stock and added. Sometimes the original way doesn't always work. You would add your own lil spice or kik to it to make it your own.

    My mother used to make this all the time...shes from Savannah but she made this twice a week over some rice. I always missed a ingredient but now I can see it clearly. I haven't had this from moms pot since i was about 8,9 years old. And she always said U MUST USE FRESH SHRIMP

      I don't get to eat it often either, shrimp up here in CT- not frozen with heads and shells runs about 22 a pound! Thou I do know a place for fried whole clams that is worth the price!
      I was paying homage to Margret Hamilton about the "Little Dog too"!

    I love your cooking and your approach. We were in NOLA a few years ago, ate at Mother's for breakfast, at the Hotel (can't remember the name but I loved the eggs benedict with a crab cake in place of the English muffin, which was so delicious) and a buffet where one of John Besh's restaurants was. I am going to make some of your recipes!!! You have such a talent for cooking and I just love your demeanor. I am a huge fan!!!

    that looks so good I'm going to try and make some. love the way you reduce your stock to concentrate the flavors. I recently had some sea food Creole and been looking at several recipes and yours looks to be the best. Keep feeding some New Orleans knowledge to those of us who do not leave our have been there.     Outstanding! I made Shrimp Creole today along with some fried pork chops. The combination was a hit with my son. I need to increase my physical activity, so I can burn off those additional calories. Keep up the good work!

    I love your way it's the way I make mine I'm from New Orleans but I got to take a picture of this stuff for people that don't know how to make shrimp stock or they squeamish about boiling the hales they sell this stuff in some stores it kind of gives off the same flavor but there's nothing like boiling the Hales

    This recipe may be 1-pot but it doesn't appear to be quick and easy. Then again, when you're adding love to your cuisine, nothing about love is quick and easy. I am going to try this one for myself. Wish me luck.
