Charlie I am from New Orleans and baby I live in Houston where they think they know what creole cooking is. When I started watching your channel I knew I just blessed my kitchen. Yasssssss, everything sounds right and I love all of your recipes Especially that shrimp stock. You're the best!!!!! Book? Restaurant? Aprons? Seasonings? You need a brand ... thanks Charlie!!!!
Thank you my fellow New Orleans native! 🙂 I'm glad that you are enjoying my channel! Yes the shrimp stock is an amazing recipe! It gives food an amazing flavor! No book or restaurant at the moment, just youtube. Yes i am working on doing a brand. Just have to get more established first lol You're welcome! 🙂
Charlie I was born and raised in New Orleans. I've been in San Antonio since Katrina. I never made stocks before I saw you do it! It makes such a difference especially in my gumbo. You are an amazing cook. Where can I purchase that red apron?😅
I'm from Belfast in Great Britain and I followed this recipe exactly and guess what? It was magnificent, so awesome, my family loved it, although I felt it wise to make theirs with no cayenne pepper, just in case! But I made mine with cayenne pepper and mmm, mmmmm...!!! Thank you for sharing this fantastic recipe my friend.
Awesome man! Wow Belfast Great Britain! That's amazing being that far away watching my videos! You're welcome. Glad I was able to help. Thanks so much for leaving feedback!
That's awesome. Happy to hear that the Shrimp creole was successful and that you enjoyed it. You're welcome, not a problem!! I'll be looking forward to it. lol ha ha Thanks for leaving feedback!
I just saw this from two years ago. I have to say .. this is one of the best Shrimp Creole recipes I have seen. The fresh spices you use with the dry , and the shrimp stock ..!!! Wonderful Thank you
Charlie You need a restaurant chile! I just finished making this and bio o boi did it taste delicious. If you follow all the instructions, people will think you are real creole. A couple of the leaves I did not find in the grocery so I improvised and used the spices in a container. Charlie you provide the best instructions cooking. Some people show you how to cook food with bland ingredient info. Nope Not you! You going to make me start singing like that man in the Pattie Labelle Pie Video. Instead, Uncle Charlie we need to set up a date night and just discuss food! MWAHHH. I love me some Charlie Andrews now!
Great! I am happy to hear that the shrimp creole turned out good! I do the best I can on my videos! You are funny with the patti labelle singing compliment lol Thanks so much for the compliments and for leaving feedback!
It looks delicious. All I have to do is look at it and my mouth starts to water. I make it occasionally throughout the year, but come August and Sept. when the tomatoes ripen in the garden, then I make a big pot of it every week, peeling and cooking down the tomatoes. There is no better shrimp than the Gulf Browns and nothing makes a richer seafood stock than the fat in the shrimp heads. As a Yankee, the first time I tried Cajun/creole was 1980, when a gal a work, who was originally from LA., brought in some homemade shrimp creole for our lunch, I immediately fell in love (with the food that is). I bought a copy of Paul Prudhomme's book Louisiana Kitchen came out in the 80s and is still one of my favorite cuisines.
I just made the shrimp creole. I followed your recipe, and it came out great. I am a new subscriber, and I look forward to trying some of your other recipes. Thanks for sharing your talent with us.
+Steven Bkack Awesome! Happy that it came out good! Thank you so much for subscribing and yes try out some more of my recipes and be sure to let me know the results of those recipes as well! You're Welcome! I appreciate you! :)
I just made this for my husband who had a bad day and it perked him up! It was so good and this place smells fantastic! Thank you!! The rest of our shrimp my husband picked up in Corpus Christi months ago went out with a huge bang!!
Man, you are awesome!!! Ive always said, I wanted to vacay in new orleans just to eat at different places. Im definately going to try this next week. I can smell the love all the way from New Jersey. Thanks for posting Charlie!! Ive subscribed & ill definately be up ALL night watching your vids. Youre amazing.
Just finished making this and it’s so bomb even though I had to improvise a little. I couldn’t make my own shrimp stock being that I used headless, peeled, deveined shrimp. Therefore, I dissolved a shrimp bouillon in two cups of water and added a tablespoon of Louisiana’s Crawfish, Crab and Shrimp Boil (powder). I didn’t have any Paul Prudhomme’s seafood seasoning and was planning on using some Old Bay instead only to realize I didn’t have any. So, I added a little more Louisiana’s CCS Boil where you used Paul Prudhomme’s seafood seasoning. I also forgot to add my Bay leaves. I can’t wait to make it again once I get my hand on all of the products even though it’s bomb as is.
Great! I am happy to hear that the shrimp creole turned out good despite you missing some of the ingredients. I like the fact that you substituted the ingredients with other ingredients that would actually go well with the dish. Thanks for leaving feedback!
Hi, Mister Andrews, and thankyou for your reply. Maybe your community has Creole restaurants up and down the main road, but the closest Creole restaurant to the community where I live is a whole 35 miles away. Your video saved me from having to drive that distance both ways and pay for the overhead at a restaurant. You are a true friend. If it's not too much trouble, won't you please pet D.J. and tell him what a cute doggy he is?
I just made this and followed the instructions exactly and boy oh boy did my family LOVE THIS!!!!! It was sooooooo good and the I used fresh thyme, fresh basil, and fresh bay leaves and it just really made my house smell soooooo good! Thank you for sharing this recipe!!! It's a winner for sure
Awesome. I am happy to hear that the Shrimp creole turned out good. I believe you it does make your whole house smell good! Glad I was able to help. Thanks for leaving feedback!
Sweet Geezuz mr Charlie ! I used to live in Maurice( just south of Anbeville) and was a little homesick the other day...made this exact except for I used 16 oz. if the shrimp stock and omg. Thank you. Amazing!! It was sooo good!!
No problem! My love comes straight from Memphis, TN. You are not too far from me so when you open your restaurant, just shoot me a message. O, have you tried Mona's Café? It is an Arabic Restaurant. Do you know I drive from Memphis, TN just to eat there? Mostly on the weekends. So, you know I will do the same for yours!:)
Okay cool. Yes I'll let you know if i actually start a restaurant. No I've never tried Mona's cafe! Sounds different! Wow I didn't know that. You really must love New Orleans food to drive that far lol Well it's really not that far lol At least I know I will have someone who would do the same if i had an actual restaurant. Thanks!
You are the best. My son made this for me today after he seen me watching the video and writing down all the ingredients and we watched ur video and he made it. I suoervised. But your an awesome teacher. U need to hold classes. And when im in Nola i will take one of them classes. Best lunch i have had in ages. Thank you
Thanks so much for the compliments Georgine! I'm happy to hear that the shrimp creole turned out good! Sounds like your son did an awesome job! Thanks for leaving feedback! As far as having classes goes I think I'll leave that to the culinary professors. :)
Man, Charlie, I'm going to be the talk of the town after I cook the GUMBO and the SHRIMP CREOLE. Thanks so much. The best part is when you sit down to eat. Love It...!!!!
+5THEGIRLZ Thank you! Yes it was very good! I work hard on those step by step instructions! It's a lot of work and I'm happy that you appreciate that! You're Welcome! Thanks so much for commenting!
Say Bruh! You got to be the cleanest Chef I have ever seen. You have to have the best cooking videos I've ever seen. Keep it up! God bless LiL Brother.
Yes I do get that alot. I keep my kitchen as clean as possible! :) When it comes to cooking it all starts with a CLEAN kitchen. :) Thank you sir. I appreciate that! :)
I made this again tonight. I live in Louisiana and have had many variations of shrimp creole. This is hands down the best. I Substituted cheese grits for the rice this time. Charlie, thank you, my family loves your recipes and you do a great job sharing them!
I made this tonight, using your recipe, and it was outstanding. I did subsitue heirloom tomatoes, and put in a tablespoon of sugar, because my wife has a problem, with acidity. The fresh tomatoes, and sugar, prevents a negative reaction. keep on, keeping on. love your channel.
Awesome! Good to hear that the shrimp creole turned out good! The suagr cuts the acid. not sure if I added in there or not! Happy to hear that you are enjoying my channel! Thanks for leaving feedback! :)
NEW ORLEANS in my favorite place in the world. I been everywhere but there is no place like Nola and the food omg! Your recipe took me back there in a second. If i could hug you thru you tube i would. You have a great talent sir, keep it up.
Wow that is Awesome! I'm sure that you are not the only one! Yes the food is really good! New Orleans food in my opinion is one of a kind. It is some of best food in the world. Thanks so much for the compliments I really appreciate it :)
OMG! Made this last night and it is the bomb! I was so wanting to make a rue but didn’t and followed you recipe exactly and I am glad I did...My family loves it... Thanks!
This looks killer good. I will have to tone down the spices because I am a wimp compared to native New Orleans folks. I fully appreciate your attention to cleanliness, organization, details, & preciseness in your instructions. I like how you do not assume that your viewers know what to do or how.
Made this today for my Christmas Eve dinner and it turned out great! I added a bit more spices and left out the crawfish boil only because I forgot it. it was a huge hit everybody loves it! 👍🏾 now I’m about to make one of your cakes.
Awesome Kimberly! I am happy to hear that the Shrimp creole turned out good and that everyone enjoyed it. Let me know how the cakes turns out. Thanks for leaving feedback!
There are so many really smart techniques in this video. Reserving some of the vegetables gives it some variation in texture. Also, using unsalted ingredients is smart because you have more control over sodium.
Oh yeah, I did this recipe to a T. My family loved it. I served it up in a big bowl. I realized one of the most important steps. Don’t forget to turn off the flame!!! The remainder was well...done. Came out great otherwise. Your presentation is great. Clean, undistracted, and simple. Creole cooking is my favorite. Keep it up.
Awesome! I am happy to hear that the Shrimp creole was a success! I appreciate the compliments. I sure will keep doing what I'm doing. Thanks for leaving feedback!
Hello again Charlie, I'm going to make this tonight! Please say Hi to DJ and bring him by so we can see him again! So cute. Thanks for all the years of great recipes, you are my favorite native New Orleans chef! XOXO
demartorris Yes it is GOOD!!!! Even though in creole dishes such as this one, No Stocks or roux is supposed to be added BUT for flavor I just made the shrimp stock and added. Sometimes the original way doesn't always work. You would add your own lil spice or kik to it to make it your own.
I’m making a pot of shrimp creole tomorrow evening, we got family coming over and I’m using my family recipe I always use, but I said let me see how Charlie makes his. It’s pretty close to the way I make it and it looks delicious. Anyway, just stopping by showing some love from one native New Orleanian to another. Be cool, Charlie 😎 😎 😎
My mother used to make this all the time...shes from Savannah but she made this twice a week over some rice. I always missed a ingredient but now I can see it clearly. I haven't had this from moms pot since i was about 8,9 years old. And she always said U MUST USE FRESH SHRIMP
im from pa and ventured out to tn and had this shrimp and cheddar grits at a place called crawdaddys and ever since ive tasted this ive been on the hunt for a good recipe and i think i came across a good with yours ! love your energy too i need to make this !
I like it, this just showed up as something I might like!!! Attention to detail and just plain enjoyment of it! And they there is your little dog too! Oh and Shrimp Creole is one of my favorite things!
+George Semel Thank you! Glad you enjoyed the video! Yes let's not forget about Dj! Oh yeah cool. Shrimp creole is one of my favorites too. I just don't cook it as much! Thank you so much for commenting I really appreciate it! :)
I don't get to eat it often either, shrimp up here in CT- not frozen with heads and shells runs about 22 a pound! Thou I do know a place for fried whole clams that is worth the price! I was paying homage to Margret Hamilton about the "Little Dog too"!
+George Semel Wow 22 dollars a pound! That's extremely expensive OMG. Yes i can see why you don't eat it often Yikes lol Nah I don't know of a place that sells whole clams! Ohh okay cool! Thanks so much for commenting!
Hello Charlie thank you for sharing .Your shrimp creole recipe. Looks delicious doesn't take long to make. Got to make me a pot of this Creole. First time I've seen your little dog DJ. He is so cute. Both of you have a great day.
I love your cooking and your approach. We were in NOLA a few years ago, ate at Mother's for breakfast, at the Hotel (can't remember the name but I loved the eggs benedict with a crab cake in place of the English muffin, which was so delicious) and a buffet where one of John Besh's restaurants was. I am going to make some of your recipes!!! You have such a talent for cooking and I just love your demeanor. I am a huge fan!!!
Happy to hear that you enjoy my channel. Wow, that is awesome and interesting at the same time. I appreciate the compliments and you for sharing your story. Thanks!
that looks so good I'm going to try and make some. love the way you reduce your stock to concentrate the flavors. I recently had some sea food Creole and been looking at several recipes and yours looks to be the best. Keep feeding some New Orleans knowledge to those of us who do not leave our have been there. Thank You Charlie
Thanks! Oh yeah absolutely. Stock=flavor. I can't make a dish at least without explaining the history behind it! You're Welcome and Thanks for commenting! :)
Outstanding! I made Shrimp Creole today along with some fried pork chops. The combination was a hit with my son. I need to increase my physical activity, so I can burn off those additional calories. Keep up the good work!
New Subscriber! So happy to come across your channel. Love your calm demeanor. Gonna make this recipe this weekend. Can’t wait to see my results. Thanks Charlie. 💕 You’re fabulous.
I love your way it's the way I make mine I'm from New Orleans but I got to take a picture of this stuff for people that don't know how to make shrimp stock or they squeamish about boiling the hales they sell this stuff in some stores it kind of gives off the same flavor but there's nothing like boiling the Hales
Hello John. Happy to hear that the Shrimp creole was a success and that you enjoyed it. You're welcome, not a problem. Glad I was able to help. Thanks for leaving feedback!
This recipe may be 1-pot but it doesn't appear to be quick and easy. Then again, when you're adding love to your cuisine, nothing about love is quick and easy. I am going to try this one for myself. Wish me luck.
Recipes from scratch are a labor of love. No such thing as quick and easy when it comes to cooking from scratch. You gotta put in the work and it'll be well worth it in the end. Good luck! i know you're going to make me proud! :) Let me know the results when you're done!
Got my THANKSGIVING meal already easy n simple just for maybe 4 people, shrimp creole/rice ..cabbage/ pigtails/corn bread ,yams n they might wont to be Grateful I'm cookin ......Thanks Charlie was thinkin wht to do so I'll be the one enjoying it more 😉 N NO!! That is awesome and good to hear. Hope the Shrimp creole was successful. Thanks so much for leaving feedback my fellow New Orleans native!

My mother used to make this all the time...shes from Savannah but she made this twice a week over some rice. I always missed a ingredient but now I can see it clearly. I haven't had this from moms pot since i was about 8,9 years old. And she always said U MUST USE FRESH SHRIMP
That is good to hear! Oh yeah you have to use fresh shrimp!
Wow Charlie. The level of flavor in your Creole, looks incredible. I'm putting Louisiana on my bucket list. Thanks for a great video.

I love your way it's the way I make mine I'm from New Orleans but I got to take a picture of this stuff for people that don't know how to make shrimp stock or they squeamish about boiling the hales they sell this stuff in some stores it kind of gives off the same flavor but there's nothing like boiling the Hales

It looks delicious. I have not tried Cooking Jasmine Rice. I will use your method but I don’t use vegetable oil ever. Thank you.
Thanks. You can use any other type of oil if you like.
