If you are in the NYC area, should really pop into Wildair for their wild ass donuts. Doughnut Plant is solid but the flavor combinations that Fabian and his team + guest chefs are creating in regards to donuts is truly exquisite. Hell, theyre so good they usually sell out before noon.
This is one of those concepts that you can't believe you never thought of once you hear it. What an amazing idea!

I live in Brazil, in the city i live there's a place that sells crèmme brûlée donuts and it's so delicious. They cut the donut in half and put bavarian cream, and more bavarian cream on top and sugar on top of the cream and use a blowtorch to do the sugar shell.

He is 1/2 of the chef/owner combination behind michelin restaraunt Contra and their sister restaurant Wildair (which was supposed to be more a la carte and less refined but has since pivoted into a faux dessert shop during the pandemic and they are now slowly returning back to restaurant form). I highly recommend you eat at Contra and or Wildair if you are ever in NYC. They have a great cookbook out as well titled "A Very Serious Cookbook: Contra Wildair" which I recommend to any "foodie" home cooks.

I just thought it was worth noting.
The recipe is simple but execution requires attention.
Temp and amount of butter he adds at a time for example...sugar in the pan before heating the milk...lots of little detail so there is more to what he is doing than meets an untrained eye!

If you are not a professional pastry chef or extremely experienced, don’t make this like he did. Lol. It ain’t gonna work. This dude has made this so many times he just knows how to make it come out right lol
Throwing all the butter into the hot pastry cream in a gigantic bowl was such a flex, even if it is going to chill and firm up. He must've been stirring like crazy between the edits!

1lb12oz butter is way more unhealthy. There’s less than 2,000 cals in 22 eggs, meanwhile there’s over 3,000 cals, in just a pound of butter. Not mention it’s almost all from fat.

When there is no brulee it's not creme brulee... It's a cream donut dude, it has been on the market for +150 years.

When he adds the sugar on top and places it under the broiler to harden, then that’s the brûlée part.
