Donut Showdown! 3 Recipes: Creme Brûlée / Passionfruit Chocolate / Lime & Hibiscus glazed Donuts

- We are in a Donut induced coma over here at CCJ headquarters. Jemma, Sally and Dane came up with 3 incredible Donut flavours for you guys and they are all utterly ridiculously delicious!!
First up is Jemma with here Salted Caramel Creme Brûlée, followed by Dane and his Passionfruit and Milk Chocolate Donut, and then Sally with her Limi and Hibiscus Mexican Donut!

150g caster sugar
1 egg
3 egg yolks
3 tbsp cornflour
120ml double cream
480ml milk
1 tsp salt
1 tbsp vanilla
45g of cold butter
Brûlée Top
300g sugar
8 tbsp water
Milk Chocolate Creme Diplomat
150ml Whole Milk
1 Egg Yolk
1/2 tbsp Caster Sugar
5g Cornflour
1/4 tsp Salt
100g Milk Chocolate
Double cream
Passionfruit Curd
55g Caster Sugar
55ml Passionfruit Purée
3 Egg Yolks
1/2 Whole Egg
45g Cold Butter
Chocolate Bark
125g Milk Choc
Freeze Dried Passion Fruit Crunch
Passionfruit sugar
Caster sugar + freeze dried passion fruit powder
Lime Curd
110g Caster Sugar
110ml Lime Juice
Zest of 1 lime
6 Egg Yolks
1 Whole Egg
90g Cold Butter
Green food colouring (optional)
Hibiscus Glaze
25g dried hibiscus flowers
250ml water
235g icing sugar
½ tbsp liquid glucose/golden syrup

All the doughnuts look AMAZING! But also importantly Sally your blouse is divine!
I suggested on a video while back of letting all three of you give different versions of a classic recipe in one video because i like everyone’s take on things.
I’m so happy y’all did it with the Tres Leches and a few others since then 😊. From Sally’s lovely aesthetic doughnut to Dane giving us finally his passion fruit milk chocolate from macaron video to Jemma’s lovely salted caramel brûlée combo.

I think for Jemma's doughnut, another idea could be to cover them in praline sugar (praline powder + castor sugar), like Dane did. And then swirl around some dark chocolate on it!

Thanks for great flavour inspirations. I like to experiment and last month I made Biscoff, Advocaat and rose jam donuts (not all at once ofc). A glaze is also fun to make.

I've tried to make the brûlée one but it didn't get the glass like consistency. It got sticky but not bad at all, we all had some good laughs while eating it.

Quick question - why do you use dry caramel to make the filling and wet caramel for the topping? Is there a difference in the end result? Thanks! xx
For the filling, just doesn't add unnecessary water, and the top, helps it to melt and get to the correct temp and colour more easily IMO

Here in Spain, there is no passion fruit in most stores, what I have found is lulo. My question is... I don't have passion fruit, can I substitute it with lulo or some similar fruit? Hi Ivana! You absolutely can substitute it for whatever you prefer/can get! It may alter the taste/texture though, so be warned!
