  • Fabian Von Hauske of Wildair & Contra in NYC is in the MUNCHIES Test Kitchen making Crème Brûlée Donuts. He starts by making an enriched dough, before moving on to the vanilla cream filling.     If you are in the NYC area, should really pop into Wildair for their wild ass donuts. Doughnut Plant is solid but the flavor combinations that Fabian and his team + guest chefs are creating in regards to donuts is truly exquisite. Hell, theyre so good they usually sell out before noon.

    Thank you Chef for the informative lesson in creating creme brulee donuts as well as taking the time to do this. The dough is especially great as you can fill them with anything you want. Please come back and bake for us many more times.

      When you prepare brioche it does require equal parts of eggs and butter. But yea lil bit haha

    I live in Brazil, in the city i live there's a place that sells crèmme brûlée donuts and it's so delicious. They cut the donut in half and put bavarian cream, and more bavarian cream on top and sugar on top of the cream and use a blowtorch to do the sugar shell.

    This guy has phenomenal technique.
    He makes this look a bit easier than it is perhaps.
    Pay special attention to his comments on dough temp and how he adds butter.

      He is 1/2 of the chef/owner combination behind michelin restaraunt Contra and their sister restaurant Wildair (which was supposed to be more a la carte and less refined but has since pivoted into a faux dessert shop during the pandemic and they are now slowly returning back to restaurant form). I highly recommend you eat at Contra and or Wildair if you are ever in NYC. They have a great cookbook out as well titled "A Very Serious Cookbook: Contra Wildair" which I recommend to any "foodie" home cooks.

      I looked them up after I commented.
      Next time I am back east I will visit for sure.
      I just thought it was worth noting.
      The recipe is simple but execution requires attention.
      Temp and amount of butter he adds at a time for example...sugar in the pan before heating the milk...lots of little detail so there is more to what he is doing than meets an untrained eye!

      Throwing all the butter into the hot pastry cream in a gigantic bowl was such a flex, even if it is going to chill and firm up. He must've been stirring like crazy between the edits!

      1lb12oz butter is way more unhealthy. There’s less than 2,000 cals in 22 eggs, meanwhile there’s over 3,000 cals, in just a pound of butter. Not mention it’s almost all from fat.

    just go to DD and buy "Bavarian Cream Donut". Take it home and use a propane torch...voila! Creme Brulee Donut.

    Me and a few more people make 4000-5000 doughnuts a day , 5 days a week 🤣i thought I would be having doughnuts everyday but I can barely eat one doughnut a week, even had strawberry icing burps ....and I didn't eat any

      When he adds the sugar on top and places it under the broiler to harden, then that’s the brûlée part.
