- The main ingredient in this fast, delicious and versatile curry, is Coconut milk with chunks of veggies and chicken or fish slow cooked over stove top. It is very aromatic, sweet and savory and goes well with steaming rice. You can totally skip chicken and increase the quantity of vegetables. You can add any vegetables like, carrots, spinach, mushrooms etc.

I love this recipe and it comes out brilliantly every time. I tend to use whatever veggie I have lurking in the darker corners of my kitchen. Always a favourite at dinner time! Thank you!
Step 1:
15 oz Coconut Milk
1 Tablespoon Red Curry Paste
1 Tablespoon of fish sauce
Stir together
Step 2:
2-3 Tablespoons of Olive oil in skillet
Add boneless chicken breast
Add 1 teaspoon of crushed black pepper
Cook for 5-6 min. until it’s tender
Remove from skillet into plate
Step 3:
Add tablespoon of oil and sauté 1 teaspoon of ginger and 1 teaspoon of garlic for 1 min.
Add 1 finely chopped onion and sauté
Then add veggies to sauté like broccoli, red bell pepper and yellow bell pepper cut into slices
Cover and cook for 2-3 min
Step 4:
Add chicken with it’s juice
Mix well and cook for 2 min with cover on
Finally:
Add the prepared Thai gravy into this
Mix well and add 1 Teaspoon of Red Chili powder
Mix and let it boil
Add 1 teaspoon of curry powder
mix and let it simmer for 5 min
Add copped cilantro and mix

This was the best tasting dish I have ever made. I made this yesterday for all of my in laws for a party we were having. Instead of chicken, I put in shrimp since I was in charge of doing all fish dishes. It was a hit!
This is my 4th attempt at trying a red curry recipe, and it finally worked! I substituted the chicken with shrimp, delicious!:)

I tried this OMG THANK YOU SOOO MUCH for simplifying! I used eggplant instead of chicken and I added spinach, red peppers and 3 serrano peppers in addition to 3 equal packets. I was a little nervous but after I combined everything the smell was awesome and the taste was unbelievable!!

Since I was accustomed to this style of dish already, I had an expectation of a more lively flavour profile, so I added sweet, 3/4 teaspoon of salt (yes, because the salt brings out all the flavour magnificently), and a teaspoon of crushed red chilis. Incredible. I'll be making this on a regular basis. Served over plain,non-salted, jasmine rice. OMG.

Really good and I got compliments that it was restaurant quality. I did modifications. I used 3 Tbsp red curry paste (instead of 1 Tbsp), 2 Tbsp fish sauce (instead of 1 Tbsp), 1 tsp granulated white sugar, and 1 lb steamed broccoli (instead of a few florets). For my chicken breast, bell pepper, onion, carrot and frozen broccoli, I think they were on the big size because I got them from Sam's Club. As a result, I had too much solid ingredients for the amount of sauce. Next time, I will double the sauce ingredients.

Just delicious!! We made up our favorite garam masala mix to add at the end and that gave it a real rev. Ate the curry with saffron rice.

@@biggiesmalls8294 You could, but not quite as much, since it's more watery than coconut milk, and also use milk with a high fat content, or maybe try mixing it with some heavy cream. But really, coconut milk is not that hard to get, most eshops sell it for a pretty good price, and if you don't have some of the ingredients you can just buy it all at once and save money on shipping.

I added chopped lemongrass -(removed it after sauté) lime peel -lime juice and used mushrooms and peppers-delicious and you can use different vegetables and meat if that’s what you eat. Thank you 😊

After the chicken has been placed in the pan, it may ONLY be distributed. Don't start stirring right away, as this will quickly cool the pan and the chicken will cook in its own juices. Then it no longer frys. So you get no roasted aromas. This negative effect is supported by the fact that too much meat was put in at once for the size of the pan. Otherwise it looks really tasty. Please take this as well-intentioned criticism.

Looks yummy though how to make Thai Gravy to our in it
I made this yesterday. I made a few adjustments but it turned out fabulous. Needed a little dash of salt on my dish and the flavors just popped. Thank you for this recipe! The only thing I did different was I only used the yellow & orange bell peppers and I discovered at the end I didn't have the curry so I couldn't use that. Also, I snuck in a dash of cayenne pepper to make sure it was spicy 😄 (next time I want to add mushrooms but I hope that won't ruin your recipe)

Because this is obviously done by a novice !! Curry paste needs to be pan fried first to bring out the protein of the paste. Plus this recipe had missed major Thai ingredients. Just coconut milk and black pepper won't cut it.

add more chili’s (I love fresh for better taste but powder is fine) and a bit more paste. If you want it REALLY spicy adding just another spoon of paste won’t get you the whole way

I think just replacing the red curry paste with green one might do the trick
I have to make my curry paste from scratch because store-bought brands have too much Chili Peppers in it, so I only make thai dishes occasionally because it's very time-consuming. Korean dishes are also a problem...too many chillies.

You sure can but apparently fish sauce is an integral part of every Thai food veg or non veg. So if one is a veggie and has been to Thailand n ordered for this stuff, don’t expect that it comes without fish sauce. FYI for Indian vegetarians- any main course that u order out there, even if it doesn’t have fish sauce, it would anyways have non veg stock (which is why it’s so delicious) ... in the end u are not eating PURE VEG as termed in our India.
