I made this last night. All I can say is, "Oh my God, I never have to go to a Thai restaurant again!" The dish was out-of-this-world delicious! I made this recipe tonight but I left out the palm sugar, limes leaves and long pepper. I used a red bell pepper in place of the long pepper, and it came out absolutely wonderful. So many flavors perfectly equal to each other. My husband loved it too. Great recipe!

I doubled the recipe and used yellow curry paste (8 tbsp) because I forgot to pick up red and it still turned out great. Both times with red and yellow paste it turned out better than some restaurants that I've been to. So grateful for this video thank you!
Honestly just made this for myself and it was sooooo amazing! Best at home curry I have made for myself by far! I couldn’t find lime leaves at my grocery store so I used fermented black limes from the Middle East instead and I think it worked really well. I left them to simmer with the curry then take them out just before I added my veggies. So blown away that a few simple tricks made store bought curry take like restaurant quality! If you’re debating on making this for yourself, don’t wait! This is an amazing recipe!

Okay so I made this curry two nights ago, and no joke, my parents (who aren’t on a plant based diet) loved it! They were questioning whether this had chicken or not haha. This is super good, and for being the only plant based eater in the house, it’s lasted me around 4-5 meals! I made this recipe today. It was the best Red curry we had. I used fresh thai red chillies. Thank you. Also I found those long peppers are sold as Shepherd pepper in my local asian store.
I made a somewhat larger batch and I added a bunch more mushrooms, because why not, and it's extremely good. My local Southeast Asian shop (well, supermarket) has that UHT coconut milk and I've been using it by preference for a while, mostly because there are convenient 6-packs of little boxes. Also I used Panang Curry paste instead of plain red; in the brand I buy they seem to be very similar and I slightly prefer the Panang (and it's slightly less salty). Yum, highly recommended.
As I'm home bound with lots of free time these days, I have started to try and learn how to make Thai food. Today I made a acorn squash green curry with chicken, onions, long red pepper and it was great for a first attempt. But I want to make some tofu dishes, and this dish will be my next adventure. It's amazing, using coconut milk and curry as a starting point, you can do so much. I will do my best to pick up on Pailin's little pointers and hope to learn how to cook many more Thai recipes. I've always loved Thai food, and it is so fun to be able to make it myself (yummy too). Thanks for sharing with us your cooking secrets Pailin!
Pai is sooo smart and funny! Watching her videos over the years. I just made this, and I doubled the recipe (10 tbsp of curry paste 🥵) . I accidentally did 2 tbsp of golden mountain (original recipe calls 1/2 tbsp = double should be 1 tbsp) , but it still came out really well. The chewy shiitake mushrooms .... yum!!! The only thing Ingredient I was missing.....and I need to find a Thai market soon, or else I’ll do something crazy like buy a kaffir lime tree. It’s so hard to find. (I just realized I’m also making her agar fruit jello this weekend!)... her cooking is starting to become part of my lifestyle as well ☺️

Thanks for sharing. I always struggle with non-meat based dishes. Vegetables taste great, but sometimes it's hard to combine them in a way that makes them savory/hearty that pleases the whole family. I think this one is a winner.
I love that you explain so much about ingredients and cooking methods in your videos. I've honestly learned a lot about cooking from watching your videos -- not just particular recipes, but broad knowledge like how to prep different ingredients, what kind of heat to use for different types of ingredients, how to combine flavors, etc. I'm not a vegetarian but I thought what you said about glutamate was interesting and made me google glutamate, and gave me something to keep in mind, haha.
Here in Germany that kind of pepper is really common and called "Spitzpaprika" literally "pointed pepper" :) Also that curry looks amazing as always! Thank you for sharing :)
Oh hey, also: anybody who's all-aboard the Tomato Paste train, if you want to go completely nuts find some Turkish "hot pepper paste" (it is not "hot"). A mix of tomato paste and that pepper paste really adds depth to almost anything; the pepper paste seems more strongly flavored when you sniff it than it ends up being in finished recipes.
This looks super delicious! I have always had doubts about putting tomato paste in Asian curry because I feel like tomatoes are for Mediterranean dishes. I have also had a lot of disappointing results with vegan curries. But your video has given me faith again. I can't thank you enough Pai!

I just made this and it is one of the most delicious things I’ve ever tasted. Next time I’m gonna try it with sweet potato instead of tofu to switch it up!
Just made it, but without tomato paste . Amazing! So much flavor! I think what made a difference to me was the Thai Basil and Lime zest, frying the curry paste in coconut oil first, and adding Sugar! Made a world of difference.

Lovely as always! I just popped in to see what you put in your veggie red curry! My version is similar, shitake mushrooms (a must and same always reconstituted!), bamboo shoots, baby corn, cauliflower and strips of kale. I love how versatile curry is, on of my fav comfort foods, especially with a bowl of coconut rice, oh yeah baby, behave!

I believe the long red pepper is a ripe Cubanelle or "Italian frying pepper". They're often sold under ripe with a light green color.
